- Heat oven to 350°F. Place pie crust in 9-inch glass pie plate as directed on box for One-Crust Filled Pie.
- In medium bowl, mix half-and-half, eggs, salt and pepper; set aside. Layer bacon, cheeses and onion in crust-lined plate. Pour egg mixture over top.
- Bake 40 to 50 minutes or until knife inserted in center comes out clean. Let stand 5 minutes; cut into wedges.

- Preheat the oven to 450 degrees F (230 degrees C). Press pie crust into the bottom and up the sides of an 11-inch tart pan.
- Bake in the preheated oven until golden, 10 to 12 minutes. Remove and let cool.
- Reduce the oven temperature to 325 degrees F (165 degrees C).
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Crumble.
- Heat bacon grease in the same skillet over medium-high heat. Add onion and saute until translucent, about 5 minutes. Add apple and cook until just tender, 3 to 5 minutes. Add garlic and saute until fragrant, about 1 minute. Remove from heat and stir in bacon.
- Whisk milk, sour cream, eggs, sea salt, and cinnamon together in a bowl.
- Layer apple mixture, Cheddar cheese, and egg mixture in the prepared crust. Sprinkle sage over top.
- Bake in the preheated oven until set, 30 to 40 minutes. Allow to cool before serving.

BACON-AND-APPLE QUICHE WITH FLAKY PIE CRUST

- Heat the oven to 425 and set the rack in the middle. Combine the flour and salt in a food processor and pulse once or twice. Add the butter and process until the mixture looks like cornmeal. Put the mixture in a bowl and add the ice water; mix with your hands until you can form the dough into a ball, adding another tablespoon of ice water if necessary. Wrap the ball in plastic and freeze for 10 minutes (or refrigerate for at least 30 minutes, or up to a couple days).
- Sprinkle a countertop with flour and put the dough on it, sprinkling more flour on top. Use a rolling pin to roll with light pressure from the center out. If the dough is hard, let it rest for a few minutes; if it's sticky, add a little flour. Roll, adding flour and rotating and turning the dough as needed; use ragged edges of dough to repair any tears, adding a drop of water when you press a patch in place.
- When the diameter of the dough is about 2 inches greater than that of a 9-inch tart pan, drape the dough over the rolling pin and transfer it into the pie plate. Press the dough firmly into the plate, all over. Once the dough is in place, trim as necessary; freeze for 10 minutes or refrigerate for 30 or so.
- Prick the pie crust with a fork all over, then bake it for 10 to 12 minutes, or until beginning to brown; remove and turn the oven down to 375. Meanwhile, fry the bacon in a large, deep skillet over medium heat, then remove from pan with a slotted spoon; cool and chop.
- Pour out all but one tablespoon of bacon fat and use the same pan to fry the apples. Add salt, pepper and rosemary. Turn the heat up to medium-high and cook, stirring frequently, until the apple is soft and lightly browned, at least 15 minutes. Adjust the heat so it doesn't brown too much or crisp up. Turn off the heat and spread apples onto the crust; then sprinkle with bacon and cheese.
- In a mixing bowl, whisk together the eggs and cream. Put the semicooked shell on a baking sheet and pour in the egg mixture. Bake for 30 to 40 minutes, or until almost firm (it should still jiggle just a little in the middle) and lightly browned on top; reduce the oven heat if the shell's edges are darkening too quickly. Cook on a rack; serve warm.

- Whisk the flour and salt together in a medium size bowl. With a pastry blender, cut in the cold shortening until the mixture resembles coarse crumbs. Drizzle 2 to 3 tablespoons ice water over flour. Toss mixture with a fork to moisten, adding more water a few drops at a time until the dough comes together.
- Gently gather dough particles together into a ball. Wrap in plastic wrap, and chill for at least 30 minutes before rolling.

- Heat the oven to 350 degrees F. Line a baking sheet with parchment paper.
- Lay out 6 horizontal strips of bacon on the prepared baking sheet. Fold every other strip of bacon in half onto itself and lay one strip of bacon in the middle, vertical to the folded strips. Unfold the strips back over the vertical strip of bacon. Repeat this process using alternating vertical strips to weave into a lattice. (The bacon lattice should have an equal number of horizontal and vertical strips.) Bake until nearly cooked but still very pliable, about 15 minutes. Slide the bacon lattice into a 9-inch pie pan and press into place.
- Top the bacon with a paper towel, then a layer of foil and either another pie pan or pie weights to weigh it down. Allow to cool for 10 minutes, then remove the weights and pat off any remaining excess oil with a paper towel.
- Meanwhile, thoroughly mix together the eggs, milk, spinach, potatoes, some salt and pepper and 1 cup of the Cheddar. Pour the egg mixture into the bacon crust and top with the remaining cup Cheddar.
- Bake until set and the cheese is browned, 30 to 45 minutes. Let rest 5 to 10 minutes, then serve warm or room temperature.

- What You'll Need. This is the Joy of Cooking pie crust recipe, altered with bacon fat instead of butter. :) However, the chilling times and prep are slightly different - we'll talk about those on the next step.
- Prep Work. The day before you'd like to make it, measure out your cup of bacon fat and roll it up into a log using wax or freezer paper. Get out the bowl you'd like to mix it in, as well as your pastry cutter.
- Part One. Mix together the flour and salt (if using) in the chilled bowl. Cut the bacon fat log into halves, and cut one of the halves into chunks.
- Part Two. Cut the other half of the bacon fat log into chunks, and add those into the bowl. Being combining it with the pastry cutter. Keep going until you are left with nothing larger than a pea sized chunk.
- Adding the Water. Add six tablespoons of ice water to the bacon fat/flour mix. Mix well until the dough starts to hold together. If your dough is still pretty crumbly, add a little more water - no more than 1/2 tablespoon at a time - until it holds together.
- Wrap and Chill. Divide the dough into two equal-ish halves and shape into disks. Place each piece on a piece of plastic wrap and wrap tightly. Once they're wrapped, pop them in the fridge.
- Roll OUT! Before you try to roll out the pie crust, make sure to let it sit on the countertop for 15-20 minutes to take the chill off. Otherwise it's liable to crack.
- Place It in the Pie Pan. I use the plastic wrap to help transfer it. :) After flipping it, and with the plastic wrap still on top of it, push it down into the pie pan.
- Baking! Bake at 425 F for 15-20 minutes or until golden brown. Both crusts I made I baked around 20 minutes, but one of mine got a little overdone because I wandered off.
- Filling! I'm using the filling for my family's chocolate cream pie here. It's the best pie out there, and I figured the chocolate would go well with the crust.
