BASIL CREAM SAUCE

After a mad search on the net for a recipe for this sauce I had to create my own. This can be reheated in the microwave without the usual cream sauce defects. I just love the light green color and how well it displays over tri color or regular pasta, salmon and grilled chicken. I have been putting this on everything.

2 cups fresh basil leaves
4 cloves garlic, minced
¼ cup olive oil
2 ounces pine nuts
½ cup grated Parmesan cheese
salt and pepper to taste
1 pint light cream

Steps:

  • In a food processor, combine basil and garlic. Begin processing, and pour in olive oil in a thin stream. Process for about 40 seconds, or until mixture begins to emulsify. Add pine nuts and Parmesan, then blend for 1 minute.
  • Heat cream in a saucepan over low heat until simmering. Pour 1/2 of the hot cream into the processor with basil pesto, and pulse for 20 seconds to incorporate. Pour mixture back into cream, and simmer for 5 minutes, or until thickened.

This Creamy Parmesan Basil Shrimp is a restaurant quality dish you can make at home! Creamy luscious sauce coats plump shrimp, perfect for serving over pasta, or make it keto and serve with spaghetti squash instead!

1 1/2 pounds shrimp
3 tablespoon butter
4 large garlic cloves (minced)
1/2 yellow onion (finely minced)
3-4 ounces roasted red peppers (thinly sliced.)
1/4 teaspoon paprika
1 1/2 cups heavy cream
1 cup (packed) fresh basil leaves (plus more for garnish)
1 cup fresh grated parmesan
1/4 teaspoon crushed red pepper flakes
1/2 cup white wine (or chicken stock)
salt (to taste )
black pepper (to taste)

Steps:

  • In a large non stick pan on medium heat, melt 2 tablespoons butter. Season shrimp with salt and pepper, then sear, 1-2 minutes on each side, until just pink. Remove from the pan and set aside.
  • In the same skillet add 1 tablespoons butter. Add onion, garlic, peppers, paprika, red chili pepper flakes, salt and pepper. Sauté for about 5 minutes, until onions and peppers are softened.
  • Add wine to deglaze the skillet and bring to a gentle simmer until reduced by half.
  • Reduce heat to medium low. Add cream to the skillet and stir until a creamy sauce forms. Taste and adjust seasoning with salt and pepper. Add Parmesan, stir until melted into sauce. Stir in basil, simmer until wilted, 1-2 minutes.
  • Add shrimp back to the skillet and reheat 1-2 minutes. Sprinkle with fresh basil and serve over pasta, zoodles, spaghetti squash.

I worked on this for a bit of time... I wanted a sauce that was flavorful, but didn't overwhelm the dining experience. This sauce is packed with flavor but allows the flavors of the other parts of the meal to come through... It compliments; not overpowers. Drizzle this sauce on pork, chicken or fish... Use it as a dip for veggies... Put it on the back of you hand and lick it off. This is one yummy sauce, and can be produced in one pan. In this recipe I sautéed a chicken breast and made some baked red potatoes with some steamed broccoli... YUMMY. So, you ready... Let's get into the kitchen.

2 tablespoon(s) sweet butter, unsalted
1 tablespoon(s) olive oil, extra virgin
2 clove(s) garlic, minced
1/4 teaspoon(s) red pepper flakes, or more, to taste
1/2 cup(s) chicken stock, not broth
1 cup(s) heavy cream
2 teaspoon(s) flour, all-purpose variety
1/3 cup(s) parmesan cheese, grated
1 tablespoon(s) fresh basil leaves, chopped
1 medium lemon, juice plus zest
- salt, kosher variety, to taste
- freshly ground black pepper, to taste

Steps:

  • PREP/PREPARE
  • Gather your ingredients.
  • Add the butter and olive oil into a saucepan over medium heat.
  • When the butter melts and stops foaming, add the garlic along with the red pepper flakes.
  • Stir until fragrant, about 2 to 3 minutes.
  • Add the chicken stock, cream, lemon juice, flour, and then stir to incorporate.
  • Add the Parmesan and stir until incorporated.
  • Add the lemon zest, and basil, and stir to incorporate.
  • Allow the sauce to simmer until it thickens, about 8 to 10 minutes.
  • Chef's Note: While the sauce is simmering, season with salt and pepper, to taste.
  • PLATE/PRESENT
  • Cook up your favorite protein (chicken, pork, fish), and serve with your favorite sides. Then drizzle the sauce on top. Enjoy.
  • Keep the faith and keep cooking.

1 (6 ounce) package egg noodles
1 lemon, zested
½ lemon, juiced
¼ cup butter
2 cloves garlic, crushed
2 cups heavy whipping cream
1 cup grated Parmesan cheese
½ cup grated Romano cheese
¼ cup ricotta cheese
2 tablespoons chopped fresh basil, or more to taste
salt and ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until tender yet firm to the bite, 8 to 10 minutes. Drain.
  • Melt butter in a saucepan over medium-low heat, about 2 minutes. Add garlic and cook until simmering, about 1 minute. Add heavy cream. Increase heat to medium and bring to a boil; simmer, stirring occasionally, until Alfredo sauce is reduced by half, about 20 minutes.
  • Slowly whisk lemon zest and juice into the Alfredo sauce to avoid curdling. Stir in Parmesan, ricotta, and Romano cheeses until melted, 2 to 3 minutes. Stir in basil, salt, and pepper; cook for 2 to 3 minutes more.
  • Pour the Alfredo sauce over the egg noodles.

This is a cream sauce that is usually served over grilled salmon, but I use it over veggies and/or pasta. Very easy to make, BUT very fattening!!

2 tablespoons butter
2 cloves garlic, minced
1 cup half-and-half
1 cup chicken broth
1/4 cup lemon juice
2 tablespoons cornstarch
1/2 teaspoon pepper
3 tablespoons chopped fresh basil

Steps:

  • MELT butter in a large skillet over medium-high heat; add garlic, and saute 1 to 2 minutes.
  • Add half-and-half and chicken broth.
  • Bring to a boil, and cook 8 minutes or until reduced by half.
  • WHISK together lemon juice and cornstarch until smooth.
  • Whisk lemon juice and 1/2 teaspoon pepper into butter mixture, and cook, whisking constantly, 2 minutes or until thickened.
  • Remove from heat.
  • DO NOT ADD BASIL UNTIL READY TO SERVE.
