⅓ cup white vinegar
⅓ cup white sugar
1 teaspoon poppy seeds
4 cups baby spinach
4 cups mixed salad greens
1 (10 ounce) can mandarin oranges, drained
⅓ cup thinly sliced red onion
½ cup slivered almonds

Steps:

  • Make the poppy seed dressing by whisking together the creamy salad dressing, vinegar, sugar, and poppy seeds; set aside. Arrange the spinach leaves, mixed salad greens, oranges, onion, and almonds onto individual salad plates. Drizzle with poppy seed dressing to serve.

Strawberry Spinach Salad with Poppy Seed Dressing image

Simple spinach salad with fresh strawberries, canned mandarin oranges, sliced almonds and goat cheese, all with a homemade poppy seed dressing.

4 cups baby spinach
5 oz mandarin orange segments (canned, drained, about 1/2 small can)
6 medium strawberries (halved)
1/4 cup sliced almonds
1/4 cup red onion (thinly sliced (optional))
1/3 cup Goat cheese (crumbled)
5 Tbsp white vinegar
1 Tbsp cider vinegar
2 1/2 Tbsp white granulated sugar (or 1 Tbsp honey)
3/4 tsp salt
1/8 tsp dried mustard powder
1/4 cup onion (finely diced)
1 cup vegetable oil (or other neutral tasting oil)
1 Tbsp poppy seeds

Steps:

  • To make the Poppy Seed Dressing: In a food processor or blender, add the white and cider vinegars, sugar, salt, mustard powder and onion. Process or blend for 30-45 seconds, or until pureed. With the food processor or blender running on high speed, very slowly start adding the oil, in a very slow, steady stream, until all the oil is added. Add the poppy seeds and blend briefly to combine. Use dressing immediately or put in a jar with a lid and refrigerate until needed. *Note: Dressing will separate as it sits in the fridge. Just shake it in the jar to mix it back up again before using.
  • For the salad: Add the baby spinach to a bowl. Add the strawberries, mandarin oranges, sliced almonds and red onion, if using. Toss to combine. Top with crumbled goat cheese, then drizzle with poppy seed dressing, to taste.

4 button mushrooms, sliced
1/4-1/3 cup pine nuts, toasted
3 slices bacon, cooked and crumbled
1/3 cup monterey jack cheese or 1/3 cup blue cheese
1 small Red Delicious apple, diced
1/4 cup light olive oil
1/2 cup salad oil
2 1/2 tablespoons dijon-style mustard
3 tablespoons maple syrup
2 tablespoons vinegar
1/4 cup half-and-half
1 dash salt
1 garlic clove

Steps:

  • Place ingredients in bowl starting with the first thought to the last.
  • Blend together all dressing ingredients. Add a teaspoon more of vinegar or mustard if you like a sharper taste. The dressing gets better overnight and keeps for 4 to 5 days. Top salad with Maple Dijon dressing.

Young tender baby greens, topped with slices of mellow ripe pears with a sprinkling of Gorgonzola and toasted pecans. The flavors are enhanced by the Honey Mustard Dressing. This salad goes well with pork or chicken.

2 -3 ounces mixed baby greens
1/2 ripe pear, cored, sliced thin
1/4 cup pecans, toasted, coarse chopped
4 tablespoons gorgonzola, crumbled
1 tablespoon balsamic vinegar
1 tablespoon rice vinegar
2 tablespoons honey
2 teaspoons Dijon mustard
1 tablespoon walnut oil
salt
pepper

Steps:

  • Place all the dressing ingredients in a small container with a tight fitting lid and shake vigorously to blend.
  • Add salt and pepper to taste.
  • If not serving immediately, place the dressing in refrigerator. Before serving, allow the dressing to sit at room temperature for 30 minutes.
  • Layer chilled salad plates with the baby greens and top with thinly sliced pears.
  • Sprinkle with toasted pecans and cheese, drizzle with dressing as desired.
  • Enjoy!
