- In a large bowl, combine the cheese, bacon and soup mix. Crumble beef over mixture and mix well. Shape into eight patties., Grill burgers, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 160° and juices run clear. Serve on buns with lettuce and tomato if desired.

- Heat gas or charcoal grill. In large bowl, mix ground beef, soup mix, parsley and steak sauce until well blended. Shape mixture into 8 patties, about 3/4 inch thick.
- Place patties on grill. Cover grill; cook over medium heat 13 to 15 minutes, turning once, until meat thermometer inserted in center of patties reads 160°F. Top each burger patty with cheese slice (if desired, cut in half diagonally); cook just until cheese is melted.
- Meanwhile, brush onion slices with olive oil. Add to grill last 5 to 8 minutes of cooking time for patties. To toast buns, place cut side down on grill during last 1 to 2 minutes of cooking time.
- Layer buns with lettuce, ranch dressing, burger patties, bacon, tomato slices and onion slices.

- Heat 1 tablespoon oil in heavy medium skillet over medium- high heat. Add onions, sprinkle with salt, and sauté until tender and golden brown, stirring often, about 10 minutes. Reduce heat to medium and continue to sauté until very tender and well browned, about 15 minutes longer. Add wine and cook, stirring occasionally, until liquid is absorbed, about 5 minutes. DO AHEAD: Can be made 3 days ahead. Cool, cover, and chill.
- Preheat broiler. Gently mix meat and next 3 ingredients in large bowl. Shape into four 1/2-inch-thick patties. Heat remaining 1 tablespoon oil in heavy large skillet over high heat. Sprinkle burgers with salt and pepper; add to skillet. Cook until well browned, about 2 minutes per side for medium-rare.
- Open buns and arrange, cut side up, on rimmed baking sheet. Place cheese slices on bun tops. Broil until cheese melts and bottom halves are lightly toasted, about 1 minute. Spread bottom halves with mustard. Top each with a few escarole leaves, then burger. Spoon onions atop burgers, dividing equally. Cover with bun tops; press lightly.

- Combine ground bison, egg, crushed crackers, Italian seasoning, Worcestershire sauce, garlic salt, black pepper, and coarse salt in a large bowl. Use your hands to form mixture into 4 large burger patties. Place on a plate lined with waxed paper and refrigerate until ready to cook.
- Preheat grill for medium-high heat and lightly oil the grate.
- Grill burgers for 2 minutes. Flip and brush with barbeque sauce. Flip again and cook until burgers are no longer pink in the center, about 8 minutes total. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
- Turn off the grill. Add 2 slices cooked bacon and 1 slice Cheddar cheese to each burger; close lid and let cheese melt, about 1 minute. Transfer burgers to buns and top each with 1 lettuce leaf.

- In a medium to large skillet (I use cast iron), cook your bacon over medium high heat, turning once or twice until half-way cooked, about 4-5 minutes. Transfer the bacon strips to a cutting board and reserve the bacon renderings in the pan and set aside. Chop the bacon into diced pieces and add to a large mixing bowl with the ground beef and diced cheddar cheese. Season with the black pepper and kosher salt, and then use your hands with a light touch to gently mix together. Take a large handful of meat, about 6 to 7 ounces, and form a ball in your hands. Form the meat into patties about 3/4-inch thick and press your thumb into the center of the patty to form a dimple to keep it from doming when cooked. Place in the refrigerator for about 20 minutes, or make ahead and refrigerate overnight.
- While the grill is heating, heat the reserved bacon renderings over medium heat. Add the onions and cook, stirring often for about 5 minutes. Lower the heat to medium low, add 1 tablespoon of butter, and season with kosher salt and freshly ground black pepper. Cook for about 10 more minutes or until soft and caramelized, lower the heat to simmer and keep warm, or remove from the heat and cover with a lid. Spread the remaining butter on the cut side of the buns and set aside.
- When the grill is hot (at least 450°F), place the burgers on the grates and cook for 3-5 minutes, undisturbed, then flip, and cook for another 5 minutes or until the internal temperature is 135°F for a medium-done hamburger. Add a slice of the American cheese to each burger and cook just until the cheese melts. Transfer to a platter and let rest for about 5 minutes while you toast the buns on the grill grates.
