1 teaspoon paprika
¾ teaspoon dried thyme
¾ teaspoon dried oregano
¼ teaspoon garlic powder
¼ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon cayenne pepper, or more to taste
1 ½ pounds large shrimp, peeled and deveined
1 tablespoon vegetable oil

Steps:

  • Combine paprika, thyme, oregano, garlic powder, salt, pepper, and cayenne pepper in a sealable plastic bag; shake to mix. Add shrimp and shake to coat.
  • Heat oil in a large non-stick skillet over medium high heat. Cook and stir shrimp in hot oil until they are bright pink on the outside and the meat is no longer transparent in the center, about 4 minutes.

½ cup olive oil (I have reduced this to 1/3 cup with good results)
2 Tbsp. Cajun Seasoning (*see below for homemade version)
2 Tbsp. lemon juice
2 Tbsp. chopped parsley or cilantro (more is good)
1 Tbsp. Crosby's Fancy Molasses
1 Tbsp. soy sauce
Dash of Worcestershire sauce
1 lb. shrimp, peeled
1 tsp thyme
1/2 tsp rosemary
2 tsp paprika
1/4 tsp smoked paprika
1 clove garlic
1/4 onion, minced
1 bay leaf
pinch cayenne pepper

Steps:

  • Combine marinade ingredients in a large baking dish and add the shrimp, tossing to coat well.
  • Let the shrimp rest in the marinade for 20-30 minute (optional)
  • Bake at 450 for about 10 minutes, or until shrimp are pink.

I had some croissants left over that I wanted to use, some jumbo shrimp, so I tweaked another one of my shrimp recipes and this is what I came up with. Nothing fancy, but packed full of flavor. This was one delicious, satisfying sandwich. Quick too, that's always a plus! Enjoy!

12 oz raw jumbo shrimp deveined and shells removed - rinse and pat dry
1 tsp paprika
1/4 tsp each, cayenne pepper, garlic powder, salt, pepper
3/4 - 1 tsp dried thyme
2 Tbsp butter - divided
1 Tbsp olive oil
2 used large croissants - use what suits you
condiments we used lettuce & mayonnaise, as we didn't want to lose the flavor of the shrimp
SPICY GARLIC MAYO - WOULD BE GREAT ON THIS SANDWICH
1/2 c mayonnaise
2 clove garlic, minced or can use jarred
1 tsp dried onion flakes
1/4 - 1/2 tsp cumin
salt & pepper to taste

Steps:

  • 1. Place the slices in a small bowl and mix well to combine.
  • 2. Clean shrimp and pat dry. Place in a dish and pour the seasoning over and mix well, making sure to coat each evenly. ( I use my fingers )
  • 3. In my cast iron skillet, over medium heat, I melted 1 tablespoon butter with the olive oil. Once butter is frothy, add the shrimp. Tossing frequently after the first minute until all are pink and cooked through. Once cooked stir in the last tablespoon butter and stir around. This is for some extra sauce to drizzle over the shrimp.
  • 4. Slice your croissants, lay lettuce on the bottom halve and place desired shrimp to cover. Spread top of croissant with mayonnaise. ( aoli would be great as well , was too lazy to make) mayo was just as good. Add any other desired condiments you prefer.I went simple as the shrimp are so tasty I didn't want to mask their flavor. Place the top of croissant back over the shrimp and chow down. These were awesome!
  • 5. As I said before I will triple the recipe the next time. Believe me, they won't go to waste. They are great eaten straight from the pan.
  • 6. I've since added my spicy mayo that I think would also go well with this yummy sand. Mix all ingredients and chill for an hour.

3 tablespoons rendered bacon fat
3 tablespoons all-purpose flour
2 cups chopped stewed tomatoes
⅛ cup tomato sauce
6 tablespoons minced onion
6 tablespoons chopped green bell pepper
1 ½ tablespoons chopped fresh parsley
1 clove crushed garlic
1 ½ cups hot water
2 teaspoons salt
¼ teaspoon ground black pepper
7 ounces frozen, peeled and deveined shrimp

Steps:

  • Melt bacon fat in a large skillet over medium heat. Stir in the flour and cook until browned, stirring constantly to make a brown roux (see Editor's Note). Stir tomatoes, tomato sauce, minced onion, green pepper, parsley, garlic, water, salt and pepper into the roux. Bring sauce to a boil, then reduce heat to medium-low, and simmer for 20 minutes. Add shrimp to mixture and cook until the shrimp turn pink, and have turned opaque in the center.

