  • Slice the lettuce into about 1-inch (2 ½ cm) pieces, then transfer to a large salad bowl.
  • Add the bacon, avocado, croutons, cheese, and dressing, mixing until evenly combined.
  • Serve with additional parmesan on top.

One of the things I love about Spring is that you feel like eating lighter....enter crisp, fresh Spring salads, and of course avocados! This gourmet Avocado and Bacon Caesar salad is incredibly tasty, with amazing flavours and textures. Plus, it's an easy recipe, perfect for a casual lunch or dinner.

Number Of Ingredients 16

1 1⁄2 cups fresh or frozen broad beans
3 eggs
6 streaky bacon rashers
6 slices ciabatta bread slices (2cm-thick, gluten-free if required)
1 tablespoon olive oil
2 baby cos lettuce
1 small red onion (or 1⁄2 medium)
1 firm ripe avocado
1⁄2 punnet cherry tomatoes
1⁄2 cup Parmesan cheese shavings
1⁄4 cup parsley (roughly chopped)
1⁄2 cup mayonnaise
1 lemon (juiced)
1⁄4 parmesan cheese (finely grated)
1⁄4 teaspoon crushed garlic
1-2 tablespoons milk

Steps:

  • Preheat oven grill to high.
  • Place broad beans in a bowl and cover with boiling water. Leave to soak for 5-10 minutes.
  • Place eggs in a small pot and cover with water. Bring to a gentle boil then time for 6 minutes. Drain eggs and run under cold water (this stops them cooking any further).
  • Lay strips of bacon on an oven tray, side by side. Grill until bacon is crispy, 6-8 minutes. Brush bread with olive oil and grill with bacon in the last 2 minutes.
  • While the bacon is grilling, prepare the rest of the salad. Separate cos lettuce leaves, discarding the outer leaves, wash well and roughly chop. Thinly slice red onion; peel and slice avocado; halve cherry tomatoes. Shell broad beans by gently squeezing their dull grey skin until the bright green beans pops out.
  • Shell hard-boiled eggs and quarter. Roughly chop crispy bacon.
  • Combine all dressing ingredients together in small bowl.
  • To serve, toss cos lettuce with tomatoes, broad beans, avocado, red onion, parsley and parmesan cheese and divide between plates. Top with crispy bacon and egg and dress with Caesar dressing. Serve with toasted ciabatta on the side.

140g streaky bacon , chopped
140g cherry tomatoes , halved
½ x 190g jar pesto

70g bag rocket
Grana Padano shavings, to serve

Steps:

  • Bring a large pan of water to the boil. Cook the orzo following pack instructions, drain and set aside. Meanwhile, heat the oil in a frying pan and fry the bacon for 4-5 mins until crispy. Stir in the tomatoes and cook for a couple mins more. Stir in the orzo, pesto and avocado, and heat for 2 mins more.
  • Spoon onto a serving plate, then scatter with rocket leaves and Grana Padano.

20 brussels sprouts, shaved
1 avocado, diced
6 green onions, diced
1 cup fresh spinach
7 slices bacon, cooked and cut into 1/2 inch (1 cm) pieces
⅓ cup parmesan cheese
¼ cup dried cranberries
¼ cup sliced almonds
4 tablespoons lemon juice
1 tablespoon dijon mustard
1 tablespoon dried oregano
1 tablespoon pepper
½ tablespoon salt
4 tablespoons olive oil

Steps:

  • Slice the stems off the Brussels sprouts and cut each one in half, then thinly slice. Transfer the shaved sprouts to a medium bowl and break apart with your hands.
  • To prepare the vinaigrette, juice the lemons into a small bowl and remove the seeds.
  • Add the mustard, oregano, pepper, and salt. Whisk to combine.
  • Slowly add the olive oil while continuing to whisk until evenly blended.
  • Slice the avocado and remove the pit, then dice.
  • Trim the ends of the scallions, then dice.
  • In a large bowl, combine the Brussels sprouts and spinach.
  • Add the avocado, bacon, scallions, Parmesan cheese, cranberries, and almonds.
  • Pour the dressing evenly over the salad.

Steps:

3 medium tomatoes, chopped
