EVERYONE'S FAVORITE SPINACH SALAD WITH POPPY SEED DRESSING

Everyone's Favorite Spinach Salad with Poppy Seed Dressing image

This recipe quickly becomes the favorite of pretty much everyone that tries it. It's so tasty, it's easy to make, and the ingredients are interchangeable! You can use the dressing immediately or make it in advance and store in refrigerator up to a couple of days. I have substituted pears and mandarin oranges for the strawberries and feta instead of blue cheese. Be creative! YUM!

SPINACH SALAD WITH POPPY SEED DRESSING

Spinach Salad With Poppy Seed Dressing image

I like this salad because it isn't fruity like many spinach salads out there. My cousin always brings this to family dinners and everybody loves it, even the ones that don't like spinach! Be sure to make the dressing the night before! The original recipe called for 1 lb. of swiss cheese. I think that's a bit much and usually make it with 1/2 lb.

Provided by Pismo

Categories     Spinach

Time 8h15m

Yield 8-10 serving(s)

Number Of Ingredients 11

1 1/2 teaspoons salt
3/4 cup white vinegar
1 1/2 cups oil
1/2 cup sugar
1 tablespoon poppy seed
1 teaspoon dry mustard
1/2 red onion, sliced thinly
1/2 lb fresh mushrooms, sliced
1/2-1 lb swiss cheese, grated
1 lb bacon, cooked and crumbled
2 bunches spinach (I use a 10oz bag)

Steps:

  • Note for Dressing: This makes a lot, I usually only use about half.
  • Mix the dressing ingredients together and refrigerate overnight. Very important!
  • Toss salad ingredients together and mix in dressing just before serving.

  • For the salad, place the spinach in a large bowl. Top with the strawberries and almonds and lightly toss.
  • For the dressing, combine all the ingredients together in a jar, close with a lid, and shake like crazy until well combined and smooth. You could also use a blender, but don't add the poppy seeds until all the other ingredients have been blended - stir in the poppy seeds at the end.
  • Toss the salad with the dressing or serve the dressing on the side. The dressing will keep, well covered, in the refrigerator for at least a week. Serve the salad with crispy wontons on top, if desired.
  • For the fried wontons, heat 1/2 cup or so of vegetable or canola oil in a stainless steel skillet until it is hot (and sizzles when you test a piece of the wonton). Cut small, square wonton wrappers into thin strips and fry in the oil until crisp, about 20-30 seconds each side. Remove to a paper-towel lined plate and sprinkle very lightly with salt. Let cool before topping the salad.

  • For the salad: Add all of your ingredients to a bowl and toss to combine. Or you can add the spinach to a shallow bowl and then line the toppings on top (this is what I did), toss before serving.
  • For the dressing: Add everything to a mason jar, add the lid, shake to combine. Shake well before using.
  • You can dress the salad right before serving (the recipe makes more than you will need) or you can let everyone dress their own, pouring the dressing right out of your mason jar. I like to let everyone add their own dressing.

  • Whisk the white wine vinegar and sugar until the sugar is mostly dissolved (it's okay if there is still some undissolved sugar). Peel the shallot and grate it on a microplane or the smallest holes on a box grater directly into the bowl. Add the poppy seeds, salt, and ground mustard, and whisk to combine.
  • Whisking the dressing steadily, pour the olive oil into the dressing in a slow stream. Continue whisking until completely combined.
  • Transfer to a covered container and store in the fridge for several weeks. The dressing will separate as it sits; shake to recombine before using.
