These brunch cakes from Birmingham are similar to savoury scones, with cheese, tomato ketchup and Worcester sauce - perfect with eggs

3 rashers streaky bacon (we used smoked)
225g self-raising flour , plus extra for dusting
25g butter , cold and cut into small pieces
75g mature cheddar , grated
150ml milk , plus 2 tbsp extra for glazing
1 tbsp tomato ketchup
½ tsp Worcestershire sauce

Steps:

  • Heat grill to high and grill the bacon for 10 mins, turning halfway, until crisp. Cool for a few mins. Meanwhile, heat oven to 180C/160C fan/gas 4 and line a baking sheet with parchment. Sift the flour and ½ tsp salt into a bowl, add the butter, then rub in to the texture of fine breadcrumbs. Cut the bacon into small pieces and add to the bowl with a third of the cheese.
  • Mix the milk, ketchup and Worcestershire sauce in a jug. Pour into the bacon mixture, stirring briefly, to make a soft dough. Flour the work surface, turn the dough onto it and shape into an 18cm round. Brush with milk, then cut into 8 wedges with a large knife.
  • Arrange the wedges on the baking sheet and sprinkle with the remaining cheese. Bake for 20-30 mins or until risen and golden brown, and serve warm (or cool on a wire rack, and store in an airtight container). Warm the bacon cakes through in a low oven (140C/120C fan/gas 1) if you've made them in advance.

1 1/2 cups coarsely chopped pecans
2/3 cup packed dark brown sugar

1 container (8 oz) sour cream
1/2 cup milk
1/3 cup vegetable oil
3 eggs
1/2 teaspoon almond extract

Steps:

  • Heat oven to 350°F. In 12-inch skillet, cook bacon until crisp; drain on paper towels. Tear bacon into pieces; set aside. Reserve 2 tablespoons drippings in skillet. Meanwhile, in 13x9-inch pan, melt butter in oven.
  • Cook pecans in reserved bacon drippings over medium heat, stirring occasionally, until light brown. Add brown sugar, maple syrup and vanilla to pecans, stirring until sugar is dissolved. Pour mixture over butter in pan.
  • In large bowl, beat cake mix, sour cream, milk, oil and eggs with electric mixer on low speed until moistened. Beat 2 minutes on medium speed; stir in almond extract. Pour batter over pecan mixture in pan.
  • Bake 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; run knife around sides of pan to loosen cake. Place heatproof serving plate upside down on pan; turn plate and pan over. Let pan remain over cake 1 minute so pecan mixture can drizzle over cake. Remove pan; sprinkle cake with bacon. Serve warm.

1 (15.25 ounce) package white cake mix
1 ¼ cups water
⅓ cup vegetable oil
3 eggs
6 slices maple-cured bacon, or more to taste
1 cup unsalted butter, softened
2 ½ cups confectioners' sugar, or as needed
⅓ cup maple syrup, or as needed
½ teaspoon vanilla extract
2 tablespoons red colored sugar, or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch cake pans.
  • Stir cake mix, water, oil, and eggs together in a large bowl until moistened; beat with an electric mixer on medium speed for 2 minutes. Pour cake mixture into prepared pans.
  • Bake in the preheated oven until a toothpick inserted near the center comes out clean, about 30 minutes; cool completely, about 30 minutes.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crisp, about 10 minutes. Drain bacon slices on paper towels. When cool enough to handle, crumble bacon into a small bowl.
  • Beat butter until creamy with an electric mixer in a bowl; slowly beat in 2 cups confectioners' sugar until well blended.   • Draw or print a maple leaf shape on a piece of paper. Fold the page in half down the center of the leaf; cut along the outline so that you will have a hole in the paper in the shape of a maple leaf. Center the paper on top of the frosted cake; press down slightly on the cut edges. Sprinkle the open area with red sugar; gently remove the paper stencil.