Number Of Ingredients 17

1 whole chicken, cut into 8 pieces
3 pounds okra
1 cup butter, divided
1 onion, chopped
1 green bell pepper, chopped
3 stalks celery, chopped
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
2 bay leaves
2 garlic cloves, minced
1 pound sausage, cooked and cut into 1/2 inch pieces
1 pound ham, cooked and cubed
1 pound small or medium shrimp, washed and deveined
1 pound crab meat, cleaned
File powder
Hot pepper sauce
Cooked rice, for serving

Steps:

  • Boil chicken pieces in 1 gallon of lightly salted water for approximately 1 hour, or until done. Reserve the chicken broth for the base of the gumbo.
  • Wash okra and dry with a paper towel. Cut off the ends of the okra and slice into round pieces. Saute the pieces in a skillet with 1/2-cup of the butter until all of the slime has left the okra. This takes 1/2 hour to 45 minutes. You must stir the okra throughout this process to keep it from sticking to the bottom of the pan.
  • Saute the onion, green pepper, and celery in remaining 1/2-cup butter until lightly browned. Place the cooked okra and onion mixture into the chicken broth. Add the basil, thyme, bay leaves, and garlic to the broth. Bring to a boil and let simmer for 15 minutes.
  • Remove skin and bones from chicken, and cut into bite sized pieces, and set aside. Add the chicken, sausage, and ham to the broth at the same time. Return mixture to a boil. Add the shrimp and crabmeat, and cook for another 5 minutes. Season with file, black pepper, and hot pepper, to taste.
  • Serve with rice.

This spicy Cajun gumbo, a stew originating in Louisiana in the 18th century, gains much of its flavor from the dark roux and its characteristic thickness from file, an herb made from the ground leaves of the sassafras tree. Onions, celery and green peppers, the "holy trinity" of both Creole and Cajun cooking, add flavor and substance to the thick shrimp and sausage stew, which is served over a heaping portion of white rice.

4 ounces vegetable oil
4 ounces all-purpose flour
1 1/2 pounds raw, whole, head-on medium-sized (31-50 count) shrimp
2 quarts water
1 cup diced onion
1/2 cup diced celery
1/2 cup diced green peppers
2 tablespoons minced garlic
1/2 cup peeled, seeded and chopped tomato
1 tablespoon kosher salt
1/2 teaspoon freshly ground black pepper
1 teaspoon fresh thyme, chopped
1/4 teaspoon cayenne pepper
2 bay leaves
1/2 pound andouille sausage, cut into 1/4-inch pieces and browned
1 tablespoon file powder

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the vegetable oil and flour into a 5 to 6-quart cast iron Dutch oven and whisk together to combine. Place on the middle shelf of the oven, uncovered, and bake for 1 1/2 hours, whisking 2 to 3 times throughout the cooking process.
  • While the roux is baking, de-head, peel and devein the shrimp. Place the shrimp in a bowl and set in the refrigerator. Place the heads and shells in a 4-quart saucepan along with the 2 quarts of water, set over high heat and bring to a boil. Decrease the heat to low and simmer for 1 hour or until the liquid has reduced to 1-quart. Remove from the heat and strain the liquid into a container, discarding the solids.
  • Once the roux is done, carefully remove it from the oven and set over medium-high heat. Gently add the onions, celery, green peppers and garlic and cook, moving constantly for 7 to 8 minutes or until the onions begin to turn translucent. Add the tomatoes, salt, black pepper, thyme, cayenne pepper, and bay leaves and stir to combine. Gradually add the shrimp broth while whisking continually. Decrease the heat to low, cover and cook for 35 minutes. Turn off the heat, add the shrimp and sausage and stir to combine. Add the file powder while stirring constantly. Cover and allow to sit for 10 minutes prior to serving. Serve over rice.
