A hearty casserole for dinner! Enjoy this cheesy bacon and pasta dish that's topped with Progresso™ bread crumbs.

2 large sweet onions, sliced (4 cups)
1 package (16 oz) uncooked penne rigate pasta
1 tablespoon butter or margarine
2 tablespoons Gold Medal™ all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon Dijon mustard
2 cups fat-free (skim) milk
1/2 cup reduced-fat sour cream
2 oz Gruyère cheese, shredded (1/2 cup)
3 slices bacon, crisply cooked, crumbled
1/2 cup Progresso™ panko crispy bread crumbs
1/4 cup chopped fresh basil leaves

Steps:

  • Spray 12-inch nonstick skillet with cooking spray; heat over medium heat. Add onions to skillet; cook uncovered 10 minutes, stirring every 3 to 4 minutes, until tender and starting to brown. Reduce heat to medium-low. Cook 35 to 40 minutes longer, stirring every 5 minutes, until onions are deep golden brown; set aside.
  • Meanwhile, cook and drain pasta as directed on package except omit salt. Spray 11x7-inch (2-quart) baking dish with cooking spray. Pour pasta into baking dish; keep warm.
  • While pasta is cooking, make cheese sauce. In 3-quart saucepan, melt butter over medium heat. Stir in flour, salt, pepper and mustard with wire whisk. Cook about 2 minutes, stirring constantly, until mixture is smooth and bubbly; remove from heat. Gradually stir in milk. Heat to boiling, stirring constantly; boil and stir 1 minute. Remove from heat; stir in caramelized onions and all remaining cheese sauce ingredients.
  • Heat oven to 400°F. Pour cheese sauce over pasta in baking dish. Sprinkle with topping ingredients. Bake uncovered 10 minutes or until heated through (topping will not be brown).

Steps:

  • Cook bacon in large skillet until crisp. Remove bacon from skillet; drain on paper towels. Discard all but 1 tsp. drippings from skillet.
  • Add onions to reserved drippings in skillet; cook on medium-low heat 17 to 20 min. or until golden brown, stirring occasionally.
  • Meanwhile, prepare Dinner in large saucepan as directed on package.

½ pound thick-sliced bacon, cut into 1/2 inch pieces
2 large onions, thinly sliced
½ teaspoon dried thyme leaves

Steps:

  • Follow the recipe for Creamy Macaroni and Cheese using Vermont white cheddar.
  • Fry bacon in a large skillet over medium-high heat until crisp, about 5 minutes. Transfer to a paper towel-lined plate. Pour off all but 3 tablespoons of bacon drippings. Add onions and thyme; saute until soft and golden brown, 8 to 10 minutes. Stir bacon and onions into macaroni. Serve hot.

1 (16 ounce) package elbow macaroni
¼ cup butter
½ cup sour cream
1 egg, beaten
2 tablespoons cream cheese, softened
4 cups grated Asiago cheese
4 cups grated Vermont Cheddar cheese
4 slices bacon
2 tablespoons butter
1 large onion, sliced thin
4 cloves garlic, minced
⅛ teaspoon brown sugar
¼ cup chopped fresh parsley
¼ cup panko bread crumbs
2 tablespoons butter
5 tablespoons all-purpose flour
3 cups milk
½ teaspoon ground mustard
½ teaspoon paprika
¼ teaspoon salt
½ teaspoon pepper
1 tablespoon hot pepper sauce

Steps:

  • Bring a large pot of lightly salted water to a boil, add macaroni and cook for 8 minutes (noodles will still be slightly hard). Drain noodles and transfer to a large bowl with 1/4 cup of butter and toss to coat. Whisk together the sour cream, egg, and cream cheese; add to the pasta and mix well. Stir in 3 cups of grated Asiago and 3 cups of grated Cheddar cheese, reserving the remaining 2 cups of cheese for the topping.
  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate and chop into small pieces.
  • Preheat an oven to 400 degrees F (200 degrees C).
  • Stir 2 tablespoons butter, the onion, and garlic into the bacon drippings in the pan and cook and stir for 2 minutes. Reduce the heat to medium-low, and add the brown sugar. Cook, stirring occasionally, for 10 to 15 minutes until the onions are very soft and golden brown. Mix the cooked bacon, parsley, and panko breadcrumbs into the onions, transfer mixture to a small bowl and set aside.
  • Return the skillet to the heat and melt remaining 2 tablespoons butter over medium-low heat. Cook and stir until the mixture is smooth and thickened. Stir in the ground mustard, paprika, salt, pepper, and hot sauce. Remove sauce from heat and let cool for five minutes.
  • Pour the sauce over the macaroni mixture, stirring well. Transfer to a greased 9x13 inch pan and sprinkle with the remaining 2 cups of Cheddar cheese. Top cheese with the onion breadcrumb mixture.
  • Bake in preheated oven until bubbling, hot and golden brown on top, about 30 minutes.