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9 inch round cake pan.
  • Place the bacon in a large, deep skillet; cook over medium-high heat, turning occasionally, until lightly browned but still soft, about 7 minutes. 4 1/2 tablespoons butter, room temperature
1/2 tablespoon bacon drippings (left in the fridge to become solid)
1 egg
5 tablespoons brown sugar
4 tablespoons maple syrup
1 1/4 cups self rising flour
1 teaspoon baking soda
1/2 teaspoon baking powder
tiny tiny pinch kosher salt
1/4 cup milk
1/4 cup of minced bacon, cooked and drained

Steps:

  • 1) Cook some bacon in a fry pan (about 6 thick strips). Reserve the drippings and place in the fridge to solidify. Mince 1/4 a cup of the bacon. The chef should eat whatever is left to assure that the bacon is tasty.
  • 2) Beat the crud out of the butter and solidified bacon fat 'till light and creamy. Add the brown sugar and maple syrup and beat well until combined.
  • 3) Add the egg and beat until incorporated.
  • 4) Sift the flour, salt, baking soda and powder together.
  • 5) Add some of the flour and mix, then some of the milk, then continue to alternate the dry and wet ingredients, ending with the dry. Mix until just combined. Fold in the bacon. Taste and add more maple syrup, flour, or milk if needed for desired taste. Keep in mind the maple frosting is very sweet, and to add in very small increments for alterations as maple syrup in large amounts can break a cake batter.
  • 6) Scoop into cupcake papers and bake at 350 F for 18-22 minutes or until a toothpick comes out clean. Be sure to rotate the pan after the first 15 minutes for even baking.

1 lb maple bacon (not maplewood smoked)
CAKE INGREDIENTS
1 box butter yellow recipe cake mix
3 eggs
2/3 c water
1 1/2 stick butter
1/2 c brown sugar, firmly packed
1/2 c maple syrup
FROSTING
1 stick butter
1 1/2 c confectioners' sugar (or more for spreadable consistency)
1/8 c maple syrup (or 1/2 tsp. maple flavor)

Steps:

  • 1. Cut bacon into 1 inch pieces, cook over med-low heat in skillet - don't make it "crunchy" by cooking too much! Cool on paper towels to absorb excess grease. Set aside.
  • 2. PREHEAT OVER TO 350*, Butter and flour two 9" round cake pans. Make the cake according to directions on box, using the 3 eggs, 2/3 cup water, and one stick of softened butter.
  • 3. Coarsely mix in half a stick of softened butter with the brown sugar, and sprinkle evenly on the bottom of the cake pans keeping away from the edge about a half inch. Drizzle the syrup over the sugar. Divide the batter among the two pans, pouring over the syrup/sugar mix. Bake for 23-25 minutes, check for doneness with toothpick.
  • 4. Cool in pan for 10 minutes (no more!)and invert cakes out of pan carefully onto plates to cool completely.
  • 5. Take about 2/3 of the cooled bacon and dice VERY fine.
  • 6. FROSTING: Beat one stick butter til creamy, add confectioners sugar one half cup at a time. Add the syrup, being aware of the consistency. frost the gooey side of one cake, sprinkle with the finely diced bacon, top with other cake gooey side DOWN on the bacon. Frost the entire cake and top with remaining 1/3 of the bacon pieces.

1 tablespoon instant coffee or espresso
2 tablespoons caramel sauce
1 tablespoon heavy cream
1/3 cup melted white chocolate or white melting wafers
1 1/4 cups heavy cream
8 ounces dark chocolate, chopped
1 tablespoon unsalted butter
1 tablespoon corn syrup
1 cup finely ground chocolate wafer cookies or dark chocolate breakfast cereal
Nonstick cooking spray, for the sheet tray
2 teaspoons unflavored powdered gelatin
1/2 cup heavy cream
1/2 cup milk
1/4 cup granulated sugar
Pinch kosher salt
4 canned apricot halves, patted dry with a paper towel

1 cup light brown sugar
Nonstick cooking spray, for the rack

Steps:

