MOZZARELLA STUFFED PORTOBELLOS



Mozzarella Stuffed Portobellos image

12 large portobello mushrooms, stemmed and gills removed
6 tablespoons balsamic vinegar
1/2 cup extra-virgin olive oil, divided
Sea salt, preferably gray salt and freshly ground black pepper
1 cup fresh bread crumbs
1 cup grated Parmesan
4 tablespoons freshly chopped parsley leaves
4 tablespoons freshly chopped basil leaves
12 (1/2-inch) slices fresh mozzarella, roughly 1 to 1 1/2-ounces per slice

Steps:

  • Preheat oven to 425 degrees F.
  • Toss the portabellas in the balsamic vinegar, 1/4 cup of olive oil, gray salt and pepper, to taste. Arrange the mushrooms on a baking sheet and roast in the oven for about 10 minutes. Remove from the oven and let cool to room temperature.
  • While the mushrooms are cooling mix together the bread crumbs, Parmesan, herbs and the remaining 1/4 cup olive oil.
  • Place 1 slice (2 if the mushrooms are large) of mozzarella in the cupped side of each mushroom. Distribute the bread and herb mixture evenly over the mushrooms and return to the oven to roast for 5 to 6 minutes or until the mozzarella is molten and the bread and herb topping a nice golden brown. Serve either hot or at room temperature and enjoy.

4 portobello mushroom caps
½ (8 ounce) bottle Italian salad dressing
1 (14 ounce) jar marinara sauce
1 (7 ounce) jar roasted red bell peppers, drained and sliced
8 slices mozzarella cheese
½ teaspoon dried oregano
½ teaspoon dried basil

Steps:

  • Place the mushrooms in a large resealable plastic bag with the salad dressing. Seal, and marinate for at least 15 minutes.
  • Preheat grill for medium-high heat. Heat the marinara sauce in a saucepan over medium heat, and keep warm.
  • Oil the grill grate. Place the mushrooms on the grill, and cook for 7 to 10 minutes on each side, until lightly toasted.
  • Preheat the oven broiler. Spread the bottom of a shallow baking dish or oven-proof plate with just enough marinara sauce to cover the bottom. Place mushrooms in the dish bottom side up, and top with the peppers and remaining marinara sauce. Place 2 slices of cheese on each mushroom, and sprinkle with oregano and basil.
  • Broil for 3 to 5 minutes, or until the cheese is melted. Serve hot.

3 tablespoons olive oil, plus extra for greasing grill pan
4 large portobello mushrooms (about 5 inches in diameter), stemmed
Salt and freshly ground black pepper
3 tablespoons extra-virgin olive oil, plus extra for drizzling
2 cloves garlic, minced
3 small to medium sized vine ripened tomatoes, cut into 1/2-inch pieces
8 ounces fresh water-packed mozzarella, drained, cut into 1/2-inch cubes
1/4 cup chopped fresh basil leaves

Steps:

  • Prepare the barbecue (medium-high heat).
  • Drizzle 3 tablespoons of olive oil over both sides of the mushrooms. Sprinkle the mushrooms with salt and pepper. Drizzle olive oil on grill pan to prevent mushrooms from sticking. Grill until the mushrooms are heated through and tender, about 5 minutes per side.
  • Meanwhile, whisk the extra-virgin olive oil and garlic in a medium bowl to blend. Add the tomatoes, cheese, and basil and toss to coat. Season the tomato salad, to taste, with salt and pepper.
  • Place 1 hot grilled mushroom gill side up on each of 4 plates. Sprinkle with more salt and pepper. Spoon the tomato salad atop the mushrooms, drizzle with extra-virgin olive oil to finish, about 1 tablespoon and serve.

This is a killer recipe for stuffed portobellas! Make certain that the croutons are processed to very fine and adjust the cayenne or hot sauce to taste.

8 large portabella mushrooms (stems removed)
olive oil
salt
2 lbs Italian sausages (casings removed)
3 green onions (very finely chopped) or 3 minced yellow onions
2 -4 teaspoons chopped fresh parsley
1 pinch dried basil or 2 teaspoons fresh basil, chopped
1 dash Tabasco sauce or 1 dash louisiana hot sauce
1 tablespoon minced fresh garlic, to taste or 1/2 teaspoon garlic powder
2 cups garlic-flavored croutons (ground fine, measure 2 cups after grinding)
1/2 cup milk
1/2 cup grated parmesan cheese
2 eggs, lightly beaten
black pepper
grated mozzarella cheese (use any amount desired)

Steps:

  • Lightly brush olive oil on both sides of the potobello mushroom caps then sprinkle the inside lightly with salt (this is optional but I most always do!).
  • In a skillet brown the sausage meat with green onions crumbling into very small pieces until browned; drain any fat then cool.
  • In a medium bowl beat eggs with milk, fresh parsley, basil, fresh garlic, cayenne pepper or hot sauce until well combined.
  • Add in the Parmesan cheese and the ground croutons starting with about 1-1/2 cups ground croutons, you might have to add in more later; mix with a wooden spoon until combined.
  • Add in the cooked sausage/onion mixture; mix well (the mixture should be wet but still firm enough to hold together if the mixture is too soft add in a small amount more of the croutons at a time just until the mixture binds together).
  • Season mixture with black pepper to taste.
  • Spoon the sausage mixture evenly between the portobella mushroom tops.
  • Place on a lightly greased baking sheet.
  • Bake in a 350 degree oven for about 15-20 minutes.
  • Sprinkle the tops with grated mozzeralla cheese.
  • Delicious!

