WORLD'S BEST POTATO SALAD
This is the creamiest, richest potato salad you will ever try. The secret is in the homemade dressing. I get nothing but raves every time I make this.

Steps:
- Place the potatoes into a large pot, and fill with enough water to cover. Bring to a boil, and cook for about 20 minutes, or until easily pierced with a fork. Drain. Cool, peel and dice. Transfer to a large bowl, and toss with the onion, celery, 1 teaspoon of salt, and hard-cooked eggs.
- While the potatoes are cooking, whisk together 2 eggs, sugar, cornstarch, and salt in a saucepan. Stir in the vinegar, milk, and mustard. Cook over medium heat, stirring frequently, until thickened, about 10 minutes. Remove from heat, and stir in the butter. Refrigerate until cool, then stir in the mayonnaise.
- Stir the dressing into the bowl of potato salad gently until evenly coated. Chill several hours or overnight before serving for best flavor.

- Cut potatoes into 1/2-in. cubes; place in a large Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until tender. Drain and cool to room temperature., Cut eggs in half; chop egg whites and set aside. In a small bowl, mash egg yolks. Stir in the sour cream, mayonnaise, salt, mustard, garlic powder and pepper; set aside. , In a large bowl, combine the potatoes, bacon, egg whites, celery, onions and Italian dressing. Fold in mayonnaise mixture. Cover and refrigerate for at least 2 hours before serving.

- 1. Cut potatoes into cubes and place in microwaveable dish. Season with lemon pepper, garlic salt, and onion powder. Add 1 tablespoon vegetable oil. Cover and mircowave on high for 10 minutes.
- 2. While potatoes are cooking, use kitchen shears to dice bacon into small pieces; place in a small skillet. Cook bacon until brown and crispy. Remove bacon and let drain on paper towel lined plate.
- 3. Stir potatoes, cover and microwave for another 5 minutes on high, or until potatoes are tender.
- 4. Remove potatoes from microwave; stir in bacon and the remaining ingredients. Cover and let chill.

LOADED BAKED POTATO SALAD
Steps:
- Place the quartered new potatoes in a medium-size saucepan and cover with water. Add 1 tsp salt. Bring to a boil and cook for 15 minutes or until fork tender.
- Drain in a colander and allow to cool for 5 minutes while you make the dressing.
- In a large mixing bowl whisk together the mayonnaise, sour cream, buttermilk, dry Ranch salad dressing mix, lemon pepper and black pepper.
- Add the potatoes, bacon and green onion. Toss to coat. (Reserve 2 Tbsp each of bacon and green onion for garnishing)
- Chill for about 20-30 minutes then add 1 1/4 cup shredded cheese. Mix well.
