APPLE TURKEY FINGERS (FOR OLDER INFANTS & TODDLERS)



Apple Turkey Fingers (For Older Infants & Toddlers) image

Inspired by the classic (and kid-friendly) combo of apples & turkey, I concocted these tonight for my 9 month old and liked them so much I might end up eating them myself! Perfect for older babies and toddlers (serve with a fun dipping sauce), these make cute little "fingers" in perfect take-one-out-of-the-freezer-at-a-time portions. I used half an egg (if your child is over 12 mos. you can use more - I limited the egg white for infants) and unprocessed bran (for a nutritional boost) for binding. Enjoy, babies and grown-ups alike!

Number Of Ingredients 9

1 lb ground turkey
2 medium carrots
1 large apple
1 garlic clove
1/2 small onion
1/2 egg, beaten
1/4 cup unprocessed natural bran
1/2 teaspoon dried thyme, crushed
salt & pepper (optional)

Steps:

  • Preheat broiler.
  • Place ground turkey in a large mixing bowl.
  • In a food processor or by hand, grate the carrot, apple, garlic & onion, or else mince very finely (I grated the carrots using a microplane, but minced the apple, onion and garlic for texture). Add to bowl with turkey.
  • Add the 1/2 beaten egg (or whole egg for older kids), bran, thyme and any seasonings you wish. Mix all ingredients together.
  • Scoop mixture up about 1/4 cup at a time (size of a large meatball) and roll into little sausage shapes, placing on a broiling pan or cookie sheet as you go (you may need to do two pans worth). Wet your hands periodically if it's sticky.
  • Place in broiler and broil for 10-15 minutes on one side, then turn over and broil 5-10 minutes more.
  • Remove and let cool. Store together in a freezer bag or individually wrapped in foil.
  • Enjoy!

I walked in my kitchen while this was baking and I thought I would melt and run down in my shoes. It smelled SOOO good in there...the apples..the cinnamon...HEAVEN! I cannot take credit for this, however. I got it from an e-zine I get in the email. I immediately got in my car and bought the ingredients, came home, and whipped this up. Since I'm diabetic, I'll be sending it off to Pop's for the shop monkey's (the shop mechanics/my taste-testers) approval. If they like it, it's a keeper!

1 cup flour
1/2 cup packed brown sugar
2 teaspoons cinnamon
1/2 cup butter, melted
1 medium granny smith apple, peeled and diced very small
2 cups self-rising flour
2 large eggs
1/2 cup milk
3/4 cup sugar
1/2 cup butter, melted

Steps:

  • Preheat oven to 350°. Spray the largest loaf pan you have. (original recipe calls for a 9 x 5, but I used a 12" and it was almost too small!).
  • Stir together the strudel topping; set aside.
  • Beat the eggs lightly with a fork to blend. Stir in butter and milk. Add flour and sugar, stir with a spatula until moist (batter will be lumpy).
  • Layer 1/2 the batter, apples and strudel: repeat layers. Bake until a toothpick comes out clean, about an hour. Cool ten minutes in the pan; remove and let cool completely. Serve with ice cream.

Number Of Ingredients 8

1 lb ground turkey
1 whole eggs or 2 egg yolks, beaten
1/2 cup pureed carrot
1/4 cup applesauce
1/4 cup unprocessed natural wheat or 1/4 cup oat bran
1/4 cup breadcrumbs
1 pinch basil
1 pinch garlic powder

Steps:

  • Place ground turkey in a large mixing bowl.
  • Add the egg/yolk, carrots, applesauce, spices, bread crumbs and bran.
  • Mix well - If this mixture appears too dry, add more carrots or applesauce. If this mixture appears too wet, add more bran and/or bread crumbs.
  • Place mix into a lightly oiled (olive oil) loaf pan and bake at 350F for approximately 45 minutes or until an inserted knife comes out clean. **You may wish to cover with foil to prevent the top from burning
  • When finished baking and cooled, remove loaf from pan and slice as you would for bread. Break into small bits for finger feeding or mash or chop gently.
  • This recipe may also be made into "Turkey Sticks" for Toddlers and older babies who are able to handle more textured/chunky finger foods.

This one is really easy and kids will love it. You can also sub baby cereal (mixed with half water/half formula) for the mashed potatoes. Serve with a little tomato sauce and soft, cooked pasta. It is recommended for babies that are 8 months and older, but they also advise speaking to your pediatrician before starting your baby on solids. Also, remember to follow the RULE OF FOUR (wait 4 days after introducing new foods) and make sure your baby has had no allergic reactions to any of the foods in this recipe before serving it!

Steps:

  • Pre-heat the oven to 350 deg F, 180 deg Celsius.
  • Combine the ingredients and blend well.
  • Roll into 1 inch balls.

  • Drain the fat, then cool and serve.
  • Make sure you cut or mash the meatballs into an appropriate serving size for your baby before serving.
