These are pretty much all of my favorite things layered into one extremely satisfying dish. You may have a lot of leftover bechamel sauce; bout a half of a box of cooked pasta will take care of this for you.

12 spears asparagus
1 (8 ounce) package shredded mozzarella cheese
4 skinless, boneless chicken thighs
4 extra-thick bacon slices
kitchen string
2 tablespoons butter, divided
2 jalapeno peppers - stemmed, seeded, and minced
3 tablespoons all-purpose flour
2 cups warm milk
1 teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a 9-inch square pan with parchment paper.
  • Trim asparagus spears to extend 1 inch past each side of the thighs.
  • Place 1 cup of the mozzarella cheese into a bowl.
  • Lay chicken thighs flat on a work surface. Place 1/4 cup mozzarella cheese on each thigh, followed by 3 asparagus spears. Roll thigh around stuffing; wrap 1 bacon slice around each thigh. Tie a 12-inch length of string around the bacon, ensuring bacon ends are secured. Place stuffed thighs in the lined pan.
  • Bake in the preheated oven until no longer pink in the center and juices run clear, 30 to 40 minutes. An instant-read thermometer inserted into the middle of a thigh should read at least 165 degrees F (74 degrees C).
  • Melt 1 tablespoon butter in a small saucepan over medium-high heat; add jalapenos. Cook, stirring regularly, until juices have evaporated, 1 to 2 minutes. Add remaining butter, melt completely, about 1 minute. Stir in flour until it starts to brown, 1 to 2 minutes. Pour in warm milk, 1/3 cup at a time, mixing completely after each addition.
  • Bring milk mixture to a boil; reduce heat to medium-low. Simmer, stirring occasionally, until sauce thickens, about 7 minutes. Season sauce with salt and pepper. Add remaining mozzarella cheese, stir gently to incorporate into sauce.
  • Cut strings from thighs and smother with sauce.

2 tablespoons unbleached all-purpose flour
1 teaspoon onion powder
1 teaspoon paprika
1/4 teaspoon cayenne pepper, or to taste
Coarse salt and freshly ground black pepper
1 tablespoon canola oil
4 chicken leg quarters (2 pounds)
2 onions, sliced
2 cloves garlic, very finely chopped
1 cup homemade chicken stock or reduced-fat low-sodium chicken broth, warmed
2 sprigs fresh thyme
1 bay leaf, preferably fresh

Steps:

  • Heat the oven to 350 degrees F. Combine the flour, onion powder, paprika and cayenne pepper in a shallow dish. Season with salt and black pepper and stir to combine.
  • Heat the oil in a large ovenproof skillet over medium-high heat until shimmering. Pat the chicken dry and place in the flour-spice mixture, turning to dust on both sides. Shake off the excess. Add the coated chicken to the hot oil and sear until brown, 1 to 2 minutes per side. Remove to a plate.
  • Add the onions to the oil remaining in the skillet and reduce the heat to medium. Season the onions with salt and black pepper. Cook, stirring occasionally, until the onions are golden brown, 5 to 7 minutes. Add the garlic and cook until fragrant, 45 to 60 seconds.
  • Tip the remaining flour mixture into the onions and stir to coat and combine. Stir in the warmed chicken stock and increase the heat to medium high. Bring to a boil. Reduce the heat until the mixture simmers. Add the reserved chicken with any accumulated juices, nestling it into the onions, and the thyme and bay leaf. Transfer the skillet to the oven and cook until the juices of the chicken run clear when pierced with a knife and the temperature reads 165 degrees F when measured with an instant-read thermometer, about 30 minutes. Taste and adjust the seasoning with salt and black pepper. Discard the thyme sprigs and bay leaf. Serve the chicken immediately.

This Southern Smothered Chicken is made with perfectly browned chicken with an onion and garlic gravy that's perfect over your starch of choice. This is true southern comfort.

1 lbs chicken (I used legs, and thighs)
1 1/2 cup all purpose flour
1 tsp salt
1 tsp ground black pepper
1 tsp celery seed
1 tbsp onion powder
1 tsp poultry seasoning
1 tbsp garlic powder
1 tsp smoked paprika
1/4 cup vegetable oil
2 cups chicken broth
1 cup whole milk
2 tsp minced garlic
1 medium sized onion (chopped)

Steps:

