Here's what you need: english cucumber, roma tomatoes, ripe avocados, red onion, fresh cilantro, lemon, salt, pepper, extra virgin olive oil

Number Of Ingredients 9

1 english cucumber, diced
4 roma tomatoes, diced
3 ripe avocados, diced
½ red onion, diced
¼ cup fresh cilantro, chopped
1 lemon, juiced
salt, to taste
pepper, to taste
2 tablespoons extra virgin olive oil

Steps:

  • Slice then dice cucumber.
  • Slice then dice tomatoes.
  • Slice avocado and carefully remove stone. Scoop out inside and dice.
  • Peel onion and remove tops. Then slice.
  • Chop cilantro and place in a large salad bowl with previous ingredients.
  • Toss with olive oil, lemon juice, salt and pepper. Serve in a bowl.
  • Enjoy!

2 cups cut-up heirloom tomatoes
1 cup multicolored cherry tomatoes, halved
2 cups fresh baby spinach
1/2 cup sliced red onion
DRESSING:
3 tablespoons olive oil
2 tablespoons white balsamic vinegar
1 garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1/4 teaspoon dried rosemary, crushed
1/4 teaspoon dried thyme
1/4 teaspoon pepper
1/8 teaspoon rubbed sage

Steps:

  • Place tomatoes, spinach and onion in a large bowl. Whisk together dressing ingredients; toss with salad. Refrigerate, covered, 2 hours. Serve with a slotted spoon.

Number Of Ingredients 6

1/4 pound country bread, cut into roughly 1-inch cubes
5 tablespoons basil infused olive oil
Kosher salt and freshly ground black pepper
1/3 cup aged balsamic vinegar
2 pounds assorted mixed baby heirloom tomatoes
1 cucumber, peeled and seeded, if necessary

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large bowl, toss the bread cubes with 2 tablespoons of the basil olive oil and season with salt and pepper, to taste. Arrange on a baking sheet and bake for 5 minutes, then toss the bread cubes and bake until golden, another 3 to 5 minutes. In a small saucepan, over low heat add the balsamic and simmer until reduced by half.
  • Cut the smaller tomatoes in half, quarter the medium tomatoes and slice the larger tomatoes. Cut the cucumber, lengthwise in half, and slice it into half moons or dice it into cubes.
  • In a large serving bowl, mix the tomatoes, cucumbers and remaining oil and season with salt and pepper, to taste. Add the bread cubes and toss. Drizzle with the reduced balsamic and serve.

  • For the tomatoes, I cut each into about 16 pieces by slicing in half horizontally and cutting each half into 8 wedges. For the cucumbers, I cut them into triangles (they look like little ramps). This is just what I did to give some nice visual appeal, but do whatever works for you.
  • Combine the tomatoes, cucumbers, red onion, olive oil, and balsamic vinegar in a large bowl. Season to taste with salt and black pepper. (I prefer a healthy dose of black pepper.) Serve.