1 cup half-and-half or light cream
0.125 teaspoon black pepper

Steps:

  • In a large skillet cook bacon over medium heat until crisp, turning once. Drain bacon on paper towels; crumble. Reserve bacon drippings in skillet.
  • Cook onion in reserved bacon drippings for 5 to 8 minutes or until onion is tender and golden brown. Set aside.
  • In a large saucepan cook macaroni according to package directions. Drain and return to saucepan. Stir in the crumbled bacon, onions, 1-1/2 cups of the mozzarella cheese, the gruyere cheese, half-and half, and pepper. Toss gently to combine. Spoon into a 1-1/2-quart casserole.
  • Bake, uncovered, in a 350 degree F ovenfor 20 minutes. Stir gently. Top with the remaining mozzarella cheese. Bake for 10 minutes more or until top of casserole is brown and bubbly. Let stand 10 minutes. Makes 4 servings.

2 c. Whole Or 2% Milk
1/2 c. Half-and-half
2 whole Egg Yolks, Beaten

1/2 c. Grated Fontina Cheese
1/2 c. Grated Parmigiano Reggiano Cheese
4 oz. weight Chevre (soft Goat Cheese)

Steps:

  • Preheat oven to 350 degrees.Cook macaroni for half the time of the package instructions. Drain and set aside.Fry bacon until slightly, but not overly, crispy. Drain on a paper towel. Reserve grease.Melt 4 tablespoons butter in a skillet and then saute onions over medium-low heat for 10 to 12 minutes, or until golden brown and soft. Set aside.In a pot, melt 4 tablespoons butter (and add 1 tablespoon of the reserved bacon grease for good measure!). Sprinkle in flour and whisk to combine. 8 slices bacon
4 cloves garlic, minced
2 large yellow onions, sliced thin
2 sprigs fresh thyme, leaves removed
Kosher salt and freshly ground black pepper
4 tablespoons salted butter plus 2 tablespoons, melted
1/4 cup all-purpose flour
3 cups whole milk
1/3 cup heavy cream
2 cups shredded white Cheddar
4 ounces white processed cheese, such as Velveeta, cubed
4 ounces crumbled goat cheese
1 cup seasoned panko breadcrumbs
2 tablespoons chopped fresh oregano
1 tablespoon chopped fresh rosemary

Steps:

  • Preheat the oven to 400 degrees F.
  • Cook the macaroni in boiling water until al dente according to the package instructions, then drain and set aside.
  • Fry the bacon in a dry skillet over medium heat, turning several times, until almost crisp, about 10 minutes. Remove and set aside. Pour away all but 2 tablespoons of the bacon grease. Return the skillet to the heat and add the garlic, onions and thyme. Season with a pinch of salt and pepper, then cook over medium-low heat until the onions are golden and caramelized, 12 to 15 minutes.
  • While the onions cook, make the cheese sauce for the macaroni. Melt 4 tablespoons of the butter in a large pot over medium heat. Sprinkle in the flour, whisking to combine. Add the Cheddar and processed cheese, stirring until completely melted. Taste and season with salt and pepper as needed. Stir in the cooked macaroni until completely coated.
  • Add half of the onion mixture to a 9-by-13-inch baking dish. Top with half of the macaroni mixture. Repeat with another layer of onions and the remaining macaroni mixture. Dot the top with the goat cheese.
  • Chop the bacon and toss with the panko breadcrumbs, oregano, rosemary, melted butter and a pinch of salt. Sprinkle over the top of the dish. Bake until bubbly and golden, about 20 minutes.
