CRACKED BLACK PEPPER BREAD

Yield 1 loaf bread

Number Of Ingredients 8

2 cups plus 2 tablespoons milk
3 tablespoons unsalted butter
2 tablespoons sugar
1 1/2 teaspoons butcher's grind cracked black pepper
One 1/4-ounce package active dry yeast
5 cups all-purpose flour
1 tablespoon fine salt
Vegetable oil, as needed

Steps:

  • In a small saucepan, combine the milk, butter, sugar, and pepper. Place over medium-high heat and bring to about 110 degrees F. Remove from the heat and sprinkle the yeast over the surface of the milk. Set aside until foamy, about 10 minutes.
  • Meanwhile, in a large bowl, whisk together the flour and salt.
  • Pour the milk and yeast mixture into the bowl of flour and mix until a soft, ragged mixture is formed. Transfer the mixture to a well-floured work surface and knead until a soft elastic dough is formed, about 10 minutes. Transfer the dough to a lightly oiled bowl, cover with a kitchen towel, and place in a warm spot, until puffed and doubled in size, about 2 hours.
  • Place a rack in the center of the oven and preheat to 400 degrees F. Transfer the dough to the work surface and, using your hands, gently flatten it into a 10-inch-long oval shape. Fold the dough into thirds lengthwise, overlapping the sides in the center. Press down on the overlapping sides to seal and make a seam. Place it seam side-down in a buttered 9 by 5-inch loaf pan, cover with a kitchen towel, and return to the warmest part of the kitchen until the dough has risen about 1 1/2 inches over the top of the pan, about 1 1/2 to 2 hours.
  • Brush the top of the dough lightly with warm water and, using a sharp knife, make 1/4-inch-deep slit down the center. Bake until golden brown, about 30 minutes.
  • Remove the loaf from the pan and place in the center of the rack. Continue baking until the loaf sounds hollow when rapt lightly with your knuckles on the bottom and top, and a thermometer inserted in the center reads 200 degrees F., about 15 minutes.
  • Transfer the bread loaf to a cooling rack and let cool for 2 hours before using.

This makes the most delicious sandwich bread I've ever eaten. It's delicious with any meal.

3 c all-purpose flour
1 1/2 tsp salt
2 Tbsp sugar
2 Tbsp powdered buttermilk or plain
1 1/2 tsp black pepper
2 Tbsp olive oil
2 tsp active dry yeast
TOPPING
coarse sea salt

Steps:

  • 1. In a small bowl mix together hot water, yeast and sugar. Let sit for a few minutes to let it start activating.
  • 2. In a medium bowl mix together, flour, powdered milk, salt and pepper.
  • 3. Pour olive oil in bread machine pan then liquid mix then flour mix. Set machine to "Dough Only" cycle. Check after a few minutes and scrape inside of pan to make sure all flour gets incorporated.
  • 4. I like to "warm" my pan/pans in my oven using the oven light while the bread dough does it's thing. I add a generous amount of cooking oil or olive oil to the bottom of the pan and coat it well then put it in the oven until needed, (no heat).
  • 5. You can use a 9x13 pan or two loaf pans. Once dough has finished the cycle and risen, place into pan(s). Place back in the oven with light on, cover and allow to rise to double in size. Remove pans, preheat oven to 400º. Spray tops of bread with spray oil and sprinkle on Coarse sea salt. Place bread in oven and bake 23 minutes. Remove and allow to cool.

This is really a quick bread, tender inside with a crunchy crust. You may adjust the amount of black pepper used, but I like it like this! "Bacaba" is the friendly liquor store in Sandwich, Illinois where I first heard of beer bread (from one of their customers), so immediately I had to research it(!). After research and some tweaking, this is the result!

4 cups flour
1/4 cup sugar
2 tablespoons baking powder
12 ounces beer (preferably not light; I used Red Stripe Jamaican lager)
2 teaspoons salt
1 teaspoon black pepper
2 eggs, slightly beaten
1 egg white
salt
garlic powder

Steps:

  • Preheat oven to 375 degrees F.
  • Mix flour, baking powder, salt and pepper with sugar.
  • Add beer and eggs; stirring then mixing with your hands as dough gets thicker; it will also be rather sticky.
  • Place in greased 9x5-inch loaf pan.
  • If you wish, brush on egg white and sprinkle top of bread very lightly with salt and a tiny bit of garlic powder.
  • Bake at 375 degrees F about 1 hour and 10 minutes.
  • Remove from pan immediately and cool.

  • In a large bowl, stir to combine all ingredients using a sturdy spatula or wooden spoon, until the pepper and cheese look evenly distributed, and no flour streaks remain. The dough will look very wet and sticky. Cover the bowl with plastic wrap and refrigerate overnight, for 10–12 hours.
  • Remove dough from the refrigerator, then scrape downward against the sides of the bowl with a spatula so the dough is balled at the bottom. Grab the dough with dry hands, and shape it into a boule using the palms of your hands for about 30 seconds. This process of shaping creates surface tension, which will help the bread bake up into a beautiful dome instead of spreading flat. Place the boule onto the parchment paper–lined baking sheet for 45 minutes, uncovered.
