3 eggs
1/2 cup 2% milk
1 green onion, chopped
1 tablespoon butter, melted
1/4 teaspoon salt
Dash pepper
1/2 cup shredded cheddar cheese
1 bacon strip, cooked and crumbled

Steps:

  • In a bowl, whisk the eggs, milk, onion, butter, salt and pepper. Pour into a shallow 3-cup baking dish coated with cooking spray. Sprinkle with cheese and bacon. Bake, uncovered, at 400° for 12-15 minutes or until eggs are set.

5 slices bacon
6 eggs
1 cup milk
2 tablespoons butter, melted
½ teaspoon salt
¼ teaspoon ground black pepper
¼ cup chopped green onions
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 7x11-inch baking dish.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and crumble.
  • Beat eggs, milk, butter, salt, and ground pepper in a bowl; pour into prepared baking dish. Sprinkle with onions, bacon, and Cheddar cheese.
  • Bake in preheated oven until a knife inserted near the center comes out clean, 25 to 30 minutes.

10 large eggs
1/4 cup minced fresh parsley
3 tablespoons 2% milk
1/4 teaspoon salt
1/8 teaspoon pepper
8 bacon strips, chopped
2 medium potatoes, peeled and thinly sliced
2 green onions, finely chopped
4 fresh sage leaves, thinly sliced
1 cup shredded pepper Jack cheese
2 plum tomatoes, sliced

Steps:

  • Preheat oven to 400°. In a large bowl, whisk eggs, parsley, milk, salt and pepper; set aside. In a 10-in. ovenproof skillet, cook bacon over medium heat until partially cooked but not crisp. , Add potatoes, onions and sage; cook until potatoes are tender. Reduce heat; sprinkle with cheese. Top with egg mixture and tomato slices., Bake, uncovered, 20-25 minutes or until eggs are completely set. Let stand 15 minutes. Cut into wedges.

I substituted sausage in place of bacon because it's what I had. Recipe from Taste of Home Quick Cooking July/August 1999, courtesy of Diana Bullock who likes to prepare this for overnight guests. She keeps cooked bacon in the freezer to cut down on preparation time.

8 ounces bacon, diced
1/2 red onion, diced
2 cups frozen hash browns, thawed
1 3/4 teaspoons kosher salt
1 bunch Tuscan kale, chopped
10 large eggs, at room temperature
1/2 cup heavy cream or whole milk, at room temperature
4 ounces sharp white Cheddar, grated (about 1 1/2 cups loosely packed)
4 ounces mozzarella, grated (about 1 cup)

Steps:

  • Preheat the broiler to high and position a rack in the top third of the oven.
  • Put the bacon in a 12-inch nonstick ovenproof skillet and place over medium heat. Cook, stirring often with a rubber spatula, until the bacon is crispy and golden brown, about 10 minutes. Remove the bacon to a plate with a slotted spoon and remove all but 2 tablespoons of the bacon fat from the skillet. Add the red onion to the skillet along with the hash browns. Stir in 1/2 teaspoon salt and spread the mixture evenly over the bottom of the skillet. Cook, undisturbed, until the potatoes are beginning to brown and get crispy, about 3 minutes. Stir the potato mixture with a rubber spatula. Re-spread the mixture evenly on the bottom of the skillet and cook, undisturbed, to brown a bit more, another 2 minutes. Add the kale and another 1/2 teaspoon salt and cook until the kale is wilted, another 2 minutes. Stir in the reserved bacon.
  • Meanwhile, whisk together the eggs, heavy cream and remaining 3/4 teaspoon salt in a medium bowl. Add the grated cheeses. Add the egg mixture to the skillet and stir to combine. Cook, stirring occasionally with a rubber spatula, until the mixture looks like loose scrambled eggs, about 2 minutes. Cook, undisturbed, to set the bottom, about 1 minute longer. Place the skillet under the broiler until the top is golden brown and the eggs are set, 3 to 4 minutes. Allow to cool for 5 minutes before slicing into wedges and serving.

1 (16 ounce) carton fat-free liquid egg product or 8 eggs
1/4 teaspoon salt-free garlic and herb seasoning
1/4 teaspoon salt (optional)
1 tablespoon canola oil or 1 tablespoon soybean oil
4 medium green onions, sliced (1/4 cup)
two small tomatoes, seeded and chopped
2 ounces shredded sharp cheddar cheese
2 tablespoons bacon, cooked until crisp and chopped
2 tablespoons reduced-fat sour cream, if desired

Steps:

  • In medium bowl mix egg product, garlic-and-herb seasoning and salt, if using; set aside.
  • In 10 ounce non-stick, oven-proof skillet, heat oil over medium heat.
  • Add onions; cook and stir one minute.
  • Reduce heat to medium-low.
  • Pour in egg mixture. Cook 6 to 9 minutes, gently lifting edges of cooked portions with spatula so that un-cooked egg mixture can flow to bottom of skillet, until set.
  • Set oven control to broil. Top frittata with tomatoes, cheese and bacon.
  • Broil with top 4 inches from heat 1-2 minutes or until cheese is melted.
  • Top each serving with sour cream.
