1 lime
1 peach, peeled and sliced
3 tablespoons sugar
1/4 cup peach juice
3 ounces white rum
2 cups ice, crushedd
10 mint leaves
1/4 cup soda water

Steps:

  • Squeeze juice from the lime into blender.
  • Add peach slices, sugar, juice and rum; blend until smooth. Add crushed ice and pulse until combined. Pulse in mint leaves.
  • Pour into 2 chilled glasses. Add a splash of soda to each drink and garnish with peach slices and mint leaves.

I am not a great fan of the true mojitos but when you add some Bacardi Peach Rum I can drink them all night.

1 tablespoon simple syrup
6 large mint leaves
3 ounces Bacardi peach red rum
1 dash lime juice
1 dash sour mix

Steps:

  • Muddle mint leaves with simple syrup in cocktail shaker.
  • Add peach rum, lime juice and sour mix.
  • Add ice cubes and shake until blended.
  • Serve in martini glass and garnish with slice of fresh peach.
