These sauteed mushrooms are easy and so tasty. Serve sauteed mushrooms as a side dish, appetizer, over steak, on a burger (yum!), in gravy - so versatile!

2 Tbsp unsalted butter
2 Tbsp light olive oil
1 1/2 lbs 24 oz baby bella (cremini) mushrooms
garlic salt (to taste (or use salt and garlic powder))
black pepper (freshly ground)
1 1/2 Tbsp fresh lemon juice form 1 small or 1/2 large lemon
1 Tbsp fresh parsley (finely chopped)

Steps:

  • Rinse and quickly pat dry mushrooms (go on and rinse them, you have my permission :)). Cut off stems to be parallel with the base of the mushroom (important for sautéing ease).
  • In a large heavy pan over medium heat, add 2 Tbsp butter and 2 Tbsp oil. Once oil is hot, add mushrooms in a single layer, cut-side-down. Sprinkle with garlic salt and pepper. Sautee until bottoms are browned (5 min), then flip over, season again with garlic salt and pepper and sautee until browned on the second side (5 min).
  • Squeeze in 1 1/2 Tbsp lemon juice and sprinkle with 1 Tbsp parsley. Stir mushrooms and cook another 1-2 min, adding more seasoning to taste. Remove from heat and serve.

These mushrooms are the quintessential topping for all types of steak. Also excellent over baked potatoes. I have people calling me and asking me for the recipe even years after I have made them for them. They are that good!!

3 tablespoons olive oil
3 tablespoons butter
1 pound button mushrooms, sliced
1 clove garlic, thinly sliced
1 tablespoon red cooking wine
1 tablespoon teriyaki sauce, or more to taste
¼ teaspoon garlic salt, or to taste
freshly ground black pepper to taste

Steps:

  • Heat olive oil and butter in a large saucepan over medium heat. Cook and stir mushrooms, garlic, cooking wine, teriyaki sauce, garlic salt, and black pepper in the hot oil and butter until mushrooms are lightly browned, about 5 minutes. Reduce heat to low and simmer until mushrooms are tender, 5 to 8 more minutes.

Although the dish tastes great with the addition of dry white wine as the original recipe calls for, you can use marsala cooking wine instead but add a little more lemon juice to compensate for the sweetness of marsala and the mushrooms tastes great, too! Adapted from "Casual Cooking" by Michael Chiarello and found posted in Azerbaijan cooking site. I'm liking Azerbaijan more all the time.

Number Of Ingredients 9

3 tablespoons olive oil
10 ounces fresh button mushrooms (slice the big ones into thick slices and keep the small ones whole)
1 tablespoon unsalted butter
sea salt & freshly ground black pepper
1/2 tablespoon minced garlic
1/2 teaspoon minced fresh thyme
2 teaspoons fresh lemon juice
1/4 cup dry white wine
1/2 tablespoon chopped fresh flat-leaf parsley (plus more to garnish)

Steps:

  • Heat a large skillet over high heat. Add the olive oil. When the oil is hot, sprinkle the mushrooms in a single layer. Don't stir! Let them sizzle until they have caramelized on the bottom, about 2 minutes. If you toss them too soon, they will release their liquid and begin to steam. When the bottoms are caramelized, toss the mushrooms and continue to cook over high heat for about 5 minutes. If necessary, drain the mushrooms in a sieve and discard the excess oil. Otherwise, keep the mushrooms in the skillet.
  • If drained, returned the mushrooms to the skillet and add the butter. Continue to cook, stirring occasionally, until the mushrooms are beautifully browned, 2 to 3 minutes. Season with salt and pepper and add the garlic. Saute until the garlic is lightly browned, about 2 minutes.
  • Add the thyme and lemon juice and cook until the liquid evaporates. Add the wine, reduce the heat slightly, and simmer until the mushrooms are glazed with the sauce. Add the parsley, transfer to a warmed bowl and serve immediately.