  • For the cakes: Preheat the oven to 350 degrees F. Liberally spray an 8-ounce coffee mug and 12-inch cast-iron skillet with nonstick cooking spray.
  • Prepare the cake mix in a large bowl according to the package instructions, then add the instant coffee or espresso.
  • Fill the prepared coffee mug halfway with the cake batter. Pour the remaining batter into the prepared skillet. Place in the oven and bake until a skewer or toothpick inserted in the center comes out clean, 20 to 25 minutes for the mug cake and 25 to 30 minutes for the skillet cake. Let cool completely.
  • Remove the mug cake from the mug. Slice off the crowned top. Place the cake back into the mug cut-side down so that the flat bottom is now on the top. If the top of the skillet cake is crowned or domed, slice off the domed part to make a flat and even top.
  • For the mug cake icing and garnish: In a small bowl whisk together the caramel sauce and cream. Pour on top of the mug cake in the mug to give it a coffee-with-cream-like appearance.
  • Line a sheet tray with parchment paper. Transfer the melted white chocolate to a small disposable piping bag. Cut off the tip to create an 1/8-inch opening. Pipe the white chocolate onto the lined sheet tray in three squiggly lines that are joined at the bottom to resemble steam. Repeat with the remaining white chocolate. (You will have extra "steam" garnish in case one breaks.) Place in the refrigerator until firm, about 30 minutes. Use to garnish the coffee mug cake.
  • For the skillet cake icing: Add the cream to a medium pot. Place over medium-low heat and bring to a simmer, then remove from the heat. Add the chopped chocolate, butter and corn syrup. Let sit for 2 minutes, then whisk to blend everything together. Add the finely ground chocolate wafers to the chocolate mixture and stir until completely combined. Pour over the skillet cake and smooth with a spatula until it is a nice even layer. Place in the refrigerator to let the icing set for about 30 minutes.
  • For the eggs: Line a sheet tray with plastic wrap or parchment paper and spray with cooking spray. Place in the freezer for 30 minutes.
  • In a small bowl, combine the gelatin and 1 tablespoon water and mix to combine to bloom the gelatin.
  • In a small pot, combine the cream, milk, granulated sugar and salt. Place over medium-low heat and bring to a simmer, stirring to help the sugar dissolve. Remove from the heat and whisk in the bloomed gelatin, stirring until dissolved. Transfer to a measuring cup. Let sit, stirring occasionally, until the mixture cools and starts to thicken. (You can place the measuring cup in a bowl of cold water to help it thicken quickly; you want it to be the consistency of thick pancake batter.) If the mixture gets too thick, place it in a bowl of warm water or microwave it for about 5 seconds.
  • Remove the chilled sheet tray from the freezer. Pour about 1/4 cup of the cream mixture into the prepared frozen sheet tray in an irregular circle to make an "egg white," making sure to leave room to make three more egg whites. Place one of the canned apricot halves "egg yolks" cut-side down into the center of an egg white. Repeat with the remaining cream mixture and apricot halves. Place in the refrigerator and chill until the whites are set, 30 minutes to 1 hour.
  • To assemble: On one side of the skillet cake, place two "eggs" on top. Place three strips of candied bacon on the other side of the skillet cake. Serve the extra eggs and candied bacon on a plate on the side and with the coffee mug cake garnished with white chocolate steam.
  • Preheat the oven to 350 degrees F.
  • Place the brown sugar in a plate or sheet pan. Line a baking sheet with a wire rack and spray with cooking spray.
  • Gently press the bacon into the brown sugar until mostly coated. Arrange the bacon on the rack. Bake, rotating the pan halfway through baking, until the bacon is super crisp and golden, 30 to 50 minutes, depending on the thickness. Let cool on the rack.

4 pounds Yukon Gold potatoes, peeled and cut into 1-inch pieces
Coarse salt and ground pepper
3/4 pound bacon, cut crosswise into 1 1/2-inch pieces

Steps:

  • Preheat oven to 450 degrees. In a large pot, bring potatoes to a boil over high in salted water. Reduce to a rapid simmer and cook 7 minutes. Drain well and return potatoes to pot. Meanwhile, in a large cast-iron or heavy skillet, cook bacon over medium-high, stirring occasionally, until browned but not completely crisp, 7 minutes. With a slotted spoon, transfer bacon to paper towels to drain.
  • Pour all but 2 tablespoons fat into a small bowl. Return skillet to heat and cook one-third the potatoes, stirring occasionally, until light golden brown, 3 minutes. Transfer to an 8-inch round cake pan (2 inches deep); sprinkle with one-third the bacon. Press firmly with the back of a large spoon to pack mixture very tightly. Cook remaining potatoes in 2 batches. Layer each batch in pan with bacon, pressing as you go. Spoon 1/4 cup reserved bacon fat over mixture. Cover tightly with foil; bake 1 hour. Remove foil; bake until potatoes are crisp and golden, 30 minutes. Let cool 15 minutes. Invert onto a plate.

