SEASONED RED POTATOES
These simple but tasty potatoes are on the menu at my SideTrack Cafe in Metamora, Indiana. I've collected recipes for years, and this is a favorite.-Nancy Johnson, Connersville, Indiana

Steps:
- Peel a strip from around each potato. Place potatoes in an ungreased 3-qt. baking dish. In a small bowl, combine the oil, butter and seasonings; drizzle over potatoes. , Bake, uncovered, at 350°, for 50-55 minutes or until tender, stirring every 15 minutes.

Steps:
- Preheat the oven to 425 degrees Fahrenheit.
- Wash the potatoes, then pat them dry. Dice them into 1/2-inch cubes (if using baby red potatoes, you can slice them in half).
- In a large bowl, stir together potatoes, olive oil, garlic powder, kosher salt, and several grinds of fresh ground black pepper.
- Line a baking sheet with parchment paper. Spread the potatoes in an even layer on the sheet cut and make sure they are side down. Roast for 15 minutes. Toss with 1/2 cup Parmesan and roast another 15 minutes. Serve immediately, drizzled with sour cream sauce if desired.
AWESOME SMASHED RED POTATOES
This recipe of hand-mashed red potatoes with skins with a flavor mixture of bacon bits, cheese, and French onion rings could be served as a main dish if you are a potato-lover like me. - Place potatoes into a pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes; drain.

BOILED RED POTATOES
Boiled red potatoes with garlic butter and Parmesan cheese, an old fashioned and often made salty side dish with earthy delicious potatoes. This dish, done in under 30 minutes, is incredibly filling and flavorful. There is no doubt that you will LOVE your boiled red potatoes!!

Steps:
- Add clean red potatoes to a large sauce pan and cover with cold water. You want the water to be at least 1" above the red potatoes.
- Heat on medium high heat and boil the potatoes for about 20-25 minutes or until a fork can be easily stuck into the potatoes. If the skin begins to peel off, the potatoes are done.
- Drain excess water (carefully, its hot!) from the baby red potatoes.
- Place drained red potatoes into a large bowl with pats of butter, minced garlic, and season with salt and black pepper.
- Use a spoon to mix well until butter is completely melted.
- Spoon red potatoes into a serving dish and sprinkle with shredded Parmesan cheese and fresh parsley herbs.

AWESOME ROASTED POTATOES WITH SOUR CREAM DIP
The version of roasted potatoes my family loves. This one came about after trial and error LOL You can adjust the seasoning to your taste I like to marinade the potatoes for about 30 minutes before roasting

Steps:
- Wash and chunk potatoes. Can peel if you want. I usually don't.
- Mix all ingredients except the parmesan cheese and toss with potatoes.
- Pour into a baking dish.
- Marinade for 30 minutes.
- Bake at 350 for 60 minutes or until fork tender.
- Sprinkle with the cheese just before serving.
- Time depends on size of potatoes.
- NOTE: Depending on your personal likes you can mix the potatoes and oil/seasoings in a bowl,marinade then just spoon the potatoes into an oiled or sprayed baking dish and then drizzle with as much of the oil/seasoning mixtue as you would like to use.
- Sour Cream Dip.
- Mix all ingredients. Chill for an hour.

RED SMASHED POTATOES
These crispy red smashed potatoes are brushed with olive oil and seasoned with my grandmother's spice mixture. They are baked to golden perfection and topped with a sprinkling of Asiago cheese and fresh Thyme.

- Place the potatoes in a large pot of cold water. Bring the potatoes to a boil and stir in 1 teaspoon of salt for each quart of water. Boil for 20 minutes, or until fork tender. Drain.
- Preheat oven to 450 degrees.
- Drizzle 1 Tablespoon of olive oil onto the bottom of 2 baking sheets and use a pastry brush (or paper towel) to spread it evenly.
- Create 4 rows of 3 potatoes and use a potato masher to push them down onto the pan. Use the pastry brush to brush remaining 2 Tablespoons of oil over each potato, then sprinkle with seasoning.
- Bake for 15 minutes. Remove from the oven and sprinkle the tops with Asiago if desired. Bake for 5 more minutes. Remove from the oven, and serve on their own or with sour cream!

- Once the potatoes are fork tender, drain them in a colander and let them sit for a few minutes for the excess steam to come off.
