1 ½ pounds penne pasta
1 tablespoon extra virgin olive oil
1 onion, chopped
4 cloves garlic, sliced
4 cups canned whole tomatoes, crushed
3 tablespoons capers
½ cup pitted and halved green olives
1 ½ teaspoons crushed red pepper
3 anchovy filets, rinsed and chopped
6 leaves fresh basil
1 pinch salt
ground black pepper to taste
⅔ cup red wine
1 cup fresh sliced mushrooms
6 ½ ounces pancetta bacon, finely chopped

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Heat the extra virgin olive oil in a large skillet and saute the onion until transparent. Add garlic and saute until soft, then the pancetta and cook until bubbling and transparent.
  • Add the capers, mushrooms, olives, hot red pepper, anchovies, salt (use only a pinch because of the anchovies), ground black pepper and wine.
  • Simmer until the wine is reduced by half, then add the tomatoes. Cook for 10 minutes longer, add the basil leaves, then toss in the cooked pasta and sprinkle generously with cheese and parsley. Serve immediately.

This Italian classic is a firecracker of a dish. Try to use a mixture of tomatoes - sweet cherry and juicy beef varieties, and whatever else you can find will create beautiful flavour and texture.

olive oil
5 fresh red chillies
6 cloves of garlic
4 free-range skinless chicken breasts
1 bunch of fresh basil (30g)
3 x 400 g tins of quality plum tomatoes, (stone in)
10 black olives
600 g ripe mixed-colour tomatoes
2 tablespoons baby capers
½ a lemon
Parmesan cheese
2 handfuls of rocket

Steps:

  • Place the chicken breasts between two layers of greaseproof paper, then bash with a rolling pin until they're about 1cm thick.
  • Rub all over with sea salt, black pepper and a little drizzle of oil, then set aside.
  • Prick 4 chillies, then peel and finely slice 4 garlic cloves. Pick the basil leaves, finely chopping the stalks.
  • Drizzle a good lug of oil into a medium pan over a low heat, add the pricked chillies, sliced garlic, basil stalks and half the leaves. Cook gently for 15 to 20 minutes, or until softened but not coloured.
  • Remove the basil leaves (which should be beautifully translucent) and save them for later. Fish out the chillies. Slice them open, scrape out and discard the seeds, then scrape out the flesh and add it to the pan, discarding the skin.
  • Turn the heat up to medium and add the remaining basil leaves and plum tomatoes. Break them up with the back of a spoon, then allow the sauce to bubble away for at least 20 minutes, or until thickened and the tomatoes have broken down.
  • Tear up the olives and roughly chop the tomatoes, then add to the pan along with most of the capers. Season to taste.
  • Place a griddle pan on a high heat and allow it to get super hot. Place the chicken breasts on the griddle and cook for a couple of minutes on each side, or until golden, cooked through.
  • Finely slice the remaining garlic and fry it in a little oil along with the remaining capers until crispy.
  • Leave the chicken to rest for a couple of minutes, then slice into long strips. Pour the tomato sauce onto a platter and lay the chicken slices on top.
  • Deseed and finely chop the remaining chilli, then sprinkle on top along with the garlic and capers. Grate over some lemon zest and Parmesan, top with the rocket and basil leaves, then serve.

3 tbsp olive oil
2 medium onions, halved and sliced
1 garlic bulb, separated into cloves
2 red chillies, deseeded and sliced
350ml red wine
350ml chicken stock
600g tomato, finely chopped
3 tbsp tomato purée
2 tsp chopped thyme
6 skinless chicken legs
chopped parsley, to serve (optional)
pasta or mash, to serve

Steps:

  • Heat the olive oil in a large heavybased pan. Add the onions and whole garlic cloves. Fry, stirring frequently, for 10 mins, adding the chillies for the final min.
  • Pour in the wine, turn up the heat and allow it to bubble for 1 min to cook off the alcohol. Stir in the stock, tomatoes, tomato purée and thyme with some seasoning. Add the chicken legs, pushing them under the liquid, then part-cover the pan and leave to simmer gently for 45 mins.
  • Remove the lid and cook for a further 15 mins until the chicken is tender and the sauce has reduced a little. Serve scattered with parsley, if you like, and pasta or mash.

