AVOCADO TOASTS
There are two secrets to these simple avocado toasts: rubbing the bread with garlic for just a hint of flavor and adding a pop of crunchy sea salt on top.

- Mash the avocado with a fork in a shallow bowl until chunky. Season with fine salt and black pepper.
- Toast the bread until browned and crisp. Lightly rub 1 side of each slice with the cut side of the garlic until fragrant; discard the garlic. Lightly brush the toasts with oil, and season with fine salt and pepper. Divide the mashed avocado evenly among the toasts, and top with more flaky sea salt, more black pepper and red pepper flakes if using.

AVOCADO TOFU TOAST
Smooth and spreadable, avocado has taken over morning toast as a dairy-free, healthier-fat and simply decadent spread. But for those on low-sodium diets, toast poses a bit of a challenge. Tofu toast offers the next-level solution. It offers a protein punch not found in traditional wheat products, plus, it makes a great party trick when entertaining low-sodium, gluten-free, and Paleo eaters. To add extra flavor, you can marinate or spice the tofu before cooking.

- Preheat the oven to 425 degrees F. Cover a baking sheet with parchment paper.
- Cut the tofu block in half, lengthwise through the middle, making two blocks about 3/4-inch thick. Then slice the two blocks in half, this time through the center, making 4 triangular pieces of "tofu toast."
- Place the tofu in a single layer on the parchment. Spray the top with oil and bake until golden, crispy and slightly bubbling on the top, about 20 minutes.
- Take the tofu out of the oven, flip each piece over and spray with oil. Then return to the oven to cook for another 10 minutes. Let it cool slightly, 5 to 10 minutes.
- To serve, slather the tofu toast with the avocado and garlic powder. Sprinkle with the black pepper, red pepper flakes and layer on sprouts, radishes and hard-boiled egg if using.
- Store any leftover tofu toast in an airtight container, in the refrigerator for up to a week. Reheat in a 400 degree F oven for 5 to 8 minutes, or in a microwave for 1 minute.

- Remove tofu from package, turn on it’s side and carefully slice into 3 slabs. Place slabs between 2 clean dishcloths or towels, lay a heavy object over top to press out excess moisture. I used my large cutting board but a heavy cookbook will do the job too. Let set under pressure for about 10 minutes.
- Peel and cut the ends off the onion, lay onion cut side down and cut in half. Slice onion into thin strips, about 1/8 – 1/4 inch. Heat 1 tablespoon oil in a skillet or medium size pan over medium heat. Add onions and cook, stirring frequently, until golden and browned on the edges, about 10 minutes. Remove from pan and set aside. If you happen to leave your onions in the pan take note that they may continue cooking from the heat of the pan, pay close attention so they don’t burn too much.
- Heat 1 tablespoon oil over medium-high heat in a cast iron skillet or pan. Add tofu and cook without touching for about 4 – 5 minutes per side, or until golden brown. Sprinkle with salt and garlic powder after the first flip.
- Toast your bread, or not, and slice your avocado. You may even prefer to mash your avocado right in its shell with the back of a fork and spread like butter. I find I use the latter method most often.

- The tofu can be served on the avocado toast either warm or cold. For cold tofu, simply cut it into slices.If you'd prefer it heated, you can warm it in the air fryer by putting the whole slabs in the air fryer and cooking at 400 degrees for 5 minutes, stopping once to flip. If you don't have an air fryer, you could heat the tofu in a skillet for a few minutes on each side. After it is warm, remove the tofu from air fryer or skillet, and cut the tofu in thin slices.
- Toast bread in the toaster. You can go lighter on the toppings and make 4 avocado toasts, or you can go heavier on the toppings and make 2 avocado toasts. So toast the amount of bread that you need, depending on your preferences.
- Once the bread is toasted, top each slice with avocado, and smash it onto the bread with a fork. Sprinkle 1/8 teaspoon of nutritional yeast flakes on top of the avocado on each piece of toast. Top with sliced tofu and serve.

- The first step in preparing your tofu sandwich is to prepare your tofu. Take the tofu block from its packaging and press out the excess liquid, preferably using a tofu press. Once pressed, use a sharp knife to cut the block into 3 large tofu slices.
- Slice your onions before heating 1 tbsp of oil at medium heat in a large skillet. When the oil is hot, add your onions and saute them for around 10 minutes. You want the onions to soften and to begin turning a light brown. Remove the onions and place them on the side.
- Next, place your sliced tofu into the skillet and give them a light coating of garlic powder and salt (for a lightly marinated tofu sandwich). Fry the tofu in the oil for 5 minutes on each side, turning only once. Once fried, turn off the heat and place the tofu with your onions.

Then, slice your avocados in half and remove the stone. Scoop the avocado out of its shell with a spoon, and cut each half into even-sized pieces.
