This is an easy, delicious quiche that will take no time to prepare and your friends will ask for the recipe! I have made this for numerous office gatherings and everyone raves about it!

- Preheat oven to 400 degrees F (200 degrees C).
- Place unthawed pie crust on a baking sheet. In a medium bowl, mix the bacon, onions, and both cheeses. Pour this mixture into the crust.
- Mix the eggs and half and half in a bowl. Pour the egg mixture over the cheese mixture.
- Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C) and bake for an additional 35 minutes, until top of quiche begins to turn brown.

- Preheat oven to 375 degrees. Lightly flour a rolling pin and work surface and roll out dough to a 12-inch round. Place in a 9-inch pie plate, fold overhang under, and crimp edge. Place a sheet of parchment paper over dough and fill with pie weights or dried beans. Bake until edge is dry and light golden, about 20 minutes. Remove parchment and weights.
- Meanwhile, in a large skillet, melt butter over medium-high. Add onion, season with salt and pepper, and cook until light golden, 8 to 10 minutes. In a medium bowl, whisk together eggs and cream. CRUSTLESS BROCCOLI, BACON, AND CHEDDAR QUICHE

- Preheat oven to 350 and grease a quiche or pie dish (or baking dish up to 9x13 inches) with butter or oil. Place prepared dish on a rimmed baking sheet lined with foil, just in case of overflow while baking. Set aside.
- In a large bowl, whisk the eggs (4), milk (1.5 cups), bisquick (3/4 cup), kosher salt (1/2 teaspoon), and black pepper (1/2 teaspoon) until well combined.
- Stir in the grated parmesan cheese (1 cup), the steamed broccoli florets, and the shredded cheddar cheese (8 oz./2 cups).

BROCCOLI BACON QUICHE

- Preheat the oven to 400°F. Roll your dough into the 9-inch pie plate, pressing it to fit into the plate, and decorate the edges. Line the pie dough with parchment paper, cover the bottom and the sides, then fill with pie weights (I usually use dried beans). Bake with the pie weights for 15 minutes. Remove from the oven and carefully remove the pie weights/beans and parchment paper. Prick the bottom of the pie crust with a fork to prevent bubbling and return to the oven for an additional 5 minutes, or until the bottom is dry. Remove from oven and place on a wire cooling rack while you make the filling.
- In a large skillet, cook the chopped bacon until crisp. Remove and let cool on a paper towel. In the same skillet (you can remove bacon grease), add broccoli and cook over medium heat until broccoli begins to soften (about 5-10 minutes). Set aside to cool.
- In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Sprinkle the chopped bacon, broccoli, and 1/2 cup of cheese on the bottom of the pie crust. Then pour the egg mixture over top. Finish with the other 1/2 cup of cheese.
- Place in oven and bake for 35-40 minutes, or until the center is set and no longer wiggly & the eggs are cooked through. See notes below about crust browning.
- Let it cool for about 15 minutes before slicing, or refrigerate for up to 5 days and enjoy later!

Another of my daughter Andrea's recipes which she is allowing me to publish. For Thanksgiving, she decided to make a quiche just to be a little different. There may be other recipes out there that are similar but I promise that this recipe came out of her own imagination and a bit of discussion with me around the kitchen counter. Tell you what, this turned out great!

- 1. Preheat oven to 350 degrees.
- 2. Chop and steam broccoli for 5 minutes.
- 3. Cook the bacon and remove just before it becomes crisp, set aside. Save 2 tablespoons of the bacon grease in the frying pan.
- 4. Saute onions and garlic in the 2 tbs. of bacon grease until onions are soft and translucent.
- 5. Slightly grease the pie pan and place the pie crust inside. Crimp and flute the edge of the crust so it is above the rim of the pie pan.
- 6. Place pie pan on a large cookie sheet. Quiches are notorious for bubbling over and the cookie sheet will save you from having to scrape burned cheese off the bottom of your oven.
- 7. In a medium bowl, mix cheese sauce, half-and-half, beaten eggs, salt, pepper and herbs, set aside.
- 8. Spread the shredded cheddar on the bottom of the pie shell in a single layer.
- 9. Add the bacon on top of the cheese in a single layer.
- 10. Add the garlic and onion spreading it over the beacon as evenly as possible.
- 11. Layer the broccoli on top.
- 12. Pour the cheese/egg/milk mixture over the top until everything is well covered.
- 13. Bake in the oven for 45 to 60 minutes or until a knife inserted in the center comes out clean.
- 14. Let it cool on a wire rack for 15 minutes and serve.

- Preheat the oven to 350F.
- In a large skillet, cook the bacon until crisp. Remove from skillet and drain on a paper towel.

- Take the broccoli florets out of the freezer so they can begin to thaw. Place the bacon in a skillet and cook over medium-low heat until very brown and crispy. Transfer the bacon to a paper towel lined plate to drain and pour off most of the grease out of the skillet.
- Turn the heat under the skillet up to medium-high and add the broccoli florets. Sauté them in the residual bacon grease until they are no longer frozen. Transfer the broccoli to a cutting board. Roughly chop the florets into smaller, bite-sized pieces.
