Here's what you need: potato, green beans, chicken, water

Yield 12 servings

Number Of Ingredients 4

8 oz potato, washed, peeled and cooked
8 oz green beans, washed and steamed
5 oz chicken, cooked without seasoning
water, can use breast milk or formula

Steps:

  • Cook chicken without any seasoning. Boil or steam potatoes. Steam green beans. Allow all to cool.
  • Add potatoes, green beans, chicken, and water, breast milk, or formula to a blender or food processor. Blend very well.
  • Add more liquid as needed.
  • Refrigerate up to 4 days or freeze up to 1 month.
  • NOTE: Check with your pediatrician before introducing new foods to children under 12 months.
  • Enjoy!

You just cant go wrong with this tasty chicken dish. I would be proud to serve it to company, and yet it is so easy that it is great for any day of the week. Crispy and flavorful on the outside, moist and juicy on the inside...and a real kid-pleaser. Why not add some red potatoes in the same dish alongside the chicken (poke holes in them or half if large) and bake for an easy side? Lovely served with a green salad for a complete meal with minimal effort. Recipe easily tripled for OAMC. Enjoy! From the book: Don't Panic: Dinner's in the Freezer

1 cup breadcrumbs (or use crushed up crackers)
1/2 cup cheddar cheese, shredded
1/2 cup parmesan cheese, grated plus
1/4 cup parmesan cheese, for topping
1 teaspoon salt
1/4 teaspoon pepper
4 -6 boneless chicken breast halves
1/2 cup butter, melted plus
2 tablespoons butter, melted for topping

Steps:

  • Mix together bread crumbs, cheeses, salt and pepper. Dip chicken pieces in melted butter and then in cheese/bread crumb mixture. Roll the breast up or tuck in the sides to form a little bundle.
  • (To freeze: wrap each raw chicken bundle in plastic wrap and then place in freezer bags. Thaw and follow baking directions below.).
  • To Bake: Place in large baking dish. Pour remaining butter on top and sprinkle with remaining Parmesan. Bake, uncovered, at 350 for 1 hour, until chicken is crispy.

2 teaspoons butter
1 teaspoon flour
1/4 cup milk
1/4 cup chicken, cooked
1/4 cup potato, cooked and cubed
1 tablespoon grated cheese

Steps:

  • Melt butter in small heavy pan over low heat. Stir in flour and blend well. Add milk and stir until smooth.
  • Cook over low heat until mixture begins to thicken then add chicken and potatoes and stir for about 2 to 3 minutes more or until heated through.
  • Add cheese and stir until melted.

I used to make my own baby food when the kids were younger. This was one of their favourites. Gradually, I added garlic powder, onion powder (as they got older), parsley, herbs, ginger, cayenne, cumin. Soon, they were able to eat all the spicy foods that I cooked. This is a good basic recipe even if you're not trying to introduce new flavours, vegetables , etc. Prep time includes the time to bake the chicken. For younger babies, this may be good for 2-3 serivings. For older ones, it would probably be sufficient for one serving. I have recorded it as one serving in this case.

2 teaspoons butter or 2 teaspoons margarine
1 teaspoon unbleached flour
1/4 cup milk
1/4 cup chicken, cooked,boned and shredded
1/4 large potato, boiled or baked and cubed
1 tablespoon grated white cheddar cheese or 1 tablespoon mild cheddar cheese (optional)
vegetables, of your choice (optional)
salt (optional)

Steps:

  • Grill or bake chicken, remove bones and shred.
  • Bake or boil potato and chop into small cubes or mash.
  • Melt butter in a saucepan.
  • Add milk,flour, and cheese and make a sauce.
  • Add chicken and potato to it.
  • Add remaining ingredients.
