1 cup sugar
1/4 cup cornstarch
3 tablespoons strawberry gelatin powder
1 cup cold water
1 pint fresh strawberries, sliced
1-3/4 cups cold milk
1 package (3.4 ounces) instant vanilla pudding mix
3 medium firm bananas, sliced
1 tablespoon lemon juice
6 cups cubed angel food cake
2 cups heavy whipping cream, whipped
Additional strawberries or banana slices, optional

Steps:

  • In a saucepan, combine the sugar, cornstarch and gelatin; stir in water until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir in strawberries; set aside. , In a large bowl, combine milk and pudding mix. Beat on low speed for 2 minutes; set aside. Toss bananas with lemon juice; drain and set aside. , Place half of the cake cubes in a trifle bowl or 3-qt. serving bowl. Layer with half of the pudding, bananas, strawberry sauce and whipped cream. Repeat layers. Cover and refrigerate for at least 2 hours. Garnish with additional fruit if desired.

This low carb strawberry trifle is a summer dessert favourite! Moist sponge cake, juicy strawberries, sugar free strawberry jam and velvety whipped cream - all at 9 net carbs per portion.

2 tbsp coconut flour
1 tbsp powdered erythritol
1/4 tsp baking powder
4 tbsp double / heavy cream
1 egg (medium)
1/2 tsp vanilla extract
1/2 cup / 120 ml double / heavy cream
1/4 cup / 60 g full fat Greek yoghurt (or sour cream)
1/2 tsp vanilla extract
1 tbsp powdered erythritol (optional)
2 tbsp sugar free strawberry jam
100 g strawberries (about 5-6)

Steps:

  • Combine all ingredients for the shortcake in a bowl using a fork. Let the mix sit 2-3 minutes to thicken.
  • Fill the dough into 2 well-greased ramekins and microwave on high for 90 seconds. Once they have cooled down, turn the cakes out onto a plate and slice into 2 disks.
  • Whisk the double / heavy cream until stiff. Sir in the Greek yoghurt, vanilla and powdered erythritol, if using.
  • Assemble the trifle: Get yourself 2 pots/glasses/bowl holding circa 150 ml. Place a slice of shortcake at the bottom and line the outer edges of each pot with strawberry slices. Then add 1/2 tbsp of sugar free strawberry jam, followed by 3 heaped teaspoons of the cream topping. Add another 1/2 tbsp of strawberry jam, the second shortbread disk and top with the remaining cream. Decorate the top with another strawberry.

1 (2 1/8 ounce) package sugar-free banana cream pudding mix (large box)
3 cups cold skim milk
1 pint strawberry, washed and sliced
4 (1 g) packets Splenda sugar substitute
1 large ripe banana, sliced
1/2-1 teaspoon lemon juice
1 (7 ounce) box snackwells sugar-free shortbread cookies (about 18 cookies)
1 (8 ounce) container Cool Whip Free

Steps:

  • Blend pudding and skim milk according to package directions and set aside.
  • Sprinkle strawberry slices with Splenda packets and stir to coat evenly. Set aside.
  • Sprinkle lemon juice over banana slices and stir to coat each slice. This stops them from going brown. Set aside.
  • Break half the cookies up into small pieces and spread evenly over the bottom of a clear glass baking dish or a clear glass bowl.
  • Arrange the strawberry slices evenly over cookie layer.
  • Pour half the pudding over strawberries.
  • Break up the remaining cookies and sprinkle evenly over pudding.
  • Arrange banana slices evenly over cookies.
  • Pour remaining pudding evenly over banana slices.
  • Spread Cool Whip evenly over pudding.
  • Refrigerate at least 20 minutes, or until pudding is set.
  • If you like your cookies a little crunchier, eat this sooner. But it can be refrigerated for a few hours, also -- but the cookies will get softer. We like it both ways.

  • Tear cake into bite size pieces and place in bottom of ungreased 9" x 13" pan.
  • Dissolve gelatin in 1 cup boiling water- no cold water. Add strawberries and their juice to gelatin.
  • Spoon evenly over cake pieces.
  • Slice bananas on top and refrigerate while you prepare the pudding, which should be made with skim milk.
  • Pour pudding over the bananas and top with lite whipped topping. Refrigerate 1 to 2 hours.
