CHICKEN AND CAULIFLOWER STIR-FRY

Chicken and Cauliflower Stir-Fry image

A delicious mix of East meets West. Tasty, marinated chicken slices tossed with fresh cauliflower in a creamy mushroom sauce. Perfect over steamed rice. For best results, marinate the chicken overnight or at least 1/2 hour before cooking. This is a family-favorite from my kitchen to yours. Enjoy!

Categories     Meat and Poultry Recipes     Chicken     Chicken Thigh Recipes

Time 1h

Yield 6

Number Of Ingredients 17

¼ cup water
3 tablespoons light soy sauce
2 tablespoons canola oil
2 tablespoons cornstarch
1 tablespoon sesame oil
1 ½ teaspoons white sugar
¾ teaspoon salt
½ teaspoon garlic powder
1 (20 ounce) package skinless, boneless chicken thighs, sliced
1 head cauliflower, cut into florets
¼ cup canola oil for frying, or as needed
4 cloves garlic, smashed
1 cup water, or to taste, divided
1 (10.75 ounce) can cream of mushroom soup (such as Campbell's®)
¼ cup oyster sauce
¾ teaspoon white sugar
¾ teaspoon salt

Steps:

  • Stir 1/4 cup water, soy sauce, 2 tablespoons canola oil, cornstarch, sesame oil, 1 1/2 teaspoons sugar, 3/4 teaspoon salt, and garlic powder together in a large glass bowl until smooth. Stir chicken into the marinade to coat. Cover the bowl with plastic wrap and marinate chicken in the refrigerator for at least 30 minutes to overnight.
  • Bring a large pot of lightly salted water to a boil. Cook cauliflower florets in boiling water until just barely tender, 3 to 5 minutes. Drain cauliflower and immediately immerse in an ice water bath for several minutes until cold to stop the cooking process; drain.
  • Heat canola oil in a large wok or skillet over high heat until nearly smoking. Add garlic to the hot oil; sprinkle salt over the garlic. Cook garlic in hot oil, using a spoon to keep garlic pressed into the oil, until the cloves are dark brown, 2 to 3 minutes. Remove and discard garlic cloves.
  • Drain chicken and discard marinade. Stir chicken into the hot oil and let it cook undisturbed until browned, 3 to 5 minutes. Stir chicken. Pour 1/2 cup water over the chicken. Scrape bottom of wok with the flat edge of a wooden spoon to scrape any browned bits from the bottom of the wok into the liquid.
  • Pour cream of mushroom soup and remaining 1/2 cup water over the chicken; stir. Add oyster sauce, 3/4 teaspoon sugar, and 3/4 teaspoon salt to the chicken mixture. Stir cauliflower with the chicken and coat completely in sauce; cook and stir until the cauliflower is tender and the chicken is no longer pink in the center, 5 to 7 minutes.

AWESOME CHICKEN AND MUSHROOM STIR - FRY

Awesome Chicken and Mushroom Stir - Fry image

This is a recipe I found in The American Heart Association Cook book back when my DH was diagnosed with high blood pressure and also diabetes....it is so good I adapted it with every kind of meat. Excellent with beef or pork too. I change the broth accordingly...beef for beef and vegetable for pork. I am making this for Sunday...

Provided by Doreen Fish

Categories     Chicken

Number Of Ingredients 16

1 lb chicken breast halves, skinless and boneless
1 Tbsp grated peeled fresh ginger
1 Tbsp hot-pepper oil...i make my own
3 clove garlic, minced
1 tsp toasted sesame oil
2 Tbsp brown sugar
2 Tbsp chicken broth, non-fat, low sodium
2 Tbsp dry sherry
1 Tbsp low salt soy sauce
1 Tbsp plain rice vinegar
1 tsp corn starch
8 oz button mushrooms , sliced
1 medium red bell pepper, diced
1 medium zucchini, diced
1/2 medium onion sliced....i use 2 full onions as we love them
8 cherry tomatoes.

