Steaming this popular Chinese vegetable with chile, garlic, and ginger spices up its otherwise subtle essence. We love baby bok choy for its small size and tender leaves, but this recipe can also be made with regular bok choy sliced lengthwise into 1 1/2-inch pieces.

2 teaspoons vegetable oil
1 red jalapeno chile, seeded (optional) and thinly sliced
1 garlic clove, thinly sliced
1 piece (1 inch) fresh ginger, peeled and thinly sliced
1 pound baby bok choy, cut in half lengthwise
3 tablespoons water
Coarse salt

Steps:

  • Heat oil in a large skillet over medium-high heat. Cook jalapeno, garlic, and ginger for 1 minute.
  • Add bok choy and water, and steam, tightly covered, until tender, 7 to 8 minutes. Uncover, and cook until any remaining liquid evaporates. Season with salt.

Quick Baby Bok Choy with Garlic image

I prefer to use baby bok choy for this recipe, but you can also use large bok choy. The cook time is really quick, so have all the ingredients ready before you start.

1 ½ tablespoons rapeseed oil
2 teaspoons minced garlic
1 pound baby bok choy
1 tablespoon light soy sauce
½ teaspoon white sugar
salt and freshly ground black pepper
¼ cup water
½ teaspoon sesame oil

Steps:

  • Heat a wok over medium heat. Add oil and allow to get hot. Add garlic and stir-fry until fragrant, about 30 seconds. Add bok choy and cook for 30 seconds. Season with soy sauce, sugar, and salt and stir-fry for 1 minute.
  • Pour water into the wok, cover, and simmer until leaves are dark green and stems are tender, but still firm, 2 to 3 minutes. Remove from heat, drizzle with sesame oil, and season with pepper.

1/8 cup unsalted butter
5 teaspoons minced garlic (or to taste)
12 -14 baby bok choy (washed thoroughly)
1 1/2 cups canned low sodium chicken broth

Steps:

  • Melt butter in heavy large skillet over moderate heat.
  • Add minced garlic and saute about 2-3 minutes until barely golden/brown.
  • Add bok choy and chicken broth and simmer until bok choy is tender, turning occasionally, about 8 minutes.
  • Season with salt and pepper.
  • Use a slotted spoon to serve.

1/3 cup reduced-sodium chicken broth
1 tablespoon soy sauce
1 1/2 teaspoons cornstarch
3 tablespoons peanut or vegetable oil
1/4 cup thinly sliced garlic (about 8 cloves)
2 pounds baby or Shanghai bok choy, halved lengthwise
2 teaspoons Asian sesame oil
Equipment: a well-seasoned 14-inch flat-bottomed wok with a lid

Steps:

  • Stir together broth, soy sauce, cornstarch, and 1/2 teaspoon salt until cornstarch has dissolved.
  • Heat wok over high heat until a drop of water evaporates instantly. Pour peanut oil down side of wok, then swirl oil, tilting wok to coat side. Add garlic and stir-fry until pale golden, 5 to 10 seconds. Add half of bok choy and stir-fry until leaves wilt, about 2 minutes, then add remaining bok choy and stir-fry until all leaves are bright green and limp, 2 to 3 minutes total. Stir broth mixture, then pour into wok and stir-fry 15 seconds. Cover with lid and cook, stirring occasionally, until vegetables are crisp-tender, 2 to 4 minutes. Stir in sesame oil, then transfer to a serving dish.

This stir fried garlic baby bok choy is a great vegetable side or alternative to salad. Easy to make, garlic baby bok choy is a perfect side dish for almost anything.

1 pound baby bok choy ((450g))
2 tablespoons oil
5 cloves garlic ((minced))
salt and white pepper ((to taste))
1/8 teaspoon sugar

Steps:

  • Trim the bottoms off of each bundle of bok choy, and split them in half or quarters. Just make sure all of the pieces are relatively uniform so they cook evenly. You can leave them whole if they're very small and tender.
  • Wash thoroughly with cold water two to three times. These days, we're never too cautious about making sure all of the dirt and pesticides are rinsed away. The best method is to use a large basin or sink to rinse and swirl around the vegetables letting them soak for a few minutes before draining and washing again. Shake off the excess water after the final rinse and transfer to a colander to drain. It is important to drain the vegetables well since these veggies will release quite a bit of water during the cooking process.
  • Heat the wok over high heat until smoking, and add 2 tablespoons oil. Swirl around the oil so the wok is coated. Add all of the garlic and immediately add the bok choy. Move quickly to stir and sauté the greens in the oil and garlic. Stir quickly so you don't burn the garlic!
  • Use a folding motion to turn the vegetables or use tongs if that is easier. Once the vegetables begin to wilt, about 30 seconds, add salt, pepper, and sugar. How long you cook them from here is all personal preference. Judy likes to cook them a bit longer for a softer texture while I like them a little bit more crisp. Plate and serve immediately.

Steps:

  • Heat a large sauté pan over medium-high heat. Add oil, garlic and ginger. Cook until fragrant but not brown, about 2 minutes, stirring frequently.
  • Add bok choy leaves and cook until leaves are wilted but stems are still crunchy, stirring occasionally, about 5 minutes.
  • Add sweet chili sauce, stir and let cook for another 2 to 3 minutes, tossing to coat all leaves. Taste and adjust seasoning with salt and pepper. Serve immediately and spoon leftover sauce in pan over bok choy.
