ITALIAN MEATLOAF WITH FRESH BASIL AND PROVOLONE
Meatloaf sandwiches are one of the best reasons to make this dish. Serve leftover slices on sourdough bread with mayonnaise, Dijon mustard, leaf lettuce and red onions.

Steps:
- Combine boiling water and tomatoes in a bowl; let stand 30 minutes, or until soft.
- Drain the tomatoes and finely chop.
- Preheat the oven to 350°F.
- Combine ketchup, breadcrumbs, and the next 6 ingredients in a large bowl.
- Add the tomatoes to the meat mixture.
- Shape the meat mixture into a 9x5-inch loaf on a broiler pan, coated with cooking spray.
- Spread 1/3 cup ketchup over meatloaf.
- Bake at 350°F degrees for 1 hour.
- Let stand 10 minutes before slicing 12 slices.
- Serves 6.

MOM'S ITALIAN MEATLOAF

Steps:
- Soak bread in milk.
- Add salt pepper, thyme, 1/2 t. basil, 1/4 cup tomato sauce and stir with fork to break up the bread cubes.
- Cook onions in butter for 5 minutes or until soft and add to bread mixture.
- Mix lightly with fork.
- Add in ground beef and mix with hands if needed.
- Turn into loaf pan.
- Bake at 350°F for 1 hour; then drain fat.
- Turn into shallow baking dish.
- Combine remaining tomato sauce and basil. Spoon over loaf.
- Sprinkle with cheese.
- Bake 15 more minutes.
- Enjoy!

The filling makes the meat loaf interesting, reminds me of a pastaless lasagna. It was yummy. Came from BH&G "New" Cookbook (1968). I used Whole Wheat Triscuits.

- Preheat oven to 350 degrees Fahrenheit.
- PREPARE MEAT MIX:.
- In a large bowl, combine 1/2 cup medium cracker crumbs (about 11 crackers), ground beef and ground pork, tomato paste, eggs, finely chopped onion, finely chopped green pepper, salt and dash of pepper. Mix well.
- Pat half of the meat mixture into the bottom of an 8x8x2-inch baking pan lightly coated with olive oil.
- PREPARE FILLING:.
- Combine 1/2 cup medium cracker crumbs, small-curd cottage cheese, one 3-ounce can of chopped mushrooms, drained (about 1/2 cup), snipped parsley, and dried oregano (crushed between fingers).
- Spread filling mixture evenly over meat in pan.
- Top with remaining meat mixture.
- Bake in moderate oven (350 degrees Fahrenheit) for 1 hour.
- Let meat loaf stand 10 minutes before serving.
- Makes 8 servings.

- Heat oven to 350 degrees. In a large bowl, whisk eggs, garlic, scallions, jalapeño, sage, salt and black pepper.
- In a separate bowl, stir together bread crumbs and stock, cream or milk. Let stand five minutes.
- Add pork, beef and soaked bread crumbs to egg mixture. Knead ingredients together until just combined. Press mixture evenly into an 8- or 9-inch loaf pan. Bake for 55 minutes.
- Meanwhile, whisk together the tomato paste and olive oil. After meatloaf has finished baking, brush top with glaze; sprinkle with pine nuts, if using. Bake 15 minutes more (glaze will be thick and a meat thermometer should read 160 degrees). Let meatloaf rest for 10 minutes before slicing and serving.

- Preheat oven to 350 degrees F.
- Heat 1 tablespoon of the olive oil in a medium saute pan over medium heat and add the peppers, onions and garlic. Saute until just soft, remove to a plate and cool.
- When the peppers and onions are cool, combine all of the remaining ingredients together except for the marinara. Pack the meat mixture into an oiled loaf pan, if you do not have a loaf pan, form the meat mixture into a loaf shape on an oiled oven tray or baking dish. Top with the marinara making sure to spread evenly over the top.
- Bake for approximately 50 to 60 minutes or until an instant-read thermometer registers 160 degrees F in the middle of the meatloaf. Remove from the oven and let rest for 5 minutes. Slice and serve.

Steps:
- Preheat your oven to 350.
- In your food processor, pulse the onion, carrots, garlic, and horseradish until fine. Add to ground beef.
- Pulse the dry ingredients: croutons, chili powder, salt, & peppers, and add them to bowl with meat and veggies and mix.
- Mold into a loaf shape with your hands in a pan that has a lip and place in oven.
- Mix together remaining ingredients ( ketchup, honey, cumin, Worcestershire, and Louisiana hot sauce).
- After 15 mins, start basting loaf with mixture.
- The meatloaf is done when the temperature reaches 160 about 40 min.
