  • Thread 1 each bacon slice, cheese cube and grape on each of 12 toothpicks.

4 ounces cream cheese, softened
1 large egg
1 tablespoon 2% milk
1/3 cup real bacon bits
1/4 cup shredded Swiss cheese
1 tablespoon dried minced onion
1 large plum tomato, seeded and finely chopped, divided
1 tube (10.2 ounces) large refrigerated flaky biscuits

Steps:

  • In a small bowl, beat the cream cheese, egg and milk until smooth. Stir in the bacon, cheese, onion and half of the tomato; set aside., Cut each biscuit into four pieces; press each piece into a greased miniature muffin cup. Fill with cream cheese mixture; top with remaining tomato., Bake at 375° for 14-16 minutes or until a knife inserted in the center comes out clean.

1 cup bacon bits (fully-cooked)
1/2 cup heavy whipping cream
cooking oil spray

Steps:

  • Gather all the ingredients for the recipe.
  • Crack the eggs into a large bowl and season them with salt. Add in the heavy whipping cream and whisk to combine.
  • Stir in the bacon and cheese into the egg mixture.
  • Spray a muffin pan generously with cooking oil. Fill each cup with the egg mixture, leaving just a small amount of space to account for rising.

Bacon Mac and Cheese Waffles turn leftover homemade macaroni and cheese into crispy, golden brown bacon, scallions and garlic mac and cheese that you can hold in your hand!

1 pound bacon (chopped into 2" pieces)
3 tablespoons unsalted butter
1/4 cup all purpose flour
3 cups whole milk (room temperature)
2 cloves garlic (crushed)
3 medium scallions (sliced, whites and greens separated)
4 cups shredded cheddar cheese
2 cups shredded mozzarella cheese
1/2 teaspoon dijon mustard
1 pinch dried nutmeg
2 splashes hot sauce (or more, to taste)
1 pound elbow macaroni
salt and pepper (to taste)

Steps:

  • Bring a large pot of salted water to a boil over high heat and cook pasta al dente according to package instructions, drain but do not rinse. Line a large baking sheet with parchment paper.
  • In large skillet or saucepan over medium high cook chopped bacon until browned and crispy. Drain, reserving 3 tablespoons bacon grease, and remove to paper towel to drain.
  • Add butter to reserved grease in pan and heat over medium heat until melted. Add garlic and scallion whites and cook until fragrant, about 30 seconds. Then whisk in flour and cook until pale golden and nutty, scraping up the browned bits of bacon off the bottom.
  • Slowly whisk in milk and bring to a simmer. Stir in Dijon mustard and a few dashes of hot sauce then add 3 cups cheddar and 1 cup mozzarella. Stir until smooth then remove from heat and season with nutmeg, salt and pepper.
  • Pour bacon cheddar cheese sauce over drained al dente elbow macaroni and gently toss to coat. then stir in crispy bacon, scallion greens and remaining grated sharp cheddar and mozzarella cheese. Spread evenly over parchment-lined baking sheet and refrigerate at least 3 hours, ideally overnight.
  • When ready to serve, preheat oven to 200 degrees Fahrenheit and waffle iron to highest setting. Cut chilled mac and cheese 'sheet' into rounds with a small biscuit cutter then place, one at a time, into the center of preheated waffle maker and cook until crispy and easily releases from iron, about 2 minutes. Keep warm on a baking rack in warm oven until all are cooked.
  • Top as desired and serve.

  • Combine the eggs and water in a bowl and season with salt and pepper. Beat the eggs with a fork until combined. Mist a skillet with cooking spray and bring over medium heat. Add the spinach and cook, stirring, for a minute or two until wilted. Add the beaten eggs and stir to combine with the spinach. Push the eggs around with a spatula as they cook until the eggs are scrambled and cooked. Remove from heat.
  • On a clean, dry surface sprinkle a small amount of flour to prevent sticking and lay down your sheet of defrosted puff pastry. Using a rolling pin, roll the pastry into a 13”x13” square of even thickness. Using a knife or pizza cutter, cut the pastry into 9 even squares (3 rows of 3). Fill a small dish with water and set near your surface.
  • Take each pastry square and turn it to be a diamond with one corner pointing at you. Lay a slice of the cooked bacon on each pastry square from top corner to bottom corner. Divide the eggs among the pastries and spread over top of the bacon. Sprinkle the cheddar cheese over the top of the eggs on each pastry. Wet your finger in the water dish and use it to wet the right side corner of a pastry square. Fold the left corner over the ingredients in the center and then fold the (lightly wet) right corner over and press it down to seal. Repeat with the remaining pastry squares. Cover a baking sheet with parchment paper and transfer the pastries to the sheet.
