BUTTER BEAN HUMMUS
Steps:
- Process the beans in a food processor until they form a paste. Add the Roasted Garlic and pulse 2 to 3 times to incorporate. Add the tahini, cumin, coriander, paprika and cayenne and blend until a smooth texture starts to develop, 1 to 2 minutes. With the motor running, pour in the olive oil and blend until smooth. The mixture will be thick at this point. Pour in the lemon juice and, if needed, drizzle in water, 1 tablespoon at a time (up to 1/2 cup), until the desired consistency is reached. Season with salt and pepper to taste.
- Cover and refrigerate until chilled, about 1 hour. Serve with pita bread, pita chips or fresh vegetables.
- Preheat the oven to 350 degrees F.
- Cut the top off of the garlic head, exposing the cloves but leaving the head intact. Set the head on a large piece of foil, drizzle with the olive oil and season with salt and pepper. Wrap up the foil to make a pouch and bake until the garlic is soft and roasted, 45 minutes to 1 hour. Set aside to cool. Yield: 1 head garlic
THE GREAT BRITISH BACON BUTTY - BACON SANDWICH
The news is out - scientists at my old university, (Leeds University in West Yorkshire) have discovered the PERFECT way to make a "Bacon Butty", that quintessential British sandwich, and they have devised a mathematical formula for it!! The bacon butty is one of my FAVOURITE sandwiches of all times.......especially when doused in HP Sauce or Worcestershire Sauce! Here is my method - it's hardly a recipe, more of an idea and an assembly job! I have posted their mathematical formula at the end of the recipe - my formula is: Eat your bacon butty whilst it's still hot and crispy!! Please increase the quantities as needed. I like to use smoked bacon, but any good quality dry cure bacon will be fine.

Steps:
- Cook the bacon under a preheated oven grill for seven minutes at about 240C/475F - turning half way through the cooking time.
- Cook until crispy, but not burnt or too dry.
- (You can also fry the bacon in a pan if you wish).
- Butter the two slices of bread and place the grilled or fried bacon inside the two slices of bread to make a sandwich.
- Add sauces to taste.
- Enjoy!
- The bread can also be toasted if you wish! And, you can make this sandwich with a crusty bread roll.

- Four researchers at the Department of Food Science at Leeds University in the UK spent more than 1,000 hours testing 700 variations on the traditional bacon sandwich.
- They tried different types and cuts of bacon, cooking techniques, types of oil and a range of cooking times at different temperatures.
- A shortlist was then tested with computers to measure the texture of each sandwich.
- Fifty volunteers also judged each sandwich according to its taste, texture and flavour.
- The formula is: N = C + {fb (cm) . fb (tc)} + fb (Ts) + fc . ta, where N=force in Newtons required to break the cooked bacon, fb=function of the bacon type, fc=function of the condiment/filling effect, Ts=serving temperature, tc=cooking time, ta=time or duration of application of condiment/filling, cm=cooking method, C=Newtons required to break uncooked bacon.
BACON AND HUMMUS BAGUETTE SANDWICHES
I found this in the UK cooking magazine called Olive but I have been making a variation of this on my own for a while now. I love hummus and wondered how it would go with bacon and I ended up being pleased with the results. I have also done this with turkey bacon when I wanted to drop the calories and fat a bit. Also, whenever possible I go for a reduced fat version of the hummus

BACON FALAFEL BITES WITH HUMMUS
Steps:
- Position a rack in the top third of the oven and preheat to 350 degrees F.
- Put the chickpeas, olive oil, lemon juice, tahini, garlic and 1/3 cup water in the bowl of a food processor. Blend until completely smooth and slightly fluffy, 2 to 3 minutes. Season with salt and black pepper. Place in a small bowl, cover with plastic wrap and refrigerate until ready to use.
- Put the bacon slices on a rack set over a baking sheet. Bake until golden brown and crispy, 20 to 25 minutes. Allow to cool slightly, and then crumble or cut with a knife into bite-size pieces.
- Prepare the falafel mix according to the package directions, adding the bacon to the mixture. Using a leveled tablespoon as a measure, form the mixture into small balls, about 24 total. Place the formed falafel balls onto a baking sheet.
- Fill a large skillet with 1/2 inch canola oil and heat until a deep-fry thermometer inserted in the oil registers 350 degrees F. In batches, fry the falafel balls until golden brown all over, 1 to 2 minutes total per batch. Use tongs or a slotted spoon to transfer the cooked falafel balls to a paper-towel lined plate to absorb any excess oil. Sprinkle liberally with kosher salt.
- To assemble, place 2 to 3 slices of both tomato and cucumber down the center of each lettuce leaf. Top with a falafel ball. Drizzle with some hummus and garnish with a sprinkle of Aleppo pepper.
CHOCOLATE HUMMUS WITH CANDIED BACON
Steps:
- For the hummus: In the bowl of a food processor blend the cocoa powder, maple syrup, almond extract, cinnamon, salt and garbanzo beans. Add a little bit of water to adjust the consistency if needed.
- For the bacon: Preheat the oven to 450 degrees F.
- Cook the bacon to desired doneness in the microwave or on the stovetop. Sprinkle the hot bacon with brown sugar then bake for 5 minutes.
- Dip the candied bacon in the chocolate hummus and enjoy!
