CORNMEAL CHEDDAR BISCUITS

Unlike traditional biscuits, this cheesy version lets you drop them from a spoon...so there's no mess and no fuss...and no precious time wasted! Serve them fresh-from-the-oven with chili or your favorite soup or stew. -Taste of Home Test Kitchen

Yield 1 dozen.

Number Of Ingredients 8

1-1/2 cups all-purpose flour
1/2 cup yellow cornmeal
3 teaspoons baking powder
2 teaspoons sugar
1/4 to 1/2 teaspoon salt
1/2 cup cold butter
1/2 cup shredded cheddar cheese
1 cup milk

Steps:

  • In a large bowl, combine the flour, cornmeal, baking powder, sugar and salt. Cut in butter until mixture crumbly. Stir in cheese and milk just until moistened. , Drop by 1/4 cupfuls 2 in. apart onto a ungreased baking sheet. Bake at 450° for 12-15 minutes or until light golden brown. Serve warm.

Quick Bacon-Cheddar Biscuits image

Number Of Ingredients 10

2 cups flour
1 tablespoon baking powder
Kosher salt
1 teaspoon paprika
1 teaspoon onion powder
1 cup milk
1/2 cup butter, melted
8 strips bacon, cooked until crispy and crumbled
1 cup shredded Cheddar cheese
1 egg

Steps:

  • Heat the oven to 425 degrees F.
  • In a large bowl add the flour, baking powder, 1 teaspoon of salt, paprika, and onion powder. Mix to blend then make a well in the center of the bowl and add the milk, butter, bacon and cheese. Mix gently with a wooden spoon. The dough will be wet and sticky. Using a 1/4 cup measure or ice cream scoop, portion the batter onto a baking sheet, leaving an inch or so around each biscuit.
  • In a small bowl, beat the egg with a splash of water and then brush this mixture on the top of each biscuit. Bake in the oven until the biscuits are golden brown and a toothpick inserted in the center of one comes out clean, 20 to 22 minutes.

1 ¾ cups all-purpose flour
½ cup cornmeal
1 tablespoon baking powder
¼ cup butter
¾ cup shredded cheddar cheese (3 ounces)
4 slices bacon, crisp-cooked and crumbled
⅔ cup milk
1 egg, lightly beaten
2 tablespoons snipped fresh chives

Steps:

  • In a large bowl combine flour, cornmeal and baking powder. Using a pastry blender, cut butter into flour mixture until butter is the size of small peas. Add cheese, bacon, 2/3 cup milk, egg, and chives; stir until moistened.
  • Turn out onto floured surface. Knead lightly 4 to 6 strokes or until dough just holds together. Pat or roll dough to an 8-inch square that is 1/2 inch thick. Using sharp knife, cut into 9 squares. (If desired, cut into 16 squares for mini biscuits.) Transfer to lightly greased baking sheet; brush with additional milk.
  • Bake in 425 degree F oven 12 to 15 minutes or until golden brown. (Bake mini biscuits 10 to 12 minutes.) Remove; cool on a wire rack.

1/4 cup solid shortening
2 tablespoons butter
8 slices bacon, crumbled
1 cup milk (may not need all)

Steps:

  • Stir together the flour, cornmeal, baking powder, sugar and salt.
  • Melt shortening and butter together and add to flour mixture.
  • Stir in crumbled bacon and add milk gradually.
  • (Consistency needs to be just thick enough to spoon out easily) Drop batter from tablespoon onto vegetable oil sprayed baking sheets.
  • Bake at 425 degrees for 15 minutes, or until golden brown.

1 tablespoon baking powder
1 teaspoon kosher salt
6 tablespoons unsalted cold butter, cubed
1 cup shredded sharp Cheddar cheese
6 pieces smoked bacon, cooked and chopped
1 cup buttermilk
1 large egg, beaten

Steps:

  • Preheat the oven to 450 degrees F.
  • Line a baking sheet with parchment paper or lightly coat with vegetable oil.
  • Whisk together the flour, sugar, baking powder, and salt in a large bowl. Cut in the butter with a pastry blender, or use 2 knives, until the butter is the size of peas; stir in the cheese and bacon.
  • Combine the buttermilk and egg in a small bowl. Add to the flour mixture just until incorporated. Turn the dough out onto a lightly floured surface, and pat or roll the dough to 3/4-inch thickness; cut with a 3-inch round cutter, and place on the prepared baking sheet.
  • Bake for 12 to 14 minutes or until golden brown.

After so many scares of tainted pet food and recently tainted pet treats, I have started to cook my own treats for the mutts. They were already being fed homemade food so treats were the next progression. Since I have the fussiest dogs in the universe, finding treats (and food) recipes is always a challenge but this is one recipe that my guys appear to enjoy!

1 cup rolled oats
6 tablespoons margarine
6 tablespoons bacon fat
1 cup water, boiling
3/4 cup cornmeal
2 teaspoons brown sugar
2 teaspoons beef bouillon granules (optional)
1/2 cup milk
1/2 cup sharp cheddar cheese, shredded
1/2 cup parmesan cheese (or Romano)
4 bacon pieces
1 egg, beaten
3 cups whole wheat flour

Steps:

  • Preheat oven to 165'C (325'F).
  • Cook bacon until crisp. Crumble into pieces.
  • In a large bow, combine rolled oats, margarine, bacon fat and boiling water. Mix well and let stand for ten minutes.
  • Stir in the sugar, cornmeal, milk, cheeses, bacon crumbles, egg and 2 teaspoons beef bouillon granules.
  • Mix in the flour, one cup at a time until it becomes a firm dough.
  • Knead dough on floured surface, mixing additional flour as needed to make a smooth and non-sticky dough.
  • Roll out to 1/2" thickness and cut cookies with your favourite cookie cutter.
  • Place on greased cookie sheet and bake for 35 to 45 minutes or until cookies become golden brown.
  • Cool and serve.