  • Start off by making sure that all of the chicken is nice and clean.
  • Pour 1 1/2 cup flour into a large bowl, and add in seasonings : garlic powder, onion powder, salt, pepper, celery seed, poultry seasoning, and smoked paprika. Mix until well incorporated.
  • Coat the chicken with the seasoned flour, and make sure you coat all surfaces.
  • Reserve the seasoned flour
  • Pour 1/4 cup of vegetable oil into a large pan, then place the plan over medium heat.
  • Start adding in the chicken, but be sure to not over crowd the pan ( use a pan big enough to hold all of the chicken).
  • Cook the chicken until it is golden brown(DO NOT worry about cooking the chicken until done, because we will cook it some more).
  • Once the chicken is nice and browned, remove it from the pan. Leave the oil in the pan.
  • Toss in the onions, and cook them for about 2 minutes, then add in the garlic. Once the garlic is in the pan let it cook for an additional minute, then remove the onions and garlic from the pan.
  • Add three tbsp of the seasoned flour (the same flour that you coat the chicken with) to the pan. Stir in with the oil.
  • Next pour in 2 cups of chicken broth. Whisk in while pouring in the broth. Make sure there aren't any lumps.
  • Let the gravy cook for about 2 minutes ( still on medium heat), then pour in 1 cup of milk into the pan.
  • Let the creamy gravy cook for about 3 minutes, then start adding the chicken back into the pan, as well as the onions and garlic.
  • Make sure all of the chicken is coated with the creamy gravy.
  • Place a lid on the pan, then let the chicken cook for 30-35 minutes. Be sure to occasionally turn the chicken.
  • Once done serve the chicken with rice or mashed potatoes.
  • Enjoy!

6-8 small chicken thighs
2 Tbsp olive oil
3 tsp minced garlic
3 can(s) cream of mushroom soup
2 c fresh sliced mushrooms
1 1/2 c milk
3 c instant white or brown rice (prepared)
salt
fresh ground pepper
garlic powder

Steps:

  • 1. Preheat oven to 350F.
  • 2. Prepare rice according to package, enough to cover the entire bottom of a deep 9x13 glass baking dish (3 servings).
  • 3. In the meantime, in a large skillet heat enough Olive Oil to cover the bottom..coat chicken thighs on both sides with Olive oil as well. Use desired amounts of salt, pepper and garlic powder to flavor.
  • 4. When the Olive Oil is hot, turn heat down to medium to medium-high and add minced garlic to the oil. Let Garlic sauté in the oil for about 1 min, then add Chicken..skin down in the pan.
  • 5. Brown for 15 minutes each side until chicken is golden brown (this locks the flavor into the chicken itself).
  • 6. While chicken is cooking, prepare Cream of Mushroom soup by adding 2-3 cans to a bowl, 1 1/2 cups milk, salt/pepper to taste , garlic powder, 1 tsp minced garlic and finally sliced fresh mushrooms.
  • 7. With a paper towel, brush a small amount of Olive oil around the bottom and sides of the baking dish...add rice and spread out to cover the bottom..add chicken to the baking dish on top of the rice and pour sauce mixture over all.
  • 8. Cover with foil and cook for about 45-50 minutes...uncover, and cook for an additional 20 minutes.
  • 9. I like to make fresh rolls with it..sometimes I'll make my own from scratch, and sometimes I'll buy that Rhodes frozen white roll dough and let it rise all day... A fresh roll with butter really just completes the dish!
  • 10. Serves 4-8 depending on the household appetite!

¼ cup vegetable oil, divided
1 red onion, cut into strips
1 (2 to 3 pound) whole chicken, cut into 8 pieces
¾ cup all-purpose flour
⅛ teaspoon salt
⅛ teaspoon ground black pepper
1 tablespoon crushed red pepper flakes
2 cups water
1 cup cider vinegar

Steps:

  • Heat 1 tablespoon oil in a large skillet and saute onion until tender. Remove and set aside.
  • Place flour, salt and pepper in a large, clean grocery bag. Add chicken, close bag tightly and shake to coat. Let sit 5 minutes. Remove chicken from bag, reserving leftover flour in bag. Heat remaining oil in skillet and brown chicken on all sides in hot oil. Remove chicken from skillet and place in a deep roasting pan.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat reserved flour in skillet over medium high heat, stirring constantly, to make a dark roux. Slowly stir in pepper flakes, water and vinegar. Finally stir in reserved sauteed onion. Mix well and pour mixture over chicken.
  • Cover dish and bake in preheated oven for about 35 to 45 minutes, or until chicken is tender and cooked through (no longer pink inside). Note: If gravy is too thick, add water to pan, a little at a time, until desired consistency is reached.

After reading this recipe here, it sounded so good that I had to put my personal touches to it. I'm not particularly fond of chicken breasts unless they're flattened to a pulp and delicately browned after being dredged in flour. After that I followed the original recipe except I added crushed red peppers and Italian seasoning. I served this with fettuccine alfredo and roasted asparagus on the side. Delizioso!

