Bifes de Atum Grelhado a Madeirense (Grilled Tuna Steaks Madeira-Style). On the garden island of Madeira, tuna steaks are more likely to be grilled over hardwood coals than panbroiled but directions are given for cooking both ways. The steaks must marinate overnight in the refrigerator, so begin a day before you plan to serve. From The Food of Portugal by Jean Anderson.

1 large garlic clove, peeled and quartered
1 teaspoon(s) kosher salt
1/2 teaspoon(s) crumbled leaf oregano
1/2 teaspoon(s) freshly ground black pepper
1/2 cup(s) olive oil
2 pound(s) fresh boneless tuna, cut into steaks about 3/4-inch thick
4 large bay leaves, do not crumble

Steps:

  • Using a mortar and pestle, pound the garlic, salt, oregano, and black pepper to a paste; blend in 1 tablespoon of the olive oil.
  • Rub the mixture on both sides of each tuna steak, lay the steaks in a 9 x 9 x 2-inch baking dish, drizzle with 1/4 cup of the remaining oil, then tuck in the bay leaves. Cover and marinate in the refrigerator 24 hours.
  • When ready to cook, heat the remaining 3 tablespoons olive oil in a large heavy skillet over high heat until ripples appear on the skillet bottom; add the tuna and brown about 3 minutes on each side, keeping the heat high.
  • Variation: Grill over white ash coals about 6 inches above the coals. Brush the tuna steaks well with oil, then grill 3-4 minutes on each side.

1 large garlic clove, peeled and quartered
1 tsp kosher salt
1/2 c chopped fresh coriander or mint
1/2 tsp freshly ground black pepper
1/2 c olive oil
2 lb fresh boneless tuna, cut into steaks about 3/4-inch thick
1/2 c dry white wine
2 Tbsp lemon juice

Steps:

  • 1. Using a mortar and pestle, pound the garlic, salt, 2 tablespoons of the coriander, and the pepper to a paste; blend in 1 tablespoon of the olive oil.
  • 2. Rub the mixture on both sides of each tuna steak and lay the steaks in a 9 x 9 x 2-inch baking dish. Mix 2 tablespoons of the remaining coriander with 1/4 cup of the remaining oil, the wine, and lemon juice. Pour evenly over the tuna, cover, and marinate in the refrigerator for 24 hours.
  • 3. When ready to cook, heat the remaining 3 tablespoons olive oil in a large heavy skillet over high heat until ripples appear on the skillet bottom; add the tuna and brown about 3 minutes on each side, keeping the heat high.
  • 4. Meanwhile, strain the marinade, warm in a small saucepan over moderate heat, and stir in the remaining 1/4 cup chopped coriander.
  • 5. Serve sizzling hot with a little of the hot marinade spooned over each portion. Accompany with sun-ripened tomatoes, cut into wedges or rounds, and crisp slices of cucumber -- both drizzled with olive oil and vinegar.
  • 6. Variation On the grill When ready to cook, make a hot charcoal fire, and when it burns down, leaving coals covered with white ash, adjust the grill so that it is about 6 inches above the coals. Brush the tuna steaks well with the marinade. Strain the remaining marinade into a little saucepan and set to one side of the grill so that it will heat as the tuna grills. Grill the tuna 3 to 4 minutes on each side, brushing often with the marinade, just until cooked through. Stir the remaining chopped coriander into the marinade, top each portion with a generous spoonful of it, and serve.

This requires you to plan ahead, as the fish should marinate 24 hours before you cook it. You can do the grilling over charcoal, on a gas grill or using a stovetop or George Foreman type grill.

1 teaspoon coarse salt
1/2 teaspoon dried oregano
1/2 teaspoon fresh ground pepper
3 tablespoons olive oil, plus
additional olive oil, for grilling
2 lbs fresh tuna, cut into steaks aabout 3/4-inch thick
4 large whole bay leaves

Steps:

  • Using a mortar and pestle, a fork or a mini-processor, combine the garlic, salt and pepper and oregano into a paste and blend in one tablespoon of the olive oil.
  • Rub the tuna steaks with this mixtures and place them in a non-reactive covered dish.
  • Tuck in the bay leaves and refrigerate the fish for twenty four hours.
  • The next day, preheat the grill and brush with olive oil if necessary.
  • Grill the tuna over high heat for about three minutes each side.
  • Delicious with a green salad and a nice feisty Portugese rose.

4 tablespoons olive oil

Steps:

  • Place the fresh tuna steaks, in a bowl dish or bowl with the chopped garlic, bay leaf, parsley, white wine, vinegar, hot sauce, and pepper to taste, let it marinate for 3 hours.
  • Heat a frying pan over med temperature Take the tuna steaks out and dry them, add olive oil to the pan then add tuna steaks, cook 2 minutes on each side then add flour to the steaks and let them continue cooking.
  • Now add the marinade to the pan and let it cook about 5-7 minutes , tuna is best when there is still a little pink.
  • Serve and enjoy.
