THE BEST CHEWY CHOCOLATE CHIP COOKIES RECIPE BY TASTY

The Best Chewy Chocolate Chip Cookies Recipe by Tasty image

There are a few secrets to the best classic, chewy chocolate chip cookies. Number one: Don't use chips; instead, opt for a mix of milk or semisweet and dark chocolate chunks. The second is to let the dough rest overnight or longer for a more complex, toffee-like flavor. Lastly, use an ice cream scooper to get even-sized cookies every time. And that's it! With these little tweaks, the result is a cookie that's textured on the outside, and soft and gooey on the inside. Absolutely perfect!

Provided by Alvin Zhou

Categories     Desserts

Time 1h5m

Yield 12 cookies

Number Of Ingredients 10

½ cup granulated sugar
¾ cup brown sugar, packed
1 teaspoon salt
½ cup unsalted butter, melted
1 egg
1 teaspoon vanilla extract
1 ¼ cups all-purpose flour
½ teaspoon baking soda
4 oz milk or semi-sweet chocolate chunks
4 oz dark chocolate chunk, or your preference

Steps:

  • In a large bowl, whisk together the sugars, salt, and butter until a paste forms with no lumps.
  • Whisk in the egg and vanilla, beating until light ribbons fall off the whisk and remain for a short while before falling back into the mixture.
  • Sift in the flour and baking soda, then fold the mixture with a spatula (Be careful not to overmix, which would cause the gluten in the flour to toughen resulting in cakier cookies).
  • Fold in the chocolate chunks, then chill the dough for at least 30 minutes. For a more intense toffee-like flavor and deeper color, chill the dough overnight. The longer the dough rests, the more complex its flavor will be.
  • Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper.
  • Scoop the dough with an ice-cream scoop onto a parchment paper-lined baking sheet, leaving at least 4 inches (10 cm) of space between cookies and 2 inches (5 cm) of space from the edges of the pan so that the cookies can spread evenly.
  • Bake for 12-15 minutes, or until the edges have started to barely brown.
  • Cool completely before serving.
  • Enjoy!

  • Hot Chocolate Cookies. Hot chocolate and cold nights are a match made in heaven. When you put that feeling into a cookie, it’s another match that I want to be a part of.
  • Sugar Cookies Cutouts. These are so fun to decorate AND to eat. I use holiday themed cookie cutters, so these can really be made for any holiday. Get the recipe HERE.
  • White Chocolate Chip Cookies. Image Courtesy of Very Best Baking. These cookies are so simple it almost seems silly to put them on this list! But we make these every year and they are always a hit.
  • Polish Bow Cookies (Kruschiki) or (Chruschiki) My dad makes these cookies every Christmas. I haven’t been entrusted with the family recipe yet, but they are all generally the same.
  • Spritz Cookies. See Also. Prosciutto Topped Butternut Squash Fritters. Image Courtesy of Rasa Malaysia. This list is full of classic Christmas cookies that might get overlooked because of other cookie combinations that people are coming up with.
  • Snowball Cookies. These cookies are sweet and crunchy, which is such a delicious combination for a cookie. This recipe can be adjusted to the kind of nut that you like, or you can leave the nuts out altogether!

8 COOKIE BAKING TIPS TO FOLLOW FOR SWEET SUCCESS

From thespruceeats.com
Estimated Reading Time 5 mins
  • Don't Grease the Pan. It's simple to remember this tip. Don't grease your pans. Greasing them can cause your cookies to spread too much, possibly merging into one giant cookie.
  • Use Light-Colored Pans. Speaking of pans, your baking pans should be light-colored rather than dark. Cookies baked on dark pans will tend to burn on the bottom.
  • Measure the Flour Correctly. The issue with measuring flour by volume is using units like cups is wildly imprecise. The problem is further compounded by the fact that scooping the measuring cup into the bag of flour can add up to 30 percent more flour than what is called for.
  • Let Your Butter Sit at Room Temperature for 15 Minutes. Fifteen minutes! Not more and not less. If the butter is too cold, it won't cream properly and the resulting cookies will be too dense.
  • Use High-Quality Butter. Cheap butter can contain up to 19 percent water, which not only makes it harder for the eggs and butter to emulsify, but it will also contribute to excess spreading.
  • Handle the Dough Gently. This is mostly an issue with rolled cookies, which is difficult since you need to use a rolling pin and that's not exactly gentle.
  • Don't Rotate Your Pans. Some bakers believe there are hotspots in an oven and rotating your pans during baking will help mitigate them. The relatively minor benefit of rotating your pans is completely nullified by the fact you've just let all the heat out of the oven by opening the door.
  • Use a Cooling Rack. Letting your cookies cool directly on the hot pans will continue to cook them, which can lead to over-browning on the bottoms. In addition, because the steam can't escape as well when the cookies are sitting on the pan, they can get a bit soggy.

  • Double Chocolate Rye Cookies. This is the perfect chocolate cookie recipe. The secret to its deep flavor? it's full of both dark chocolate chunks and bits of unsweetened chocolate.
  • Zebra-Striped Shortbread Cookies. These Christmas cookies look pretty intricate, but we promise that stacking the dough in alternating colors and then smushing them into a roll is as easy as making shapes with Play-Doh.
  • Salted-Butter Oatmeal Chocolate Chip Cookies. Using salted butter, resting the dough, and using chopped chocolate instead of chocolate chips are all smart moves that add up to seriously good chocolate chip cookies.
  • Goat Butter Shortbread. Sometimes it's the little swaps that make all the difference. Like using goat's milk butter, such as Meyenberg, instead of your regular cow's milk pick.
  • Soft Gingerbread Tiles With Rum Butter Glaze. Cookie stamps give these snappy ginger cookies their embossed look and a rum-butter glaze lends a festive, antique finish.
  • Frosted Malt-Chocolate Cookies. Chocolate cookies topped with chocolate frosting and a sprinkle of salt? We're in. The old-school malted milk powder this cookie recipe calls for can be found in the baking aisle or online.
  • 3-Ingredient Peanut Butter Cookies. These naturally gluten-free treats couldn't be easier to make or enjoy. In addition to creamy peanut butter, you'll need one large egg and one cup of sugar.
  • Shortbread Cookies Four Ways. This four-for-one shortbread cookie recipe comes from master baker Dorie Greenspan. Choosing among the four flavors is just as difficult as selecting just one recipe from this entire list.
  • Cinnamon–Chocolate Chunk Skillet Cookie. This shareable cookie has all the flavors of a piping-hot latte, plus chocolate. Lots of hot, melting milk chocolate.
  • Spritz Cookies. If you've ever had trouble making spritz cookies with a cookie press, you need to try this recipe. A touch of cornstarch makes the dough easier to work with.
