2 tbsp butter
1 tbsp oil
1 cup onion, (finely chopped)
1 cup celery, (finely chopped)
1/2 cup gluten-free flour blend, (or all-purpose flour)
2 8 oz. jars natural clam juice
4 cups organic chicken or vegetable stock
3 large potatoes, (peeled and cubed into 1/2 inch cubes)
1 medium carrot, (peeled and diced)
1 tbsp fresh thyme leaves (or 1 teaspoon dried thyme,)
1 bay leaf
1/2 tsp smoked paprika (or regular paprika)
4 oz hot-smoked salmon, (skin removed)
8 oz wild salmon, (skin and pin bones removed, cut in bite-sized pieces)
8 oz wild white fish, (like halibut, cod, haddock, or sole, skin and pin bones removed, cut in bite-sized pieces)
16 - 24 large shrimp, (or prawns, peeled and deveined)
12 scallops, (optional)
1/4 cup white wine
1 tbsp lemon juice, (freshly squeezed)
1 or 2 tsp crushed red pepper flakes
1 cup 10% cream ((called "half and half" in Canada))
1 tbsp fresh dill (chopped, plus more for garnish)

Steps:

  • In a large pot or stock pot, heat butter and oil over medium heat. Add the onions and celery and cook until soft and transparent but not browned, about 5 minutes.
  • Stir in the flour, making a roux, then add the broth and the clam nectar. Add the potatoes, carrots, thyme, bay leaf and paprika. Reduce heat to medium, cover, and cook for 15 minutes or until potatoes are tender but not mushy.
  • Add the seafood, wine and seasonings, stir gently and cook uncovered for about 10 minutes.
  • Gently stir in the cream, being careful not to let to boil after this is added. Remove the bay leaf.
  • Garnish with more fresh dill and serve hot.

1/2 pound sliced bacon, diced
2 medium onions, chopped
6 cups cubed peeled potatoes
4 cups water
1 pound bay or sea scallops, quartered
1 pound lobster meat, cut into 1-inch pieces
1 pound uncooked medium shrimp, peeled and deveined
1 pound cod, cut into 1-inch pieces
1 pound haddock, cut into 1-inch pieces
1/2 cup butter, melted
4 teaspoons salt
4 teaspoons minced fresh parsley
1/2 teaspoon curry powder
2 quarts whole milk
1 can (12 ounces) evaporated milk
Oyster crackers, optional

Steps:

  • In a large soup kettle or Dutch oven, cook bacon over medium heat until crisp. Remove with a slotted spoon to paper towels; reserve drippings. Saute onions in drippings until tender. Add potatoes and water; bring to a boil. Cook for 10 minutes., Add the scallops, lobster, shrimp, cod and haddock. Cook for 10 minutes or until scallops are opaque, shrimp turn pink and fish flakes easily with a fork. Add the butter, salt, parsley and curry powder. Stir in milk and evaporated milk; heat through. Garnish with bacon, additional parsley, and oyster crackers, if desired.

I was asked to make a seafood chowder as the appetizer for a meal. This is the recipe I pulled together and it was a hit! Several of the participants offered to take care of the leftovers! I poured the remaining soup into a glass jar and left it for them to sort out. Secretly " I " wanted to take it home! You can add whatever seafood you like such as clams, mussels, scampi, crawfish, crab, etc. Clams and mussels look amazing if cooked in the shell. If you are cutting the recipe in half, or want to reduce the cost, you may wish to increase the potato, use more fish and buy a frozen seafood mix rather than buying each seafood individually. Our family likes a thick soup but if you prefer something a little lighter, you can thin the soup out with milk or cream. Diet food this is not!

4 slices bacon
1 tablespoon butter
2 organic carrots, diced into 1/4 inch cubes
1 large sweet onion (such as vidal)
2 celery ribs, diced into 1/4 inch cubes
1 large russet potato, peeled and diced into 1/2 inch cubes
3 tablespoons flour
500 ml chicken stock
250 g scallops
250 g shrimp
2 lobster tails, cut meat into 1 inch cubes
250 g haddock
250 ml cream, 10%
2 (294 ml) cans cream of potato soup

Steps:

