BAKED SWEET POTATO "FRIES"
Steps:
- Preheat the oven to 450 degrees.
- Halve the sweet potatoes lengthwise and cut each half into 3 long spears. Place them on a sheet pan and toss with the olive oil. Spread the potatoes in one layer. Combine the brown sugar, salt, and pepper and sprinkle on the potatoes. Bake for 15 minutes and then turn with a spatula. Bake for another 5 to 10 minutes, until lightly browned. Sprinkle lightly with salt and serve hot.
INA GARTEN'S BAKED SWEET POTATO FRIES
These potatoes are not quite as crispy like fries but they're better for you because they're baked. The serving size says 4, but I eat all of them at one sitting! Adapted from Ina Garten's book,"Back to Basics"(Barefoot Contessa). Ina likes to cut them into fairly large wedges, but I like them smaller(like french fries) because I love the crispiness and get more of it with smaller wedges! Sweet potatoes are available year-round, but their prime season is really autumn and winter. Choose potatoes that are smooth and unblemished, and use them fairly soon because they don't keep as well as other potatoes.

Steps:
- Preheat oven to 425*F.
- Cut sweet potatoes in wedges or like french fries.
- Place wedges on large baking pan or cookie sheet. Pour over olive oil, and toss to mix.
- Now sprinkle over brown sugar, salt, and black pepper. Toss to coat wedges.
- Spread out in a single layer. Place pan in oven and bake for 15 minutes, then take out and turn wedges over.
- Place back in oven and bake another 15-20 minutes, or until golden brown and crispy on the outside.
- Sprinke with extra kosher salt to taste. The cooking time will depend on how big the wedges are. Enjoy!
- Note: These are also good with a little ground cumin sprinkled with the other seasonings. Have fun and experiment!

SWEET POTATO FRIES WITH AUNT TC'S SECRET SAUCES
What's my secret for super-crispy sweet potato fries? I actually have two. First, I soak the potatoes in cold water to remove the excess starch. Then, I give them a toss in a cornstarch and seltzer water mixture. The cherry on top? I dust these with a spicy-sweet spice blend and serve them with two different awesome sauces. Bet you can't eat just one!

- For the sweet potato fries: Soak the potatoes in cold water 30 minutes. Dry on paper towels.
- Stir together the brown sugar, garlic, paprika, salt and pepper in a small bowl.
- For the creamy barbecue sauce: Stir together the barbecue sauce, mayonnaise and House Seasoning in a bowl.
- For the spicy sauce: Stir together the ketchup, mayonnaise, House Seasoning and hot sauce in a separate bowl.
- For the sweet potato fries: Pour the oil to a depth of 3 inches in a Dutch oven. Heat the oil to 325 degrees F. Line wire racks with paper towels.
- Stir together the cornstarch and seltzer water in a medium bowl. Dip the sweet potatoes in the cornstarch mixture in batches until coated. (The coating will be thin. Stir the cornstarch mixture after each batch.) Fry the sweet potatoes, in batches, until they float to the top, 1 to 2 minutes. (The sweet potatoes won't brown yet.) Remove to lined wire racks to drain.
- Increase the oil temperature to 350 degrees F.
- Fry the potatoes a second time, in batches, until browned and crispy, 4 to 5 minutes. Remove to the lined racks to drain. Sprinkle immediately with the brown sugar seasoning. Serve right away with the sauces.
- Stir together the garlic and onion powder, paprika, salt and pepper in a small bowl. Store in an airtight container at room temperature.
BABY FINGER FOOD - BROWN SUGAR SWEET POTATO FRIES
I found this one on wholesomebabyfood.com and posted it here for safe keeping. These fries bake up soft and delicious with the addition of cinnamon and brown sugar. The little ones can't keep their hands off of them! They are recommended for babies that are 6 months and older, but they also advise speaking to your pediatrician before starting your baby on solids. Also, remember to follow the RULE OF FOUR (wait 4 days after introducing new foods) and make sure your baby has had no allergic reactions to any of the foods in this recipe before serving it!

- Preheat oven to 400 degrees (F).
- Scrub sweet potatoes, clean and/or peel them if baby cannot handle the skins.
- Cut the sweet potatoes into into strips that you may then cut down after baking.
- In a large bowl, add about 1/4 cup of olive oil.
- Stir in the cinnamon.
- Toss the cut up sweet potatoes into the bowl and stir so that the potatoes are drenched with the olive oil mix.
- Dump mixture onto a baking sheet and drizzle the remaining olive oil in the bowl over the potatoes on the baking sheet and swirl and stir them so they're all covered and the olive oil is spread out on the tray.
- Sprinkle brown sugar over the sweet potatoes.
- Bake for approx 30-45minutes or until tender.
- The skins may become crispy but the actual potato "meat" will not. They will be a bit mushy like. These will not look or bake up like regular white potato French Fries so don't be alarmed.
