AVOCADO WRAPPED IN PROSCIUTTO
Adapted from BHG "Holiday Appetizers" magazine. The dressing can be made ahead and kept in the fridge, but don't prepare the avocados until just before serving or they will turn brown.

Steps:
- Combine oil,lemon juice,garlic, oregano, and pepper in a container with a tight lid (such as a jar) and set aside.
- Cut avocados into halves, remove pit, and peel each half carefully.
- Slice each avocado half into 4 wedges and wrap a proscuitto strip around each in the center.
- Shake the dressing if the ingredients have settled and test for flavor-adjust seasonings if needed (although proscuitto is often very salty- be careful not to add salt unless you really like things very salty).
- Set on a serving platter and drizzle with some of the dressing (as much or as little as desired).
- Serve immediately as avocados brown quickly once cut.

- Wrap each avocado slice with a slice of prosciutto. Sprinkle with olive oil, lemon juice, salt and pepper and serve.
AVOCADO TOAST WITH POACHED EGGS & PROSCIUTTO
Breakfast for dinner just got a whole lot tastier. When I was a kid, there was nothing more exciting than the novelty of having pancakes for dinner. I still get a thrill out of indulging in the occasional meal swap, only now I do it in the form of avocado toast with poached eggs.

Steps:
- 1. In a pot of boiling water, add a Tbsp of vinegar and gently swirl the water in one direction. Carefully drop the eggs one at a time and poach for 2-4 minutes or until desired doneness.
- 2. Meanwhile cut the avocados in half, remove stones and scoop out the flesh into a bowl. Mash with a fork and squeeze in fresh lemon or lime juice and salt and pepper.
- 3. Smear toast with avocado, and top with lettuce, tomatoes, prosciutto and the poached egg. Top with sea salt and freshly cracked black pepper and serve immediately.
- 4. ENJOY!