  • Place large pot on medium-low heat. Add bacon and gently cook until it hits the crisp stage.
  • Meanwhile, parboil potato in lightly salted water for about four minutes.
  • Mix cream and potato soup together in a bowl.
  • Remove bacon, chop it finely or crumble it and set aside.
  • Add to the pot of bacon drippings, the butter, carrots, onion, and celery. Cook stirring frequently until onions are translucent and vegetables are tender. Add flour and cook for about a minute or until the flour starts to stick to the bottom of the pan. Add chicken stock, 30 to 50 ml at a time, stirring constantly to make a smooth, creamy soup base. Add more chicken stock than recommended if you find it a little too thick.
  • Turn up heat to medium and add the raw seafood. Bring to a simmer and cook for three to five minutes, or until shrimp are pink and have curled into a tight "c".
  • When shrimp are pink, add potato soup mixture. Gently stir. Thin out soup with cream or milk if you find it too thick. When it starts to simmer, remove from heat.
  • Serve with crumbled bacon pieces as a garnish and crusty bread as a side.

1 pound large shrimp (32 to 36 per pound), peeled and deveined (save shells for stock)
1/2 pound scallops
1/2 pound monkfish
1/2 pound fresh lump crabmeat, picked over to remove shells
1/4 pound unsalted butter
1 cup peeled and medium-diced carrots (4 carrots)
1/2 cup medium-diced yellow onion (1 onion)
1 cup medium-diced celery (3 stalks)
1 cup medium-diced small white or red potatoes
1/2 cup corn kernels, fresh or frozen
1/4 cup all-purpose flour
1 recipe Seafood Stock, recipe follows
1 1/2 tablespoons heavy cream (optional)
2 tablespoons minced parsley
Salt and freshly ground black pepper to taste
2 tablespoons good olive oil
Shells from 1 pound large shrimp
2 cups chopped yellow onions (2 onions)
2 carrots, unpeeled and chopped
3 stalks celery, chopped
2 garlic cloves, minced
1/2 cup good white wine
1/3 cup tomato paste
1 tablespoon kosher salt
1 1/2 teaspoons freshly ground black pepper
10 sprigs fresh thyme, including stems

Steps:

  • Cut the shrimp, scallops, and monkfish into bite-sized pieces and place them in a bowl with the crabmeat.
  • In a heavy-bottomed pot, melt the butter; add the carrots, onions, celery, potatoes, and corn and saute over medium-low heat for 15 minutes, or until the potatoes are barely cooked, stirring occasionally. Add the flour; reduce the heat to low and cook, stirring often, for 3 minutes. Add the Seafood Stock and bring to a boil. Add the seafood; reduce the heat and simmer, uncovered, for 7 to 10 minutes, until the fish is just cooked. Add the heavy cream, if desired, and the parsley. Add salt and pepper to taste, and serve.
  • Warm the oil in a stockpot over medium heat. Add the shrimp shells, onions, carrots, and celery and saute for 15 minutes, or until lightly browned. Add the garlic and cook 2 more minutes. Add 1 1/2 quarts of water, the white wine, tomato paste, salt, pepper, and thyme. Bring to a boil, then reduce the heat and simmer for 1 hour. Strain through a sieve, pressing the solids. You should have approximately 1 quart of stock. You can make up the difference with water or wine if you need to.

3 ounces vegetarian bacon, diced
1 cup onion, diced
1 cup celery, diced
3 cups new potatoes, cooked firm and diced
4 cups evaporated skim milk
1 1/2 cups clams, chopped
1/3 cup flour
1/2 cup fat-free half-and-half
3 ounces Smart Balance butter spread
2 ounces clam base
1 1/4 cups clam juice
1 garlic clove, minced
1 teaspoon marjoram
2 teaspoons fresh basil, chopped
1 teaspoon italian seasoning
1/4 teaspoon dill
1/2 teaspoon thyme
2 bay leaves
1/8 cup fresh parsley
white pepper
black pepper
cayenne, to taste

Steps:

  • In a large stock pot cook bacon until crisp.
  • Add butter, onions, celery and all the seasoning except dill and parsley. Cook until tender.
  • Add flour and cook for another 3-4 minutes over low heat.
  • Add all the dairy products, clam juice and clam concentrate.
  • Heat until just under boiling point and then add chopped clams and potatoes.
  • Bring to a boil slowly, cook for 2-3 minutes.
  • Add dill and parsley and serve steaming.
