Steps:
- Mash the butter in a bowl with the tarragon, parsley and mustard, as well as some seasoning. Cover and chill until needed. Can be made up to three days ahead.
- Trim the long green tops off the carrots and wash under cold running water, scrubbing them with a clean scourer to get rid of any dirt. Halve the carrots lengthways so they're all the same size, and put in a large, microwave-proof bowl with 3 tbsp water. Cover the carrots with a microwaveable plate or lid and heat on full power for 8-10 mins until just tender. Drain, then toss with the herby butter and serve straightaway.

ZUCCHINI AND CARROTS WITH GARLIC AND HERBS
I 'adopted' this recipe in August 2005. I have made it and think it is a great recipe as written. I hope you like it as much as I did. I also found it went well with a little lite sour cream spooned on top of each serving for a change. The following words come from the original person who posted this recipe: "A nice summer-time side dish. I suggest cutting the zucchini a bit larger than the carrots, since it cooks faster. Substitute dried herbs if you don't have fresh."

Roasting brings out the natural flavor and sweetness in these carrots. We used parsley here, but you could use other fresh herbs like tarragon, dill, mint, thyme, rosemary, or a combination.

- Grate apple and carrot for a sweet children's salad. Mix with a little salad oil and lemon juice for a complete salad.
- Make a carrot and cabbage salad. You could make a coleslaw but even making a salad with just these two ingredients will be great; they complement each other perfectly, the sweetness of carrot toning down the stronger bite of cabbage.
- Mix carrot and celery together for well balanced salad flavors. Add a favorite dressing to complete the salad.

- Set up pots. For this step, you'll need a large pot and a metal colander or steaming basket to hold the carrots. Add the metal colander / vegetable steaming basket to the inside of the pot. Add enough water to fill the bottom of the pot, just to the bottom of the colander / steaming basket.
- Steam carrots. Turn on the burner for the large pot (with water and colander inside) to medium-high heat. Add carrots and cover the pot / colander with a lid. Steam carrots for ~5 minutes, until they can be easily pierced with a fork. Once done, turn off the heat and remove colander with steamed carrots.
- Sauté carrots in a butter glaze. Add a medium-sized pot or large frying pan to a burner set to medium-high heat. Add olive oil, butter, garlic, and steamed carrots. Stir regularly for about 2 minutes so garlic does not burn. Turn off the heat of the burner once the butter has melted and the garlic is transparent and roasted (before it turns brown).
- Season carrots. To the pot, and add fresh dill, salt, and pepper. Toss to coat the carrots in the seasonings and herbs.
