- In a large bowl, combine the flour, cornmeal, baking powder, sugar and salt. Cut in butter until mixture crumbly. Stir in cheese and milk just until moistened. , Drop by 1/4 cupfuls 2 in. apart onto a ungreased baking sheet. Bake at 450° for 12-15 minutes or until light golden brown. Serve warm.

QUICK BACON-CHEDDAR BISCUITS

- Heat the oven to 425 degrees F.
- In a large bowl add the flour, baking powder, 1 teaspoon of salt, paprika, and onion powder. Mix to blend then make a well in the center of the bowl and add the milk, butter, bacon and cheese. Mix gently with a wooden spoon. The dough will be wet and sticky. Using a 1/4 cup measure or ice cream scoop, portion the batter onto a baking sheet, leaving an inch or so around each biscuit.
- In a small bowl, beat the egg with a splash of water and then brush this mixture on the top of each biscuit. Bake in the oven until the biscuits are golden brown and a toothpick inserted in the center of one comes out clean, 20 to 22 minutes.
BACON-CHEDDAR CORNMEAL BISCUITS

- In a large bowl combine flour, cornmeal and baking powder. Using a pastry blender, cut butter into flour mixture until butter is the size of small peas. Add cheese, bacon, 2/3 cup milk, egg, and chives; stir until moistened.
- Turn out onto floured surface. Knead lightly 4 to 6 strokes or until dough just holds together. Pat or roll dough to an 8-inch square that is 1/2 inch thick. Using sharp knife, cut into 9 squares. (If desired, cut into 16 squares for mini biscuits.) Transfer to lightly greased baking sheet; brush with additional milk.
- Bake in 425 degree F oven 12 to 15 minutes or until golden brown. (Bake mini biscuits 10 to 12 minutes.) Remove; cool on a wire rack.

- Melt shortening and butter together and add to flour mixture.
- Stir in crumbled bacon and add milk gradually.

- Preheat the oven to 450 degrees F.
- Line a baking sheet with parchment paper or lightly coat with vegetable oil.
- Whisk together the flour, sugar, baking powder, and salt in a large bowl. Cut in the butter with a pastry blender, or use 2 knives, until the butter is the size of peas; stir in the cheese and bacon.
- Combine the buttermilk and egg in a small bowl. Add to the flour mixture just until incorporated. Turn the dough out onto a lightly floured surface, and pat or roll the dough to 3/4-inch thickness; cut with a 3-inch round cutter, and place on the prepared baking sheet.
- Bake for 12 to 14 minutes or until golden brown.
BACON CHEDDAR DOG BISCUITS
After so many scares of tainted pet food and recently tainted pet treats, I have started to cook my own treats for the mutts. They were already being fed homemade food so treats were the next progression. Since I have the fussiest dogs in the universe, finding treats (and food) recipes is always a challenge but this is one recipe that my guys appear to enjoy!

- Preheat oven to 165'C (325'F).
- Cook bacon until crisp. Crumble into pieces.
- In a large bow, combine rolled oats, margarine, bacon fat and boiling water. Mix well and let stand for ten minutes.
- Stir in the sugar, cornmeal, milk, cheeses, bacon crumbles, egg and 2 teaspoons beef bouillon granules.
- Mix in the flour, one cup at a time until it becomes a firm dough.
- Knead dough on floured surface, mixing additional flour as needed to make a smooth and non-sticky dough.
- Roll out to 1/2" thickness and cut cookies with your favourite cookie cutter.
- Place on greased cookie sheet and bake for 35 to 45 minutes or until cookies become golden brown.
- Cool and serve.

These biscuits are easy to whip together and bake up nice. I found this recipe in a Taste of Home book. They are great with ham or turkey dinners. Also good with chili or other favorite soups.
