2 1/2 cups sifted all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
1/4 teaspoon kosher salt
1/2 cup (1 stick) unsalted butter
1 1/4 cups sugar
2 large eggs
1 teaspoon vanilla extract
4 bananas, mashed (about 1 1/3 cups)
1/2 pound bacon, cooked crisp, chopped

Steps:

  • Preheat the oven to 400°F. Line a baking sheet with parchment paper and set aside.
  • In a large mixing bowl, sift together the flour, baking powder, baking soda, 1/2 teaspoon of the cinnamon, and the salt.
  • In a medium mixing bowl, use a hand mixer to cream together the butter and 1 cup of the sugar. Beat in the eggs, one at a time, until they are fully incorporated. Beat in the vanilla. Add the butter mixture to the flour mixture, then stir in the mashed bananas, beating well after each addition. Fold in the bacon.
  • Stir together the remaining 1/4 cup sugar and the remaining cinnamon.
  • Drop the dough by heaping tablespoons onto the prepared baking sheet 1 inch apart. Sprinkle generously with the cinnamon-sugar and bake for 10 to 12 minutes, until slightly browned. Allow the cookies to cool completely before storing in an airtight container. Cookies will keep for 5 to 7 days.

10 slices bacon
2 1/4 cups all-purpose flour
1/4 teaspoon baking soda
3/4 teaspoon salt
2 sticks (8 ounces) unsalted butter, softened
1/4 cup mayonnaise
3/4 cup granulated sugar
3/4 cup packed light brown sugar
2 large eggs
2 tablespoons creamy peanut butter
2 teaspoons pure vanilla extract
3/4 cup semisweet chocolate chunks
1/2 cup chopped salted peanuts
1/2 cup sweet dried banana chips, roughly chopped

Steps:

  • Cook the bacon in a skillet until crisp, then drain on paper towels. Once the bacon is cool, roughly chop it (you should have about 1/2 cup).u00A0
  • Combine the flour, baking soda and salt in a medium bowl. In a large bowl, beat the butter, mayonnaise and sugars with a mixer at medium speed until fluffy, about 3 minutes. Beat in the eggs, one at a time, until well blended. Add the peanut butter and vanilla and beat until combined.u00A0
  • At low speed, add the flour mixture in batches, beating until just combined. Using a wooden spoon, stir in the chocolate chunks, bacon, peanuts and banana chips. Cover the bowl with plastic wrap and chill for at least 30 minutes or overnight.u00A0
  • Position the racks in the upper and lower thirds of the oven and preheat the oven to 325 degrees F. Line 2 muffin tins with paper liners.u00A0
  • Fill the muffin tins about halfway full with the batter (a 2-inch, 2-ounce ice cream scoop gives you just about the perfect amount, and helps prevent spilling).u00A0
  • Bake until the tops are slightly golden and a toothpick inserted into the center comes out clean, about 30 minutes. (Keep in mind that the cookies won't rise and form a dome like a cupcake.) Let cool in the muffin tins on wire racks for about 10 minutes, then unmold the cookie cups and transfer them to the racks to cool completely.

¼ cup soy sauce
1 tablespoon honey
4 ripe bananas, each cut into 5 chunks
10 slices bacon, halved crosswise
20 toothpicks

Steps:

  • Whisk soy sauce and honey together in a large bowl; add bananas and stir to coat bananas in marinade. Refrigerate for 30 minutes. Remove banana chunks and reserve marinade.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Wrap bananas with bacon and secure by threading a toothpick through the bacon. Dip wrapped bananas in reserved marinade and arrange on a baking sheet.
  • Broil in the preheated oven until bacon is browned and crispy, 8 to 10 minutes.

Pliable chewy Bacon Cookies with a touch of maple. You must keep your eyes on these during the last couple of minutes. They get brown significantly faster during the end of baking. Slice Bacon into small pieces before frying then you won't have to crumble it. Press the Bacon between layers of paper towels when cool enough. You will have a buttery cookie with Bacon and not a Bacon grease cookie.

1 cup butter, softened
3/4 cup brown sugar, packed
3/4 cup sugar
2 eggs
4 teaspoons maple syrup
2 1/3 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1 lb bacon, cooked until crispy, crumbled and well drained

Steps:

  • In a large mixing bowl, beat together butter, brown sugar and sugar until fluffy.
  • Stir in eggs and maple syrup and beat for 1 more minute.
  • In a small bowl, combine flour, baking soda and salt and add in batches to mixing bowl. Beat just long enough to incorporate.
  • Stir in the bacon pieces by hand.
  • Drop by tablespoons 2 inches apart onto cookie sheets.
  • Bake at 375 degrees for 7-10 minutes, until golden brown.

2 ripe bananas (you may need less depending on their size)
8 slices smoked streaky bacon (it needs to be streaky)

Steps:

  • Skin the bananas, cut the ends off and slice into approximately 4 pieces (you ideally need to cut them to the approximate width of your bacon, so depending on the size of your bananas you could get more or less slices).
  • Wrap each slice of banana in one piece of streaky bacon. Hold in place with a cocktail stick.
  • BBQ until bacon is cooked through (we like ours well cooked so the bacon is crispy).
  • Serve!
