I won't forget the cheese straws that my mother made for my father. The only difference was that she did not add cayenne pepper. These make wonderful hors d'oevres.

- Preheat oven to 400 degrees F (205 degrees C). Grease or line a baking sheet with parchment paper.
- Combine the flour, baking powder, cayenne pepper, salt, grated cheese and butter or margarine in a bowl and mix until well combined. Add water a little bit at a time to make a very stiff dough.
- On a lightly floured surface, roll pieces of the dough into just slightly thicker than pencil shaped sticks. Cut sticks into 4 to 5 inch lengths. Arrange the pieces on the baking sheet.
- Bake at 400 degrees F (205 degrees C) for 5 minutes or until browned.

- Preheat the oven to 375 degrees F and fit a baking sheet with a wire rack.
- In a small saucepot, mix the maple syrup, red pepper flakes, orange juice and 1/4 cup water. Bring to a boil, then remove from the heat.
- Line up the bacon slices on the wire rack and brush with the hot maple syrup mixture. Sprinkle some cheese on each piece of bacon. With a skewer in hand, fold the end of a piece of bacon in half lengthwise and press the skewer through the end. Do this to 4 pieces of bacon, spreading them out evenly across the skewer, and place the skewer on the baking sheet. Twist the bacon pieces into long spirals so as to create straws. Take another skewer and skewer the bottom of each piece of bacon to keep the bacon twisted. Do this to all the bacon.
- Bake until the bacon browns, about 35 minutes. Let cool slightly on the rack; the bacon will get crunchy as it sits. Serve immediately.

- Lightly grease a large baking tray with a little oil or line with greaseproof paper.
- Lay out the ready rolled pastry on a floured surface, sprinkle the cheese all over the pastry and fold in half.
- Roll out the pastry to roughly 25 x 40cm (10 x 16 inches). It should be wide enough to place 8 rashers of bacon side-by-side and just a little longer than 1 rasher of bacon in the other direction (see picture above).
- Spread the pastry with the mustard and then lay out the bacon so the bacon is just touching but not overlapping.
- Cut down between the bacon, so you have 8 strips, then twist each strip several times and place on the prepared baking tray.
- Chill the twists for a minimum of 20 minutes in the fridge.
- Just before you plan on cooking the cheese straws, heat your oven to 220C / 200C / gas mark 7 / 425F.
- Remove the cheese straws from the fridge and brush with the beaten egg.
- Cook for 25-30 minutes, or until golden on top and cooked all the way through.
- Eat as soon as they are cool enough to hold.
- Store any uneaten cheese straws in an airtight container in the fridge for up to 3 days. Reheat for 10 minutes at 220C / 200C / gas mark 7 / 425F or until piping hot all the way through.

- In a large skillet, cook bacon in batches until crisp; drain on paper towels. Crumble into a small bowl. Add red pepper, onions and tomatoes. - Cook bacon until crisp. Cool and crumble.
- In a bowl combine crumbled bacon, cream cheese, mozzarella cheese, Parmesan cheese, garlic powder and black pepper. Use a fork mix well.
- Lightly sprinkle flour over the counter. Lay out the puff pastry sheets and roll to about 1/16 inch thick. Spread cheese mixture over half of the puff pastry. Fold the other side over the cheese mixture.
- Using a rolling pin to roll the two sides together, so the cheese mixture is incorporated with the puff pastry.
- Using a sharp knife or a pizza cutter cut into 1/2 inch strips.
- Twist, pressing the ends together and lay on a baking sheet lined with parchment paper.
- In a bowl mix together egg and milk. Brush over each twist.
- Freeze for 1 hour before baking (do not skip, it helps them stay twisted while baking)
- Preheat oven to 400 degrees. Bake for 13 to 16 minute until light golden brown. Cool for 5 minutes before serving.

Cheese straws are in my top ten all-time favourite recipes and are easy to make. For a little extra spice, sprinkle on some paprika or cayenne.

- Line a baking tray with greaseproof paper.
- Roll the pastry out on a lightly floured work surface to a large rectangle of 0.5cm/¼in thickness.
- Turn the pastry so that the longest side is facing you, spread over the mustard, sprinkle with the cheese and season with freshly ground black pepper. Place the pieces of bacon onto the pastry, leaving a small gap between each piece.
- Cut the pastry between each slice of bacon. Carefully twist each piece of pastry 4-5 times so it looks like a curly straw, then place on the baking tray.
- Repeat the process until all of the bacon has been used up. Chill the pastry twists in the fridge for 15-20 minutes.
- Preheat the oven to 220C/425F/Gas 7.
- Remove the twists from the fridge and brush with the beaten egg.
- Reduce the oven to 200C/400F/Gas 6 and bake the twists for 20-25 minutes, or until the pastry is well risen and golden-brown. Remove from the oven and set aside to cool.
CANDIED BACON-CHEDDAR STRAWS

- Instructions Heat oven to 400°F. Place greased wire racks on two aluminum foil-lined rimmed baking sheets. Combine the brown sugar, chili powder and pepper in a bowl. - 1. Preheat oven to 375° F. Line 2 baking sheets with foil and place a wire rack on top. Lightly rub each rack with olive oil. 2. In a shallow bowl, combine the brown sugar, rosemary, and a pinch each of salt and pepper. 3. Place both sheets of pastry on a lightly floured counter. Brush the surface of each with a beaten egg. Evenly sprinkle about 1/2 cup of cheese over each sheet, then sprinkle with cayenne. Dust a rolling pin lightly with flour and roll the rolling pin over the cheese, gently pressing the cheese into the pastry. Fold the pastry in half, then cut each into 12 (1/2 inch) wide strips. Pinch the ends to seal, then gently twist each strip several times to enclose the cheese. It's ok if some of the cheese falls out. 4. Take a piece of bacon and wrap it around the twisted pastry. Repeat with the remaining twists. Dredge the twist through the brown sugar mix, tossing to coat, placing the twist on the prepared baking sheet as you go. 5. Bake 30 to 50 minutes, rotating the pans halfway through. My bacon took 50 minutes to cook, start checking the twists at around 30 minutes. Serve warm or at room temperature...though I love them warm!

- Preheat the oven to 400°F.
- In a small bowl combine the egg with the mustard and sage or rosemary and season with salt and pepper.
- Unroll the puff pastry onto a rimmed baking sheet. Brush the egg mixture over the puff pastry all the way to the edges. Evenly dust half of the cheese over half of the puff pastry, on one side of the rectangle. Use the parchment to fold the side of the puff pastry without the cheese over the cheese dusted side so that the cheese is now inside the folded puff pastry, then peel off the top of the parchment and let it lay back on the baking sheet. Gently pinch the edges and press down lightly on the pastry to make it adhere to the cheese inside.
- Slice the puff pastry into 12 strips. Brush the top of the strips with the remaining egg wash and sprinkle over the remaining cheese. Gently press down so the cheese adheres.
- Place a piece of bacon on a flat surface, then place one of the strips on top of the bacon, allowing it to stretch very gently so that it is the same length as the piece of bacon. Twist the dough and bacon about 4 times to create a spiral, and place them onto the parchment on the baking sheet, leaving at least 1/2-inch between each straw.
- Bake for 25 to 35 minutes, until the bacon is crisped and the puff pastry is golden brown and cooked through. Serve warm or at room temperature.

- Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.

- Rotate the pastry so that the longer side is facing you. Spread the mustard evenly over the pastry. Lay the bacon slices on the pastry, long side facing you, leaving a small gap in between each slice. Trim any messy edges that spill over the puff pastry, to neaten the rectangle into a straighter edge. Sprinkle the Cheddar over the bacon.