Steps:

  • 1. First off let me say I changed this recipe up to my liking....for starters I don't like cooked mushrooms so they were out, I didn't used zucchini either , I used broccoli and cauliflower. The taste is still the same as it is the marinade and cooking liquid that gives this stir fry its star quality. I always double or tripe these ingredients as we like to have extra sauce to drizzle over our steamed rice. I cut up all my veggies first and have it all ready. Cut up chicken, beef or pork and put in a large bowl.Mix together gingerroot, hot-pepper oil,, garlic and sesame oil (I double or triple this). Pour over meat and stir together well. Let marinate in fridge for at least 15 mins but longer if you can. I do it in the afternoon so it has a couple of hours for the flavors to really get in the meat. IN meantime mix together brown sugar, broth, soy sauce, vinegar, and cornstarch until sugar and cornstarch dissolve. (Again double or triple this if you like)Set aside. Heat a large frypan or wok over high heat. Throw in the meat with marinade and cook for 3 - 4 mins until lightly browned, stirring constantly. Stir in all the chopped veggies. Reduce heat to medioum-high and cook covered for about 5 mins or until veggies are cooked the way you like...we like crunchy....stirring occasionally. Stir in the chicken broth mixture and cherry tomatoes. Cook 3 - 4 mins or until sauce has thickened, stirring occasionally. Serve over steamed rice!!So yummy!!

Time 20m

Number Of Ingredients 16

10 oz. (300 g) boneless skinless chicken breast ((or thighs), sliced to 1/4" (5mm) thickness (about 1 chicken breast or 2 thighs))
1 tablespoon soy sauce
1 tablespoon Shaoxing wine ((or dry sherry))
1 tablespoon cornstarch
3 tablespoons oyster sauce
2 tablespoons Shaoxing wine ((or dry sherry))
2 tablespoons soy sauce
1/3 cup chicken stock
2 teaspoons sugar
2 teaspoons cornstarch
2 to 3 tablespoons peanut oil ((or vegetable oil))
1/2 lbs (225 g) mushrooms ((white or baby portabella))
1 cup sliced bamboo shoots (, drained)
3 cloves garlic (, chopped)
2 teaspoons ginger (, minced)
2 green onions (, chopped)

Steps:

  • Combine chicken and all the marinade ingredients in a big bowl. Stir to mix well. Let marinate for 15 minutes while preparing the other ingredients.
  • Combine all the sauce ingredients in a medium-sized bowl. Stir to mix well.
  • Heat oil in a large skillet over medium-high heat until hot. Spread the chicken in the skillet in a single layer. Sear until the bottom turns golden without moving it, 1 minute or so. Stir and flip to cook the other side, until turns golden, another minute or so. Transfer the cooked chicken pieces to a big plate and set aside.
  • Add the remaining 1 tablespoon oil and the mushrooms. Cook and stir until the mushrooms are cooked through and the liquid evaporated.
  • Add the bamboo shoots, garlic, ginger, and onion. Drizzle with a bit more oil if the pan looks dry. Stir and cook for a minute.
  • Stir the sauce again to thoroughly dissolve the cornstarch and pour it into the pan. Stir a few times until the sauce thickens.
  • Add the chicken back into the skillet. Stir to coat everything well with the sauce. Immediately transfer everything to a big plate.
  • Serve hot over steamed rice as a main dish.

  • In a small bowl, combine all of the sauce ingredients and whisk to dissolve sugar and corn starch (warm broth will help dissolve the sugar faster). Set sauce aside.
  • Cut chicken into small bite-sized pieces (no more than 3/4” thick) and season lightly with pepper. Heat a large heavy skillet or wok over medium-high heat. Add 1 Tbsp oil. Add chicken in a single layer and let it sit undisturbed for 1 minute to get a good sear then stir fry for another 5 minutes or until golden brown just cooked through then remove to a bowl and loosely cover to keep warm.
  • In the same skillet, add another 1 Tbsp oil along with broccoli florets, sliced onion and sliced mushrooms. Stir fry 3 minutes or until mushrooms are softened and broccoli is crisp-tender then reduce heat to medium/low.
  • Give the sauce a quick stir in case there was any settling of starch and pour all of it over the vegetables. Simmer 3-4 minutes or until sauce is thickened and garlic and ginger are mellowed in flavor. To thin the sauce, add water a tablespoon at a time.
