1 Tbsp extra virgin olive oil
1 tsp balsamic vinegar
1 Tbsp white sugar
1 large white onion, sliced
4 slices bacon, cooked until crispy
2 Tbsp butter, softened
1/4 cup Parmesan cheese
4 slices Swiss cheese
8 slices whole wheat bread

Steps:

  • In a skillet, add the olive oil, balsamic vinegar and sugar. Add the sliced onions and heat them on low, stirring often, for 30 minutes to caramelize them.
  • Bake the bacon until crispy, about 25 minutes.
  • While the onions are caramelizing and the bacon is cooking, stir together the softened butter and Parmesan cheese. Spread the Parmesan butter on the insides of the bread. Butter the outsides of the bread for grilling.
  • Once the onions have caramelized, place them onto a plate and gently pat them dry. (You don't want them to be too runny and make the bread soggy before grilling.)
  • Add a slice of Swiss cheese, some of the caramelized onions and a slice of bacon (broken in half) onto the buttered breads. Grill on a skillet or electric griddle. Flip carefully to prevent onions from sliding out!

3 tablespoons unsalted butter, at room temperature
1 small yellow onion, thinly sliced
1 teaspoon fresh thyme leaves, chopped
Kosher salt and freshly ground black pepper
1 tablespoon plus 1 teaspoon Dijon mustard
1/4 cup shredded sharp Cheddar
1/4 cup shredded Gruyere cheese
1/4 cup diced Robiola cheese
1 tablespoon prosecco
2 teaspoons fresh parsley, chopped
1 clove garlic, minced
Four 1-inch-thick slices brioche

Steps:

  • Heat 1 tablespoon butter in a medium skillet over medium heat. Add the onions and sprinkle with the thyme, 1/2 teaspoon salt and several grinds of pepper. Cook, stirring occasionally, until the onions are browned and tender, about 20 minutes. Turn off the heat and stir in 1 tablespoon of the Dijon mustard and 1 tablespoon water to coat the onions. Transfer to a bowl and set aside.
  • Heat a griddle over medium heat.
  • Buzz the Cheddar, Gruyere, Robiola, prosecco, parsley, garlic and remaining 1 teaspoon Dijon mustard in a food processor until combined but still chunky and spreadable. Evenly spread the cheese mixture over one side of each slice of bread. Top 2 slices with the onion mixture and then sandwich the onions with the other 2 slices, cheese-side in. Spread the remaining butter on the outside of each sandwich and season with salt and pepper. Griddle the sandwiches over medium heat until golden brown on the first side, about 5 minutes. Flip and continue to cook until the cheese is melted and the exteriors are crispy, about 5 minutes more.

4 slices bacon
1 onion, thinly sliced into rings
2 tablespoons balsamic vinegar
salt and pepper (Hymalayan pink is perfect for this)
softened butter
4 ounces Fontina cheese (shredded or thin sliced)
4 slices sourdough bread (sliced 1/2-inch thick)

Steps:

  • In a large skillet over medium heat, cook bacon until crisp, about 3 to 5 minutes a side. Remove bacon. Reduce heat to medium-low and add onion slices to the bacon renderings. Sauté for 20 minutes, stirring occasionally, until onion rings are golden. Add vinegar, stir with a wooden spoon to release any cooked bits from the skillet, and sauté until vinegar has reduced completely, about 1 minute. Season with a pinch of salt and pepper and remove from heat.
  • Spread butter on one side of each bread slice. Heat a grilled pan or skillet over medium heat. Place two slices of bread, butter side down, on the griddle and top each with a handful of cheese (about 1 ounce), two slices of bacon, caramelized onions, another handful of cheese, and top with the remaining slices of bread, butter side up. Cook for 3 to 5 minutes until cheese begins to melt and bread is golden, then flip and cook for an additional 3 to 5 minutes until cheese is melted. Serve immediately.
