CRISPY CHICKEN FINGERS WITH ONTARIO APPLE "FRIES"
Have fun with your food with fresh roasted apple fries and cornflake crusted chicken fingers. Kids will love preparing the 'fries' and coating the chicken. Serve in rolled newspaper for an authentic 'chippy' feel.

Steps:
- In large saucepan over medium-high heat, boil cider until reduced to 1/3 cup (75 mL), about 20 minutes (will have a syrupy consistency). Remove from heat; whisk in butter and salt.
- Preheat oven to 400 F (200 C). In bowl, toss apples with 2 tbsp (30 mL) of the glaze and 1/2 tbsp (7 mL) of thyme. Arrange in a single layer on a rimmed baking sheet. Set aside.
- In bowl combine corn flake crumbs, salt and parsley. Set aside. Dip chicken strips in sweet chili sauce and then coat with corn flakes. Arrange in a single layer on a greased baking sheet.
- Place chicken on the top third and the apples on the bottom third of the oven. Roast for 10 minutes. Turn chicken, drizzle apples with remaining glaze and switch baking sheets so the apples are now on the top third of oven. Continue to roast for 10 minutes and remove chicken from oven. Let chicken fingers cool while apples finish caramelizing, about 5 to 10 minutes more.
- Sprinkle apples with remaining thyme and additional salt if desired.
ANNABEL KARMEL'S CHICKEN AND APPLE BALLS
This is a great finger food recipe for the little ones. I have had a problem getting my little guy to eat protein and this is the first recipe that he has willingly fed himself. Although the recipe calls for two chicken breasts, I took a shortcut and used ground turkey - it was still delicious! I also omitted the stock cube (too much salt!) and used italian bread crumbs instead. This recipe is much, much easier with a food processor to get finely chopped ingredients that will incorporate nicely into these meatballs. Also, although this recipe says it makes 20 balls, I made mine much smaller and got closer to 4 dozen. (But then again, I used an entire package of turkey, not just two chicken breasts.)

Steps:
- Heat the oil in the pan and saute half the onion and carrot for three minutes, stirring occasionally.
- Squeeze out excess moisture from apple.
- Mix the grated apple with the chicken,cooked and uncooked onion and carrot, plus parsley, thyme, breadcrumbs, and crumbled stock.
- Chop for a few seconds in a food processor.
- Season with salt and pepper.
- With your hands, form the mixture into about 20 balls, and roll in flour.
- Fry in shallow oil until lightly golden and cooked through (about 4 to 5 minutes).

BABY FINGER FOOD - CHOPPED CHICKEN FINGERS W/ APPLES
This one is awesome! My son loves them and they're easily made ahead and frozen (which I love). I found the recipe on homemade-baby-food-recipes.com and I'm posting here for safe keeping. It is recommended for babies that are 8 months and older, but they also advise speaking to your pediatrician before starting your baby on solids. Also, remember to follow the RULE OF FOUR (wait 4 days after introducing new foods) and make sure your baby has had no allergic reactions to any of the foods in this recipe before serving it!

Steps:
- Peel and grate the carrot, apple, garlic and onion.
- Place into a mixing bowl, along with the ground chicken.
- Add the beaten egg yolk, breadcrumbs, thyme and black pepper. Mix well.
- Take small balls of the mixture and roll into 8 little "sausages".
- Place on a grill pan (broiler) and heat under the grill for 10 mins on each side.
- Allow to cool.
- Serve, or store some in the freezer for future use (if you haven't already eaten them!).
- Younger babies may need them broken into smaller pieces or even mashed a bit before serving.
