AVOCADO LIME SALAD

A great vegan salad using avocado, tomatoes and scallions. Adapted from Vegetarian Times magazine. A popular Spanish and Mexican recipe.

Number Of Ingredients 12

3 tablespoons fresh lime juice (1 large lime)
1/2 teaspoon salt, plus
1/8 teaspoon salt
4 small tomatoes, cut in 3/4-inch pieces (2 1/2 cups)
2 medium ripe avocados, cut into 3/4-inch dice (1 1/2 cups)
3 scallions, thinly sliced (white and green parts)
1 large garlic clove, minced
1 tablespoon extra virgin olive oil
1/4 teaspoon ground cumin
1 head boston lettuce, torn into large pieces (8 cups)
1 medium cucumber, peeled, quartered lengthwise, seeded and thinly sliced diagonally (1 cup)
2 tablespoons coarsely chopped fresh cilantro

Steps:

  • In a medium glass or ceramic bowl, whisk together 2 tablespoons lime juice and 1/2 teaspoon salt.
  • Add tomatoes, avocados, scallions and garlic.
  • Using rubber spatula, gently fold to combine.
  • Season to taste with pepper.
  • In large bowl, whisk together olive oil, cumin, remaining tablespoon lime juice and 1/8 teaspoon salt.
  • Add lettuce and toss.
  • Season to taste with pepper.
  • Divide lettuce among plates.
  • Top each with mound of avocado mixture.
  • Top with cucumber slices.
  • sprinkle with cilantro and serve.

Papaya, Shrimp and Avocado Salad with Chile-Lime image

2 papaya, cut in half lengthwise, seeds removed
1 cup cooked rock shrimp or other cooked shrimp chopped in small pieces
1 avocado, peeled and cut in small dice
3 jalapeno chiles, seeded, minced
1 large red onion, cut in very small dice
1 mango, peeled, cut in small dice
1/4 cup chop cilantro
2 limes, juiced
1/4 cup olive oil
Salt and pepper

Steps:

  • Partially scoop out the meat from the papaya, leaving about a 1/2 inch layer of fruit and cut the removed papaya in small dice.
  • Combine with the remaining ingredients and spoon back into the papaya shells. Chill for up to 2 hours or enjoy immediately.

2 ripe Haas avocados
2 limes
1 teaspoon sugar
1 teaspoon chili powder
1/2 teaspoon salt
3 tablespoons extra-virgin olive oil
Chopped chives or cilantro for garnish, optional

Steps:

  • Halve avocados and remove pit. Roll limes or heat in microwave for 10 seconds to get juices flowing. Halve the limes. Rub the avocado halves gently with 1/2 lime to retard the browning. Juice limes into small bowl and mix with sugar, chili powder and salt using a fork or small whisk. Add extra-virgin olive oil in a slow stream while mixing dressing. Pour dressing into the cavities of avocados, distributing it equally and serve. Garnish with chives or cilantro as an optional garnish.

1/4 cup chopped fresh cilantro
3 tablespoons fresh lime juice
4 lime-flavored (or plain) tortilla chips
1/4 cup store-bought salasa

  • Pulse avocados, onion, garlic, chile, salt and cumin in a food processor until pureed. Add yogurt and cilantro; pulse until well combined. Transfer avocado mixture to a bowl. Stir in 1/2 cup ice water and lime juice. (Thin with more water, if desired.) Cover and chill until cold, 1 hour. Divide soup among 4 bowls; garnish with chips and salsa before serving.

2 large ripe avocados, peeled, pitted
2/3 cup finely chopped onion
1/2 cup (packed) coarsely chopped fresh cilantro
1/4 teaspoon ground cumin

Steps:

  • Char chilies directly over gas flame or under broiler until blackened on all sides. Enclose in paper bag at least 10 minutes and up to 1 hour. Peel, seed, and finely chop chilies. Mix chilies, 1 tablespoon lime juice, tomato, green onions, and lime peel in small bowl. Season with salt.
  • Puree next 4 ingredients and 7 tablespoons lime juice in processor until almost smooth. Season with salt. (Chili mixture and guacamole can be made 1 day ahead. Cover separately and refrigerate.)
  • Spoon avocado puree into wide shallow bowl. Spoon chili mixture into center.

If limes are unavailable, use lemons instead. You can also cut the avocado into cubes or make into balls with a melon baller (the avocado must be firm), pour over the dressing as indicated and serve as an appetizer.
