Mmm! Buttery rich homemade cookies and all you need to make them is six simple ingredients.

1/4 cup butter or margarine, softened
1/4 cup shortening
1/4 cup packed brown sugar
2 tablespoons granulated sugar
1 cup plus 2 tablespoons Gold Medal™ all-purpose flour
1/4 teaspoon salt

Steps:

  • Heat oven to 300°F. In large bowl, beat butter, shortening and sugars with electric mixer on medium speed until creamy, or mix with spoon. Stir in flour and salt. (Dough will be dry and crumbly; use hands to mix completely.)
  • Roll dough into 9x6-inch rectangle on lightly floured surface. Cut into 1 1/2-inch squares. Place about 1 inch apart on ungreased cookie sheet.
  • Bake cookies about 25 minutes or until set. Remove from cookie sheet to wire rack.

1 cup butter, softened
1/2 cup confectioners' sugar
1 teaspoon vanilla extract
1-3/4 cups all-purpose flour
1/2 cup cornstarch
1/4 teaspoon salt
1/2 cup butterscotch chips, finely chopped
1/2 cup milk chocolate English toffee bits

Steps:

  • In a large bowl, cream butter and confectioners' sugar until light and fluffy. Beat in vanilla. Combine flour, cornstarch and salt; gradually add to creamed mixture and mix well. Fold in butterscotch chips and toffee bits. Cover and refrigerate 1 hour or until easy to handle., Preheat oven to 350°. On a lightly floured surface, roll out dough to 1/4-in. thickness. Cut with a floured 2-in. fluted round cookie cutter. Place 1 in. apart on ungreased baking sheets. , Bake 10-12 minutes or until lightly browned. Remove to wire racks. ,

With a light crumb and buttery taste, these easy shortbread bars have real butterscotch pieces in every bite. This recipe for Butterscotch Shortbread Bars is as deliciously easy as it gets!

1 cup unsalted butter
1 cup powdered sugar
2 cups all purpose flour
1/2 teaspoon kosher salt
1 large egg
1 cup butterscotch morsels

Steps:

  • In a small saucepan on medium-low heat, melt butter. Bring to a boil and allow to brown for 1-2 minutes. Remove from heat, allow to cool for a few minutes.
  • In a large mixing bowl, add melted butter with powdered sugar, mix completely. Add flour and salt. Mix together (will be crumbly). Add in egg and butterscotch, mix until completely combined.
  • Line a 15x10x1 baking sheet with parchment paper. Place dough on baking sheet and press (with palms of hand) to about 1/4 inch thick. Shape into a rectangle (doesn't have to touch side of pan). Mine was about 12x10.
  • Bake in a 350 degree oven for 20-25 minutes, until lightly browned. Remove from oven and cool about 5 minutes. Using a sharp knife, make slices into cookies about 3-inch x 1-inch. Don't separate, allow to cool completely.
  • When cooled, separate cookie bars (using knife if necessary). Store in air tight container for one week. ENJOY!

3 tablespoons brown sugar
1/4 teaspoon baking powder
3/4 cup butter
1/3 cup sugar
1/3 cup packed brown sugar
1/3 cup light corn syrup
1 tablespoon water
1/4 teaspoon salt
1/2 cup coarsely chopped cashews
1/4 cup whipping cream
1 teaspoon vanilla

Steps:

  • Line a 9-inch square baking pan with foil, extending foil over edges of pan.
  • Butter foil; set pan aside.
  • In a bowl, combine flour, 3 tablespoons brown sugar, and baking powder; use a pastry blender and cut in ½ cup butter until mixture resembles coarse crumbs.
  • Press mixture into bottom of prepared pan; bake at 350° for about 25 minutes or until golden brown.
  • In a saucepan, melt the remaining ¼ cup butter; stir in sugar, brown sugar, corn syrup, water, and salt.
  • Stir in cashews; bring mixture to boiling over med-high heat, stirring constantly.
  • Boil, uncovered, for 5 minutes, stirring often.
  • Remove pan from heat; stir in whipping cream and vanilla.
  • Spread butterscotch mixture evenly over baked crust.
  • Bake 12-15 minutes more or until most of the surface is bubbly.
  • Cool completely in pan on a wire rack.
  • Using foil, lift bars out of pan; carefully peel foil from sides of bars; cut into bars.
  • To store: place in layers separated by waxed paper in an airtight container; cover; store at room temperature up to 3 days or freeze up to 3 months.

1 1/4 cups graham cracker crumbs
1/4 cup sugar
6 tablespoons melted butter
6 oz. cream cheese, softened
3/4 cup powdered sugar
1 8- oz Cool Whip (divided)
1 3/4 cup milk
1 small pkg. instant butterscotch pudding
Cool Whip (4 oz)
Toffee bits, optional

Steps:

  • Mix together graham cracker crumbs, sugar and melted butter. Press mixture into the bottom of a buttered 9×9 baking dish.
  • In a medium bowl, beat cream cheese and powdered sugar using a hand mixer. Fold in half (4 oz) of the Cool Whip. Spread over graham cracker crust.
  • Combine the milk and pudding mix and whisk together for 1 to 2 minutes, or until smooth and thickened. Pour over cream cheese layer.
  • Spread remaining Cool Whip on top and sprinkle with toffee bits (if desired). Refrigerate for several hours before serving. Store in refrigerator.

This is a compilation of several Shortbread recipes I have from British cookbooks. I have been to England three times and REAL shortbread is a favorite. It should use real butter and not be TOO sweet.

¼ cup white sugar
½ cup unsalted butter
1 cup all-purpose flour
⅓ cup white rice flour

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Line a baking sheet with greaseproof (parchment) paper. Sift the flour and rice flour into a medium mixing bowl. Add the sugar and mix.
  • Cut butter into pieces and rub into the flour with your fingertips until the mixture begins to bind together. Knead into soft dough.
  • Roll the dough into an 8 inch round (or for exact round, mold it in an 8 inch cake pan). Place on baking sheet. Using a fork, prick top and make tine marks along edge. Using a table knife, score top with wedge marks. (This is where it will break when cooled)
  • Bake 45 minutes or until pale golden in color. Sprinkle a little superfine sugar over top and cool on baking sheet. Cut into wedges. Keeps for weeks in airtight tin.

1/4-1/2 cup cup margarine or 1/4-1/2 cup cup butter, softened
1/2 cup shortening (at room temp.)
1/2 cup packed brown sugar
1/4 cup sugar
2 1/4 cups all-purpose flour
1 teaspoon salt

Steps:

  • Preheat oven to 300 degrees.
  • In a large bowl, mis margarine, shortening, and sugars with mixer until blended and creamy.
  • Stir in flour and salt.
  • (You can adjust the amount of flour- add most and then add little by little until point where the dough is not TOO crumbly or dry. If not, just add all at once. Use your hands to mix completely.) Roll dough out on lightly floured surface, about 1/8- 1/4 inch thickness, depending on how thin and crispy you want the cookies.
  • Cut with cookies cutters and place about 1 inch apart on ungreased cookies sheet (You can also roll dough into a 15 by 7 1/2 inch rectangle and cut into 1 1/2 inch squares).
  • Bake about 25 minutes or until set.
  • Cookies will not expand or brown much, so make sure you watch them so they don't get too browned- they will taste slightly burnt.
  • Remove cookies from sheet and let cool.
  • Store once cooled.
