AVOCADO WHOLE WHEAT PASTA SALAD
This dish incorporates one of my favorite things in the universe, avocado, into a side dish with other fresh vegetables. It also works as a vegan main course dish.

Steps:
- Bring a large pot of salted water to a boil. Cook the rotini at a boil until tender yet firm to the bite, about 10 minutes; drain and run under cold water to prevent sticking.
- Whisk olive oil, vinegar, lemon juice, and honey together in a bowl until dressing is smooth.
- Mix pasta, avocados, green bell pepper, carrot, green onions, celery, garlic, basil, parsley, and cilantro together in a bowl. Drizzle dressing over pasta mixture and toss to coat. Add lemon zest, salt, and pepper to pasta salad. Serve at room temperature.

- Cook pasta according to package directions. Drain; rinse with cold water., In a large bowl, combine pasta, artichoke hearts, tomatoes, avocado and cheese. In a small bowl, whisk dressing ingredients. Pour over pasta mixture; toss gently to combine. Refrigerate, covered, until serving.

- Cook macaroni in a large pot of boiling water according to package directions. Drain, rinse with cold water; drain again. Transfer to a large bowl. Add bell pepper, celery, scallions and parsley (or cilantro).
- Halve avocado, remove pit and scoop flesh into a mini food processor. Add mayonnaise, vinegar, salt, dried garlic and pepper. Process until smooth. Add the avocado dressing to the large bowl with the macaroni salad and stir until well coated.

- Cook the pasta then rinse it under cold water and drain. Add it to a large serving bowl along with the cherry tomatoes, mozzarella balls and chopped basil.
- In a blender or food processor, combine the dressing ingredients and blend or purée until smooth. Taste for seasoning then pour the avocado sauce in with the salad ingredients and stir until everything is coated.
- Add in the diced avocado and gently stir it in. Taste for seasoning and serve or cover and refrigerate until ready to serve.
