Steps:
- In a medium bowl, mix together ground beef, egg, Worcestershire sauce, onion, salt, pepper and ¼ cup cheddar cheese. You may need to use your hand to get in evenly combined. Let stand (see cooking tips section above for reasons).
- Heat a medium skillet or non-stick pan to medium-high heat. Add bacon strips, cook for 3-4 minutes without touching. Rotate and cook other side 2-3 minutes, or until slightly crispy. Remove from heat, drain off excess oil, and break bacon into chunks.
- Divide meat mixture in half for each burger. Press about 2/3 off one half into the burger press (it should be almost full). Press top mold to create an open center. You may need to practice a couple times to get the right amount (see animated photo above for help). Fill one burger with 1/8 cup cheese, and half of cooked bacon and jalapeño. Top with more meat and use burger press to seal top down. Remove and repeat steps for second burger.
- Preheat barbecue (I used gas) to medium-high. Lightly grease grill slats with oil; this helps prevent sticking. Place patties onto grill, close, and cook first side for 4-6 minutes. It should release from the grill and have grill marks. Flip and cook other side for 4-6 minutes until cooked to desire doneness. With those times it should be just over medium. If you're used to using your fingers to test firmness, the stuffed center makes it more squishy, so be sure to not overcook.
- Grill hamburger buns if desired. Mash avocado in a bowl. Place burger patties in buns, top with avocado and enjoy the best juiciest burger.

Steps:
- Combine ground round, ground chuck, salt and pepper in a large bowl.
- In another bowl, combine the coarsely shredded sharp cheddar and cooked bacon pieces.
- Let bacon and cheese mixture sit at room temperature for about 20 minutes to get soft.
- Then, shape mixture into balls (for however many burgers you would like to make). Form 2 patties of meat and place one cheese/bacon ball in between them.
- Pinch the sides together to seal in cheese ball. Gently press formed patty, to spread out cheese ball. Continue until all patties are formed.
- Cook burgers on grill over medium flame for about 7 minutes on each side.
- While burgers are grilling, slice sweet Vidalia onions and sauté them in a skillet with 1 tablespoon of butter. Once onions become translucent (about 4 minutes), add some sweet barbecue sauce.
- Flip burgers, and baste the cooked side of the patties with the same sweet barbecue sauce used in the onions.
- After about 7 minutes longer, the burger should be done (these are big thick burgers and may take longer to grill to your liking).
- Baste again with sweet barbecue sauce before removing from grill.
- Butter hamburger buns and place on top rack of grill for several minutes, until toasted.
- To build burger, take toasted bun, add patty, and top with smothered barbecue onions. You can add tomato or lettuce, if you'd like, but the flavors are great without them.

KETO CHEDDAR BACON RANCH STUFFED BURGERS
The amazingly, delicious flavor combination of cheddar, bacon, and ranch stuffed inside a burger.
Provided by Emily (Hip Sidekick)
Yield 3
Number Of Ingredients 15
Steps:
- To make the stuffed burger patties: Cook up the bacon ends and pieces in a large skillet over medium heat to desired crispness. Place bacon on a paper towel when done cooking to drain excess grease. Let bacon cool to room temperature, about 10 minutes.
- While bacon is cooking, start preparing the filling. In a medium bowl, add in shredded cheddar cheese, ranch packet, and 1/4 cup ranch dressing. Add in the bacon once it has cooled. Stir well to combine.
- Turn barbeque on high to preheat it for grilling the stuffed burgers.
- Form the ground beef into six patties about 1/2 inch thick. In the three "base" patties, press the middle down to 1/4 inch thick to form a "bowl". This is for the cheddar bacon ranch filling.
- Add a 1/4 cup of the cheddar bacon ranch filling to the "bowl" of each base patty. You will have leftover filling. You can use it for more stuffed burgers, as a topping for these burgers, or save for another use.
- Place the top patties over the base patties with the filling. Pinch around the edges of the top and bottom patties to seal in the filling.
- Sprinkle salt and pepper on both sides of the stuffed burgers.
- To grill the stuffed burgers: When the barbeque is ready, place burgers on the grill for approximately 5 minutes on each side for medium. Shorten or lengthen the cooking time depending on your desired level of doneness.
- When burgers are almost finished cooking, top with the sliced sharp cheddar cheese. You can also add your keto hamburger buns to the grill to toast them at this time. Continue cooking burgers until the cheese has melted, approximately 2-3 more minutes. Transfer burgers to a clean surface when finished grilling.
- To assemble the burgers, use your favorite condiments. We recommend using Ranch dressing on both sides of the bun and then adding mustard, sugar-free ketchup, red onion slices, and a tomato slice to the bottom bun. Place the stuffed burger on top of the tomato and then add the top bun.
- Enjoy!
BACON-STUFFED BURGERS
Steps:
- Combine the cheese and bacon in a bowl.
- Put the ground chuck in another bowl and sprinkle with salt and pepper; mix with a rubber spatula. Flatten a quarter of the meat mixture in the palm of your hand. Squeeze together about a tablespoon of the cheese and bacon mixture to make a little nugget; place in the center of the patty. Bring up the sides of the patty over the filling, making sure the cheese is completely covered; flatten slightly to shape. Repeat with the remaining meat and filling. Set the patties side-by-side on a platter and refrigerate while preparing the grill.
- Place a large grill pan covering two burners over medium-high heat, or preheat an outdoor barbecue until very hot. Brush the grates with oil. Grill the burgers for 8 minutes per side for medium. Transfer to a clean plate.
- Rub the grill grates with more oil. Grill the buns cut-side down for 1 minute to toast.
- Serve the burgers with your favorite condiments and garnishes.
BACON, ONION AND CHEESE STUFFED BURGER
Steps:
- Preheat grill to medium.
- In a bowl combine beef, garlic, hot sauce, salt and pepper, to taste, being careful not to over mix. Warm a skillet over medium heat and fry bacon until crispy. Remove to a paper towel-lined plate to drain. Keep heat on skillet and fry a pinch of the beef in the bacon fat to test seasoning. Adjust seasoning, if needed, then form 8 even thin patties, about 1/2-inch thick and set aside. Saute onions in bacon fat in skillet until tender, 5 minutes. Place onions and bacon in a bowl with cheese. Form a spoonful of bacon-cheese mixture into a ball, then place in the center of 4 patties. Top each with another patty and seal the edges. Grill burgers over medium-high heat, flipping once until desired doneness is reached, approximately 4 minutes each side for medium. Serve in buns with garnishes. Alternative: In a medium skillet over medium-high heat, sear the burgers 4 minutes on each side.

- Add the bacon to a skillet over medium heat (on the stove, not the grill). Cook 2-3 minutes per side, until the bacon begins to render but is not totally crispy. The goal is to par-cook the bacon since it’ll finish cooking in the stuffed burger patties. Remove from the heat. Once cool enough to handle, finely chop into small pieces.
- Add the chopped bacon to bowl with the ground beef, shredded cheddar, Worcestershire, & ground black pepper. Using your hands, combine the mixture until the bacon and cheddar are evenly dispersed. Be careful not to overmix. Using a burger press or mold, form into 4 equally sized burger patties (see Recipe Notes).
- over direct heat for 6 minutes, flipping halfway through for medium doneness. The burgers should have beautiful grill marks & tons of melty cheese oozing out!