¼ cup seasoned bread crumbs
2 teaspoons garlic salt
1 teaspoon freshly ground black pepper

6 boneless chicken breasts
salt, pepper and desired seasonings to taste
cooking oil and a little butter
8 oz fresh sliced mushrooms
1 green pepper, chopped
1/2 c chopped onion
a little minced garlic or garlic powder to taste
your favorite cheese (cheddar, muenster or pepper jack are my favorites)

Steps:

  • 1. Put a few tablespoons cooking oil (I use canola) and a couple of tablespoons butter into a skillet. Sauté the mushrooms, green pepper, onion, and garlic in butter/oil mixture until tender.
  • 2. Flatten the chicken, if desired; sprinkle with desired seasonings.
  • 3. Place the chicken into the pan.
  • 4. Cover with the vegetables and let simmer until chicken is cooked through.
  • 5. Note: You can also remove the vegetables while you're cooking the chicken and then when chicken is done, simply throw everything back onto the tops of chicken breasts. The choice is yours.
  • 6. Add shredded cheese or large slices of cheese.
  • 7. Cover with lid just long enough to melt cheese down through the vegetables and onto the chicken. (My favorite cheese to use is the pepper jack... mmm!)
  • 8. Makes 6 servings. Do not freeze.
  • 9. Serve with your favorite sides. Hint: To make this a little less fattening, try grilling your chicken on the outdoor grill and saute your vegetables in fry pan on top of stove as in recipe. Then continue with rest of recipe.

Steps:

  • Clean chicken breasts and dry well. In a shallow baking dish, combine the flour, cayenne pepper, paprika, salt, and pepper. Dredge chicken breasts in flour mixture to coat. Shake off excess. In a large skillet heat 1/4-inch vegetable oil over medium heat. Add chicken and brown well, about 2 minutes on each side. Remove from pan and set aside. Pour excess oil from pan, leaving a thin layer. Add onions and garlic, saute, stirring occasionally, until translucent, about 3 to 5 minutes. In a bowl combine sour cream, chicken stock and green onions and mix well. Transfer chicken back to skillet, pour sour cream mixture over it. Bring to a simmer and cook, covered, until done, about 10 minutes.;

6 OR 8 chicken thighs
2 1/2 c flour with 1 cup reserved to make gravy or use wondra flour
SALT to taste-add to flour
PEPPER black ground pepper added to flour
2 large vidalia or spanish onion cut up, you could also add sliced mushrooms
3 OR 4 large garlic cloves sliced
1 stick butter
1/2 c canola oil
6 yucon gold or regular boiling potatoes (not red skinned)
milk and butter for mashed potatoes

Steps:

  • 1. WASH CUT UP CHICKEN. IN A PLASTIC BAG (WITH ZIP LOCK) COMBINE 1 1/2 CUPS FLOUR; SEASON FLOUR WITH SALT AND PEPPER. PLACE CHICKEN IN THE PLASTIC BAG WITH THE FLOUR, SALT, AND PEPPER ONE PIECE AT A TIME. SHAKE CHICKEN IN SEALED PLASTIC BAG. REPEAT UNTIL ALL PIECES ARE COATED.
  • 2. IN A LARGE DEEP FRY PAN, MELT BUTTER AND OIL ON MEDIUM HEAT; ADD CHICKEN, COOK UNTIL GOLDEN BROWN. PLACE PIECES OF BROWNED CHICKEN IN A 13" X 9" BAKING PAN. WHEN ALL THE PIECES OF CHICKEN ARE IN THE BAKING PAN, PUT THE SLICED ONIONS IN THE FRY PAN AND COOK UNTIL TRANSLUCENT; ADD THE SLICE GARLIC AND COOK UNTIL TENDER AND FRAGRANT. YOU MAY NEED TO ADD MORE BUTTER AND OIL IN THE PAN-IF NEEDED. ADD 2 CUPS OF WATER TO THE ONION AND GARLIC MIXTURE. LET THAT COOK FOR A FEW MINUTES THEN POUR OVER THE CHICKEN IN THE BAKING PAN. COVER WITH FOIL AND BAKE AT 375 DEGREES UNTIL CHICKEN IS FALLING OFF THE BONE. COOKING TIME IS ABOUT 1 HOUR. YOU CAN MAKE A GRAVY WITH THE DRIPPINGS. MIX FLOUR AND WATER TOGETHER TO MAKE A PASTE AND ADD IT TO THE DRIPPINGS. IF IT'S TOO THICK ADD MORE WATER. KEEP WHISKING UNTIL HEATED AND SMOOTH. TASTE THE GRAVY TO SEE IF YOU NEED TO SEASON WITH SALT & PEPPER.
  • 3. MASHED POTATOES AND PUT ROASTED GARLIC IN WITH MILK AND BUTTER. CONTINUE MASHING THE POTATOES.
  • 4. TO ROAST GARLIC, PUT A HEAD OF GARLIC IN A PIECE OF FOIL. TOP THE GARLIC WITH ITALIAN SEASONING, SALT, BLACK PEPPER AND OLIVE OIL. CLOSE THE FOIL TIGHTLY. BAKE IN A 350 DEGREE OVEN FOR ABOUT 45 MINUTES. REMOVE FROM FOIL WHEN COOLED. SQUEEZE THE GARLIC OUT OF EACH CASING TO PUT IN THE MASHED POTATOES. YOU WILL NEED ABOUT 4 CLOVES OF GARLIC. OMIT THE GARLIC IF YOU JUST WANT TO SERVE REGULAR MASHED POTATOES. REFRIGERATE ANY LEFTOVER GARLIC. NOODLES WOULD ALSO BE GOOD SERVED WITH THIS CHICKEN.