1 tablespoon olive oil
1 pound chicken breasts (boneless and skinless, cut into 1 inch cubes, about 3 breasts)
1 large onion (chopped)
6 cloves garlic (minced)
salt and pepper to taste
1/4 teaspoon red pepper flakes
8 ounce penne (uncooked)
24 ounce marinara sauce (1 jar)
1 cup red wine
2 cups chicken broth (low sodium or no sodium added)
1 teaspoon dried oregano
3 leaves fresh basil (roughly chopped)
Parmesan cheese (for serving (optional))

Steps:

  • Cook the chicken: Heat the oil in a large skillet over medium-high heat. Add the chicken and until the chicken starts to brown, about 5 minutes. Add the onion and cook for another 3 minutes until it softens and becomes translucent. Stir in the red pepper flakes and garlic and cook for another 30 seconds until aromatic.
  • Finish the pasta: Add the rest of the ingredients to the pot, including the penne, and stir. Bring everything a boil then reduce the heat to a simmer and cook for 15-20 minutes, stirring occasionally. Add more broth if needed, though mine had enough liquid.
  • Garnish and serve: Top with basil, parmesan cheese, and serve.

2/3 cup good olive oil
1 cup whole peeled garlic cloves (24 cloves)
2 (28-ounce) cans whole peeled San Marzano tomatoes
2 teaspoons whole fennel seeds, chopped
1 teaspoon crushed red pepper flakes
1/3 cup dry red wine, such as Chianti
Kosher salt and freshly ground black pepper
1/4 cup julienned fresh basil leaves, plus extra for serving
1 pound dry penne rigate, such as DeCecco
Freshly grated Parmesan cheese, for serving

Steps:

  • In a medium (10-inch) pot or Dutch oven, such as Le Creuset, warm the olive oil over medium-low heat. Add the garlic and cook for 10 to 12 minutes, tossing occasionally, until the garlic has softened and is lightly browned.
  • Meanwhile, drain the tomatoes, place them in a food processor fitted with the steel blade, and pulse until they're roughly chopped. With a slotted spoon, transfer the garlic to the food processor and pulse again to chop the garlic. Pour the tomato mixture into the pot with the olive oil, add the fennel, red pepper flakes, red wine, 1 tablespoon salt, and 1 teaspoon black pepper. Bring to a boil, lower the heat, and simmer for 30 minutes. Stir in the basil, taste for seasonings (it will be very spicy!), and keep warm over very low heat.
  • Meanwhile, bring a large pot of water to a full boil. Add 2 tablespoons kosher salt and the penne and cook according to the directions of the package.
  • Two minutes before the pasta is al dente, using a wire or spider strainer, lift the pasta out of the boiling water and add it to the sauce, along with 1/4 cup of the pasta water. Simmer for 2 to 3 minutes, until the pasta is al dente. Spoon the pasta into low shallow bowls, sprinkle with extra basil and Parmesan cheese, and serve hot.

A creamy, spicy pasta sauce with healthy veggies to make up for the delicious bacon! I created the recipe when the right ingredients just happened to be in my fridge, in memory of a lovely arrabiata spice blend I purchased in Italy long ago. Improvise as needed to fit what you have on hand. I use Limoncello, an Italian liquer, to deglaze the pan, instead of white wine and lemon. You can also use half and half instead of cream or omit the cream altogether.

10 ounces penne pasta
1/2 cup cooked bacon, crumbled
3 tablespoons olive oil or 3 tablespoons bacon grease
2 garlic cloves, minced
10 cremini mushrooms, sliced

1 red pepper, chopped
1 cup frozen peas
2 cups spinach or 2 cups kale, chopped
3/4 cup Italian parsley, chopped
2 tablespoons white wine
1 tablespoon lemon juice
2 tablespoons heavy cream
1/2 cup milk
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon dried marjoram
1/2 teaspoon crushed red pepper flakes

Steps:

  • Boil water and cook pasta according to package directions.
  • Saute garlic and mushrooms in olive oil or bacon grease in a pan large enough to fit all the veggies. Season with salt and pepper.
  • When mushrooms are soft and brown, remove pan from heat, set mushrooms aside in a small bowl.
  • Add white wine and lemon juice to the hot pan and stir with a spoon to deglaze the pan. Return to the heat.
  • Add bell pepper, peas, dried herbs, cream and milk. Saute over medium heat until veggies are crisp tender, about 5 minutes.
  • Add bacon, mushrooms, chard and parsley. Cook until greens are wilted, about 2 minutes.
  • Serve over pasta, with bread so you can mop up all the yummy sauce!