1 c coffee, hot
1 c dark chocolate cocoa powder
1 c buttermilk
2 3/4 c flour
2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 c butter, softened
2 1/4 c sugar, white
4 eggs
1 1/2 tsp vanilla
FROSTING
2 stick butter
1 c granulated sugar
1 c heavy cream
12 oz chopped dark chocolate
1/4 c dark cocoa powder
4 c powdered sugar, sifted
1 tsp vanilla extract
2 tsp instant coffee dissolved in 1 tbl hot water

Steps:

  • 1. Preheat oven to 350 degrees Grease 3 - 9 inch round cake pans. Place bacon in a large, deep skillet. Cook over medium-high heat until brown. Drain, crumble and set aside. (I place bacon on a baking sheet and bake for 20-30 minutes,at 350, or until brown and crispy)
  • 2. In medium bowl, pour hot coffee over cocoa, and whisk until smooth.
  • 3. Add buttermilk and whisk until combined, set aside to cool.
  • 4. Sift together the flour, baking soda, baking powder and salt, set aside.
  • 5. In a large bowl, cream butter and sugar together until light and fluffy.
  • 6. Beat in the eggs one at time, then mix in the vanilla.
  • 7. Add the flour mixture alternately with the cocoa mixture to the sugar/butter mixture.
  • 8. Mix in 3/4 of the bacon, reserving the rest for garnish.
  • 9. Spread the batter evenly between the 3 prepared pans and bake in preheated oven for 25 to 30 minutes.
  • 10. Cool for 10 minutes on wire racks then remove the cakes from the pans and cool completely on the wire racks.
  • 11. FROSTING: Place the butter, granulated sugar, and heavy cream in a medium saucepan and heat over medium heat until the butter melts and the sugar dissolves, stirring occasionally.
  • 12. Increase the heat to medium-high and simmer the mixture for 1 minute, stirring constantly. Small bubbles will form around the edge of the pan.
  • 13. Remove the saucepan from the heat. Add the chopped dark chocolate and dark cocoa powder. Stir the mixture until it is smooth and all of the chocolate is melted.
  • 14. Return the saucepan to low heat for 1 minute, if necessary, to melt the chocolate completely.
  • 15. Pour the chocolate mixture into the large bowl of an electric mixer. Add the powdered sugar, vanilla, and dissolved coffee and mix on low speed just to blend in the powdered sugar.
  • 16. Press plastic wrap onto the surface of the mixture and refrigerate until it is cool to the touch, about 35 minutes. Stir occasionally to ensure the mixture cools throughout.
  • 17. Beat the cooled chocolate mixture on medium-high for 1 minute, or until the frosting is creamy and lightens slightly in color.
  • 18. Place on layer of your cooled cake onto a serving platter and cover the sides and top with the frosting. Place a layer on top of this and repeat with the frosting. Place the top layer on and repeat. Now spread remaining frosting over the sides to remove any splits on the layers. Spread the rest over the top layer and sprinkle remaining bacon over the top and dust with more cocoa powder if desired.

  • Air Fryer directions -Lay about 1/2 the bacon into the air fryer basket. (It’s okay for them to overlap) Season with coarse black pepper and cook at 400 degrees F. for 5 minutes. While the bacon is cooking, add 5 Tbsp. maple syrup and brown sugar to a bowl and stir to combine. After 5 minutes, open the air fryer and flip the bacon. Cook for an additional 5 minutes. Open the air fryer and brush the bacon with the maple syrup mixture. Cook another 5 minutes then transfer to a cooling rack to set. Let sit for at least 5 minutes. Repeat the same process with the other 1/2 of the bacon.
  • Oven directions - Preheat oven to 350 degrees F. Line a cookie sheet with foil, then place a cooling rack on top of the lined baking sheet. Combine 5 Tbsp. maple syrup and brown sugar and stir to combine. Line the bacon across the cooling rack, season with pepper, then brush each slice with the maple brown sugar sauce. Bake for 15 minutes. Remove from oven, flip the bacon, brush again with the maple brown sugar sauce and bake for an additional 15 minutes or until the bacon is crisp. Remove from oven and set aside to cool.
  • While the candied bacon sets, mix the spice cake mix according to the box directions. Bake in two round greased cake pans, 8 or 9 inches, according to the box directions.
