BACARDI BARBECUE SAUCE

This is the sauce I use when I make southwestern style pizza. It's good on chicken and ribs too. Yumm yumm!

1 cup butter or 1 cup margarine
1 1/2 cups bacardi white rum or 1 1/2 cups bacardi golden rum
1 1/2 cups ketchup
1 cup orange juice
2/3 cup honey
1/2 cup fresh lemon juice
2 tablespoons minced garlic
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper

Steps:

  • Over medium-high heat, melt butter in saucepan. Stir in rum, ketchup, orange juice, honey, lemon juice, garlic and seasonings.
  • Lower heat and cook, stirring occasionally, about 40 minutes or until thickened.

1/2 cup bacardi o flavored rum
2 cups minute maid orange juice
1/4 cup soy sauce
2 oranges, zest of
2 tablespoons chopped of fresh mint
2 tablespoons chopped fresh cilantro
2 teaspoons minced garlic
1/2 teaspoon curry powder
1 roasting chicken, cut into pieces

Steps:

  • Combine BACARDI® O, Minute Maid orange juice, soy sauce, orange zest, mint, cilantro, garlic and curry in a shallow baking dish.
  • Add chicken pieces, turning to coat.
  • Grill chicken over medium-hot fire, basting with marinade during the first 10 minutes of cooking, until cooked thoroughly.

4 lbs spareribs
1 cup packed brown sugar
1/2 cup chili sauce
1/4 cup ketchup
1/2 cup dark rum
1/4 cup soy sauce
1 tablespoon Worcestershire sauce
1 teaspoon dry mustard
2 garlic cloves, crushed
1/8 teaspoon fresh ground black pepper

Steps:

  • Cut ribs into individual pieces. Line a roasting pan with a double thickness of foil. Place ribs in pan and seal tightly in foil.
  • Bake at 350°F (180°C) for 45 minutes. Unwrap ribs and pour off drippings.
  • Combine remaining ingredients; pour half the sauce over ribs. Return to oven and bake for about 11/2 hours or until meat is tender, turning ribs occasionally and basting with remaining sauce.

3/4 cup sweet onion, finely chopped
2 shallots, finely chopped
2 cloves garlic, minced
3 tablespoons butter
5 tablespoons brown sugar
3 tablespoons fresh lime juice
1 tablespoon dry mustard
2 tablespoons Worcestershire sauce
1 teaspoon ginger, minced
4 drops louisianna hot sauce (optional)
1 lime rind, of shredded
1 (8 ounce) can tomato sauce
1 teaspoon thyme leaves

Steps:

  • In a large pan saute the onions, shallots and garlic in butter until soft over low heat.
  • Next add brown sugar, lime juice, mustard, worcestershire sauce, ginger and hot sauce.
  • Blend well.
  • Add shredded lime rind and tomatoe sauce.
  • Bring mixture to a rapid boil then simmer over med-low heat for 15 minutes.
  • Add thyme leaves to sauce and simmer for 1 minutes.
  • Brush barbeque sauce on chicken or ribs and enjoy.