These portobello mushrooms are a wonderful appetizer that looks fancy but is easy to make. There are a few steps, but this adorable appetizer comes together quickly. The cream cheese filling has a nice flavor. Fresh basil adds a pop of freshness. We added mozzarella on top and loved the mini pepperoni on them. The topping options are endless. You won't be able to eat just one.

16 ounce(s) baby portobello mushrooms (16 oz)
1 package(s) cream cheese (8 oz)
1/4 cup(s) grated Parmesan cheese
1 package(s) pepperoni, regular or mini (8 oz)
7 teaspoon(s) butter
3 large basil leafs
4 tablespoon(s) toppings chopped, shredded cheese, cherry tomatoes, black olives, onions (opt.)
1/2 cup(s) crumble blue cheese (opt.)
1 tablespoon(s) minced garlic

Steps:

  • Portobello Mushrooms - Wash, cut out stems, and set aside to dry.
  • Add room temperature cream cheese, 5 teaspoons butter, Parmesan cheese, and blue cheese (opt) to a pot on low heat. Cook just until all melts together and mix well. Just a few minutes. Set aside and let it cool to room temp... will be lumpy.
  • Pepperoni - Chop if they are the regular kind (I buy the minis). Cook in a skillet just until crisp on the edges, drain, and damp oil off. (I cook them so the oil doesn't saturate the cream filling while baking).
  • Add 2 teaspoons of garlic and butter to the skillet and sauté for just a few minutes.
  • Turn off the heat add mushroom caps. Coat the caps with butter and garlic sauce.
  • Turn oven 350. Place caps on a baking sheet. Fill caps with cream mixture.
  • Top with pepperoni and sliced fresh basil... and other pizza toppings like chopped onions, black olives, shredded cheeses, cherry tomatoes (optional).
  • Place in oven for 10-15 mins.
  • Picture of a kid-friendly stuffed mushroom version. (If you don't like cream cheese filling you can stuff them with mozzarella cheese and pizza topping - it's your choice you are the star chef.)

2 tablespoons butter
2 cloves garlic, (crushed)
1 tablespoon freshly chopped parsley
5-6 large Portobello Mushrooms, (tem removed, washed and dried thoroughly with a paper towel)
5-6 fresh mozzarella cheese balls, (sliced thinly)
1 cup grape, ((or cherry) tomatoes, sliced thinly)
fresh basil, (shredded to garnish)
1/4 cup balsamic vinegar
2 teaspoons brown sugar ((OPTIONAL))

Steps:

  • Preheat oven to grill/broil settings on high heat. Arrange oven shelf to the middle of your oven.
  • Combine all of the Garlic Butter ingredients together in a small saucepan (or microwave safe bowl), and melt until garlic is fragrant. Brush the bottoms of each mushroom and place them, buttered side down, on a baking tray.
  • Flip and brush any remaining garlic over the insides of each cap. Fill each mushroom with the mozzarella slices and tomatoes, and grill/broil until cheese has melted and golden in colour (about 8 minutes).
  • To serve, top with the basil, drizzle with the balsamic glaze and sprinkle with salt to taste.
  • (If making from scratch, prepare while mushrooms are in the oven.) Combine sugar (if using) and vinegar in a small saucepan over high heat and bring to the boil. Reduce heat to low; allow to simmer for 5-8 minutes or until mixture has thickened and reduced to a glaze. (If not using sugar, allow to reduce for 12-15 minutes on low heat).

Olive oil
3 clove of garlic, minced
Sea salt, as desired

Steps:

  • Preheat oven at 400°F. Pop off the stems from the baby portobello mushrooms. I wouldn't use a knife here because if you just cut it off, you won't have a lot of space for the garlic-y goodness. Toss mushrooms in olive oil. Sprinkle garlic inside the mushroom caps as if they were cups. When cooked, the mushroom caps will be filled with mushroom juice and cooked garlic! Place on baking sheet and pop in oven for 10-15 minutes or until mushrooms are tender. The timing really depends on the oven. I've made this in several different ovens before, and it's almost different every time. So start checking tenderness at 10 mins. Serve!

2 cups balsamic vinegar
6 baby portabella mushrooms, cleaned and stem removed
1 tablespoon extra virgin olive oil
1 teaspoon kosher salt
1 teaspoon cracked black pepper
6 -8 ounces fresh mozzarella cheese, cut into 6 1/2-inch slices
1 roma tomato, cut into 6 slices
6 fresh basil leaves
1/4 cup pine nuts

Steps:

  • Put vinegar into a small saucepan, bring to a boil over high heat, and cook until reduced to 1/2 the original volume. Set aside to cool to room temperature.
  • Preheat a grill pan over medium high heat. Brush mushroom caps with olive oil, sprinkle with salt and pepper, and grill 2-3 minutes per side or until tender.
  • Remove mushrooms from grill. Top with a slice of mozzarella, then place a slice of tomato over the cheese. Place a leaf of basil on top of tomato and sprinkle with pine nuts. Drizzle with reduced balsamic vinegar glaze.
