BUTTERNUT SQUASH AND APPLE CASSEROLE WITH BACON
Warm up those cool days with this Butternut Squash and Apple Casserole, with crispy bacon and pecans to bump up the perfect autumn flavor.

- Preheat oven to 400F and grease a 9×13 baking dish with 1 tablespoon melted coconut oil. Set aside.
- Combine the butternut squash, apples, red onion, 2 tablespoons melted coconut oil, sage, and thyme in a large mixing bowl.
- Season with salt and black pepper, to taste, and toss to combine.
- Transfer the butternut squash mixture onto the prepared baking dish and spread into an even layer.
- Place in the pre-heated oven to roast just until the butternut squash is fork tender, around 25-30 minutes.
- While the butternut squash mixture is roasting, heat a large frying pan over medium heat and add the bacon.
- Cook, stirring occasionally, until the bacon is cooked through and crispy, approximately 8-10 minutes.
- Transfer the bacon to a small mixing bowl lined with paper towels to absorb excess grease.
- Blot off remaining grease on top and set aside to cool for 5-10 minutes.
- Once cooled, discard the paper towels and add the remaining tablespoon of coconut oil, chopped pecans, honey, cinnamon, and ground cloves.
- Season with salt and black pepper, as desired, and toss to combine.
- Remove squash from oven and top with the bacon-pecan mixture.
- Return to the oven until the topping is nicely browned, approximately 10 minutes. Remove from oven and cool for 5 minutes before serving.

This easy dish is a family favorite on the buffet table when we have summer birthday or summer celebration parties. It makes a really nice side dish to any BBQ and will reheat nicely in the microwave. The cheesy cracker and dried onion mixture will encourage any fussy kids to eat their vegetables!

- Preheat the oven to 400 degrees F (200 degrees C). Butter a 9x13-inch baking dish.
- Heat 1 tablespoon butter and oil in a skillet over medium heat. Add squash, diced onion, thyme, and garlic. Cook, stirring frequently, until squash is tender, about 5 minutes. Cook, covered, until squash juices are released, about 2 minutes. Uncover and continue to cook until juices evaporate, 3 to 5 minutes more. Drain squash mixture into a bowl.
- Mix remaining butter with crushed crackers, Cheddar cheese, French-fried onions, salt, and pepper. Reserve 1 cup of the mixture; stir the rest into the squash mixture. Add bacon and stir well.
- Mix milk and eggs together in a small bowl and add to the squash mixture. Mix well. Spread into the prepared baking dish. Sprinkle reserved portion of the cracker mixture on top of casserole.
- Bake in the preheated oven until lightly browned, about 25 minutes.

- Slice squash and set aside. Cook bacon, drain and set aside saving drippings
- In a bowl combine and whisk together the olive oil, black pepper, salt, basil, parsley, garlic, sugar, bacon drippings and chopped onion. Pour over squash and toss to cover all the squash. Spread a layer of the squash in a 2 to 3 quart baking dish, sprinkle on half the cheese cracker crumbs, half the crumbled bacon and half the shredded cheese. Top with another layer of squash, cracker crumbs, bacon and cheese. Bake covered with foil in a preheated 350 oven for 50 to 55 minutes until squash is done.

- Preheat the oven to 350 degrees F (175 degrees C).
- Coat the inside of squash with about 1 tablespoon olive oil. Place squash, cut-side down, on a baking sheet.
- Bake in the preheated oven until squash is tender, about 30 minutes. Cool squash for 10 minutes.
- Grease a casserole dish.
- Shred the inside of squash with a fork and transfer to a bowl. Add 1/2 the shredded Cheddar cheese, bacon bits, butter, salt, and black pepper; mix until well blended. Transfer mixture to the prepared casserole dish.
