Steamed and then baked, these scrumptious green beans take on great flavor, because they are wrapped in bacon and bathed in a savory sauce. This recipe is best when you marinate the bundles overnight.

- Wash the green beans and remove the ends, placing them into a microwave safe container with a little water in the bottom. Microwave them for about 4 minutes to soften them up a little.
- Melt your butter, and mix in the brown sugar and garlic. I know that the garlic seems a little weird, but trust the Ukrainian girl on this one; the garlic just gives it that extra zing.
- Take 8 green beans and wrap one bacon slice around it. Lay the bundles with the ends of the bacon tucked underneath, and make sure the ends are touching another part of the slice, the bacon will sear together and these won't fall apart, miracle of miracles!
- To make the sauce, combine them in a microwave safe cup and heat until the ingredients are all combined and the sugar has dissolved somewhat.

- Preheat oven to 400°F. Line a large, rimmed baking sheet with heavy foil. Lay bacon strips on pan without overlapping. Bake for 10 minutes or until bacon is just starting to brown on the edges while remaining underdone and pliable. Drain bacon on a plate lined with paper towels and, once cool, cut each slice in half. Reduce oven temperature to 350°F.
- While bacon cooks, bring a large pot of water to a boil. Blanch green beans by plunging them into the boiling water for 3 minutes. Drain and immediately transfer beans to a large bowl of ice water to stop the cooking process.
- To assemble bundles, lay 8 to 12 beans in a pile (or less, depending on the thickness of your beans). Take a half piece of bacon and wrap it around the top of the green bean bundle, tucking the ends underneath. Lay the bundle on a baking sheet with the bacon seam-side down. Repeat with all green beans.

- Preheat oven to 350°F (for regular oven) 325°F (for convection oven). Line a large baking sheet pan with parchment.
- Bring a large pot of water about 2 liters to boil. Quick blanch the trimmed green beans for about 2-3 minutes. Plunge them into the ice water to stop the cooking and set the color. Once they are cool to touch, drain the beans and pat dry on a cloth or paper towel.
- In the meantime, pan fry the bacons in batches until the slices are just beginning to brown along the edges but are still very pliable, 1 to 2 minutes per side depending on the thickness. You don’t want them to crisp up or it will be hard to wrap the beans. Transfer to a paper towel-lined plate and let cool. Cut strips in half lengthwise.
- In a large bowl, lightly toss the green beans with salt, pepper, and olive oil. Stash a small bunch of petite green beans (about 5-6) onto the bacon strip and roll up into a bundle. Tuck the end of the bacon strip underneath.
