The first thing I do when I visit my favorite Thai restaurant is ponder the specials board. On my one of my recent visits, they had avocado curry. I had never thought of mixing a decadent coconut curry with a delicious avocado. After all, delicious fat plus more delicious fat is always a win. So I ordered it, made mental notes along the way and whipped up a batch the very next day. One tweaking batch later, and I've arrived at this. Serve over rice or noodles.

1 (14 ounce) can coconut milk
½ large avocado - peeled, pitted, and diced
½ cup water, or as needed
3 tablespoons seasoning sauce (such as Golden Mountain®)
2 tablespoons green curry paste, or more to taste
½ lime, juiced
2 cups green beans
8 ounces tempeh, cubed
1 carrot, cut into matchstick-size pieces
½ large avocado - peeled, pitted, and diced
1 zucchini, cubed
1 cup basil leaves

Steps:

  • Blend coconut milk, 1/2 avocado, 1/2 cup water, seasoning sauce, curry paste, and lime juice in a blender until smooth, adding more water if curry is too thick. Pour curry into a large saucepan and bring to a boil.
  • Stir green beans, tempeh, and carrot into curry; reduce heat to medium. Cover saucepan and cook until beans and carrots are soft, about 15 minutes. Remove cover and add remaining 1/2 avocado, zucchini, and basil; cook and stir until basil is wilted, about 2 minutes more.

This is a main dish that I have served at wedding dinners. It is my all-time best recipe. I serve it with rice pilaf, salad, and French bread.

7 tablespoons butter, divided
1 tablespoon olive oil
8 skinless, boneless chicken breast halves
¼ cup all-purpose flour
1 cup light cream
1 cup chicken broth
¾ teaspoon Morton® Kosher Salt
¼ teaspoon ground black pepper
½ cup grated Parmesan cheese
2 dashes hot pepper sauce
½ teaspoon dried rosemary, crushed
½ teaspoon dried basil
3 cups sliced fresh mushrooms
¼ cup sherry
½ cup sliced almonds, toasted
2 avocados

Steps:

  • Preheat the oven to 350 degrees F. Melt one tablespoon of butter in large heavy skillet. Add olive oil and swirl together with the butter. Add chicken and saute until chicken pieces are browned and juices run clear. Turn pieces to brown evenly while sauteing. Place chicken breasts in 9x13 baking dish and set aside.
  • Melt 4 tablespoons of butter until foamy. Stir in flour, and cook for three minutes, stirring constantly. Slowly add cream and chicken broth. Continue stirring and cooking until smooth and thickened. Season sauce with Morton® Kosher Salt, black pepper, Parmesan cheese, hot pepper sauce and herbs. Set aside.
  • Saute mushrooms in remaining two tablespoons of butter. Add sherry and cook until reduced. Place mushrooms over the chicken. Pour the sauce over the chicken and mushrooms. Bake uncovered for 25 minutes, then sprinkle with almonds, and return to oven for 10 minutes. Peel and slice avocados lengthwise and place over chicken before serving.

This Avocado Smothered Chicken is EVERYTHING you love about delicious avocado egg rolls, all smothered on top of a tender chicken breast and baked to perfection. Inspired by one of my favorite appetizers this brings the flavors into a wholesome and filling dinner. Made easy with just a handful of ingredients and one dish, you will love how fast this meal can be prepped and into the oven.

2 lbs chicken breast (boneless, skinless, thinly cut)
2 avocados (large)
1/4 cup sun dried tomatoes packed in oil (diced)
2 tbsp red onion (finely diced)
2 tbsp cilantro (finely chopped)
1/2 tsp salt (divided in half)
1/4 tsp ground black pepper
1/2 cup monterey jack cheese (shredded)
1-2 tbsp chili sauce
2 tbsp honey
1 tbsp rice wine vinegar
1 tsp sesame oil
1 tsp cilantro (chopped)

Steps:

  • Lay the chicken breast flat in a large baking dish. Season with half the salt and the pepper.
  • In a bowl, combine the avocado, sun dried tomatoes, red onion, cilantro, and the remaining salt. Stir, mashing the avocado and mixing everything together, until combined with chunks of avocado remaining.
  • Spread the avocado mixture on top of each chicken breast to cover. Top with the shredded cheese. Bake covered with foil at 375˚F for 25-35 minutes, or until the chicken is cooked through. Optional: remove the foil for the last 3-5 minutes and set the oven to broil to brown the cheese.
  • Garnish with extra cilantro and sun dried tomato if desired. Serve over rice or sautéed spinach and drizzle each chicken breast with sauce. Enjoy!

2 teaspoons McCormick® Curry Powder
1/4 teaspoon salt
2 cups cubed cooked chicken breast
1 medium ripe avocado, peeled and cubed
1/4 cup dried cranberries
2 tablespoons minced fresh cilantro
8 slices reduced-calorie wheat bread
4 leaf lettuce leaves, optional

Steps:

  • In a large bowl, combine mayonnaise, curry powder and salt until well blended. Add chicken, avocado, cranberries and cilantro; toss gently to mix., Divide chicken salad evenly among 4 bread slices. Top each with lettuce leaves and remaining slices of bread.

A very different dish, with an interesting combination of flavors. I found this recipe years ago when I had an abundance of avocados...sigh, those were the days. The extra toppings are your choice, I usually only use the peanuts and or bacon.

1/4 cup butter
1/2 cup chopped apple
1/4 cup chopped onion
1 garlic clove, crushed
1 tablespoon curry powder
1/4 cup flour
1 cup light cream
1 cup chicken broth
1 teaspoon salt
1/8 teaspoon pepper
2 cups chicken, cooked and diced
3 -4 avocados, halved and peeled
3 -4 cups cooked rice
raisins or peanuts

Steps:

  • Saute onion, apples, garlic and curry powder in butter until onion is crisp-tender.
  • Stir in flour.
  • Gradually add cream and broth.
  • Cook and stir until sauce boils 1 minutes.
  • Add salt, peper and chicken.
  • Cook overl ow heat 10 minutes.
  • Arrange avocado halves on rice in oven-proof serving dish.
  • Heat in 350º oven for 5 minutes, just to heat avocado. (This can be skipped if you want the avocado room temp).
  • Spoon chicken over avocado halves.
  • Top with any toppings of your choice.
