Time 35m

Number Of Ingredients 4

6 large Gala apples ((also 12 small galas work) )
1-1/2 tsp. ground cinnamon
1/4 cup water
3 tbsp. brown sugar

Steps:

  • Using an apple slicer, cut apple into 8 pieces. Then peel off skins and continue to slice down apples into thinner slices. See article for image. Place all thin apple slices into sauce pan.
  • Add 1/4th cup water and ground cinnamon and mix well.
  • Heat sauce pan on medium low until mixture begins to boil, which takes just a few minutes so do not walk away from the pan.
  • Cover apples with lid and reduce heat to simmer.
  • Cook apples for about 20 minutes or until apples are mushy. Depending on how large your apples are, this could take up to 30 minutes or so.
  • Stir in brown sugar and mash with a potato masher to make a chunky apple sauce or vitamix blender or food processor if you would like it to be creamier
  • Makes 2 cups.

CHUNKY HOMEMADE APPLESAUCE

Chunky Homemade Applesauce image

This baked homemade applesauce is rich, tart and sweet -- almost like apple pie filling -- and a world apart from store-bought.

Provided by Jennifer Segal

Categories     Breakfast & Brunch

Time 1h

Yield About 4 cups

Number Of Ingredients 4

4 pounds apples (about 10), peeled, cored and cut into 1-inch chunks (I like a combination of McIntosh and Golden Delicious)
3 tablespoons unsalted butter, cut into ¼-inch chunks
¼ cup plus 2 tablespoons light or dark brown sugar, packed
Ground cinnamon, for serving (optional)

Steps:

  • Preheat the oven to 400°F.
  • Place the apples in a 9x13-inch baking dish. Scatter the brown sugar and chunks of butter evenly over top. Cover tightly with aluminum foil and bake for 45 to 50 minutes, tossing once halfway through, until the apples are very tender.
  • Mash the apples with a potato masher or fork. Taste; if the applesauce is too tart, add more brown sugar little by little until the flavors are balanced. (Note that no two batches will ever be the same; the flavor will depend on the tartness of the apples you use.)
  • Make-Ahead/Freezer-Friendly Instructions: The applesauce can be made up to 3 days ahead and refrigerated or frozen in an airtight container for up to 3 months.

  • Place quartered apples into a (lidded) pot, drizzle with lemon juice and add cider or water to cover the bottom of the pot. Less liquid added will result in thicker applesauce, but you will need to keep an eye on the pot to make sure it doesn't go dry. We usually use about 1/2 cup cider or water in an 8-quart pot. If the apples are really fresh and juicy - a little less liquid. If they are older and dry - a little more liquid.
  • Steam the apples on medium to medium high until tender, adding more liquid if needed. Apples are done when tender, but not completely falling apart, if you like a chunky applesauce. For a smoother consistency, cook longer. Different varieties of apples will cook differently, creating nice chunks in the finished applesauce!
  • Remove from heat and begin mashing the apples with a potato masher (or a wooden spoon if no masher is available), until desired chunkiness is attained.
