HONEY-GLAZED BABY CARROTS
Not even kids can resist vegetables like carrots when they are smothered in butter and honey!

Steps:
- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add carrots, cover, and steam until tender, about 15 minutes.
- While carrots are steaming, melt butter in a saucepan over low heat. Combine with honey and cornstarch.
- Pour glaze over cooked carrots and toss to coat. Serve immediately.

- Cook carrots in a small amount of water until tender. Drain. In a saucepan, combine butter and brown sugar; heat until sugar dissolves. Add carrots and toss to coat. Heat through.

GLAZED BABY CARROTS

- Bring a pot of well-salted water to a boil. Set up a bowl of well-salted ice water. Blanch the carrots in the boiling water. When they are cooked but still have some crunch, plunge them immediately into the ice water. When cool, use a clean tea towel to rub the skin off the carrots. Reserve.
- To a large skillet add the butter, sugar, lemon juice, garlic, thyme, cayenne and about 1/2 cup of water. Bring the pan to medium heat swirling occasionally. When most of the water has reduced and the mixture seems homogenous, removed the garlic and add the carrots and stir until they are coated. Cook for another 2 to 3 minutes or until the carrots are completely coated and hot.
- So good for my eyes!
BABY CARROTS WITH APRICOT GLAZE
Steps:
- Remove the leaves from the parsley and place in the Cuisinart® Food Processor fitted with the metal "s" blade. Pulse to chop. Remove and reserve. Add the lemon zest and ½ teaspoon of the salt to the work bowl. Pulse to chop, then process continuously until zest is chopped. Add the apricot preserves, lemon juice, and unsalted butter. Process until smooth, about 30 to 40 seconds. Remove and reserve. Place the prepared carrots with the remaining salt in a 12-inch skillet and add water to cover. Bring to a boil and cook over medium high heat until crisp-tender about 6 to 8 minutes, water will evaporate as carrots cook. Add apricots and reserved apricot preserve mixture. Cook, stirring, until apricot mixture has thickened and carrots are glazed. Sprinkle with reserved fresh parsley. Serve immediately.
APRICOT GLAZED CARROTS
Apricot Glazed Carrots are a perfect vegetarian side dish to almost any meal. They're tender, sweet and make for a beautiful presentation.

- Prepare the carrots. Peel and cut the carrots into approximately ½ inch slices, diagonally.
- Combine the ingredients. Add the carrots to a large sauté pan and pour the stock over them. Evenly distribute the butter, jam, and the salt on top.
- Cook. Place the pan over high heat and bring to a boil. Reduce the heat to low and let the carrots simmer until they're tender and the liquid has reduced almost completely, about 35 minutes. During the cooking process, move the carrots a few times to be sure they're well coated with the liquid.
- Garnish. If desired, garnish with finely chopped chives or scallions.

- 2. Melt butter and stir in preserves until blended. Add nutmeg, salt, orange peel and lemon juice.

- Preheat oven to 325 degrees F (165 degrees C).
- Bring carrots and water to a boil in a saucepan over high heat. Reduce heat to medium, cover, and steam until the carrots are just tender, about 5 minutes.
- Meanwhile, stir together the apricot preserves, cornstarch, dried apricots, and raisins in a saucepan. Place over medium heat, and cook until the mixture bubbles, thickens, and turns clear, 2 to 3 minutes.
- Once the carrots have cooked, drain, and stir into the apricot preserves. Pour into a baking dish, and bake in preheated oven until the sauce has thickened further, and turned light brown, about 15 minutes.
